Not regular broccoli. Broccolini\u2019s thinner stems and smaller florets hold their texture better after freezing and reheating. Split any thick stems lengthwise so everything cooks at the same rate.<\/li>\n<li><strong>Olive oil<\/strong><\/li>\n<li><strong>Garlic cloves<\/strong><\/li>\n<li><strong>Red pepper flakes<\/strong><\/li>\n<li><strong>Water:<\/strong> Just enough to steam the broccolini in the skillet. Too much water is what makes the frozen portions icy.<\/li>\n<li><strong>Lemon:<\/strong> Zest goes in before freezing. Juice goes on after reheating. This is the one non-negotiable sequencing rule in the recipe.<\/li>\n<li><strong>Unsalted butter:<\/strong> Optional, added after reheating only. This is not optional for freezer prep. Uneven stems mean uneven reheating.<\/li>\n<li>Heat olive oil in a large skillet over medium heat. Add the sliced garlic, salt, pepper, and red pepper flakes. Cook for 30 to 45 seconds, stirring constantly, until the garlic is <strong>fragrant but not browned<\/strong>. Pull the pan off the heat if it starts to color.<\/li>\n<li>Add the broccolini and toss well in the seasoned oil. Cook for 1 minute over medium heat, turning often. You are not trying to fully cook it here. The goal is to coat the broccolini and start the cooking process.<\/li>\n<li>Add the water and immediately cover the skillet. Cook for 3 to 4 minutes, until the broccolini is bright green and the stems are slightly tender but still firm when pressed. You want some resistance.<\/li>\n<li>Uncover and cook for 1 to 2 minutes, tossing frequently, until most of the water has evaporated. Add the lemon zest and toss once more. The broccolini should look slightly underdone. It will finish during reheating.<\/li>\n<li><strong>If you just want dinner tonight, stop here. <\/strong>Hit it with the lemon juice and butter, then eat it fresh. Everything past this point is for the freezer.
