class=\"wp-block-paragraph\">It is iconic, a group of people<br \/>\nlounging around a table, swirling their wine idly, tossing around big and small<br \/>\nideas and laughing as the conversation wanders around.\u00a0 For some, the swirling helps them think or it<br \/>\nis the adult version of a fidget spinner to retain their attention.\u00a0 <\/p>\n<p class=\"wp-block-paragraph\">But why do we swirl our wine and<br \/>\nhow do the professionals do it?<\/p>\n<p><span id=\"more-441\"\/><\/p>\n<p class=\"wp-block-paragraph\">Let\u2019s step back to a tiny bit of<br \/>\nchemistry.\u00a0 The reason wine has those<br \/>\nwonderful and complex smells is primarily because of a chemical class known as <strong>methoxypyrazines<\/strong>.\u00a0 There are certainly other elements, but these<br \/>\nare prevalent and detectable by the human nose at very low levels.\u00a0 <\/p>\n<p class=\"wp-block-paragraph\">When we swirl, we are opening the<br \/>\nwine to air and allowing the smellable elements to volatilize into the air,<br \/>\nwhich lets us smell them.\u00a0\u00a0 That\u2019s the<br \/>\nreal reason to swirl, to introduce air.\u00a0<br \/>\nIt enhances the complexity of the wine by putting all the wine has into<br \/>\nthe air and into our nose.<\/p>\n<p class=\"wp-block-paragraph\">So how should we swirl?\u00a0 There are two main techniques, on the table<br \/>\nand the free-hand swirl.<\/p>\n<p class=\"wp-block-paragraph\">The first is easier and definitely<br \/>\nwhere you should start.\u00a0 The first rule<br \/>\nis to make sure your glass isn\u2019t too full, perhaps 1\/3 at maximum.\u00a0 This is where those lovely larger glasses<br \/>\ncome in handy, even with a decent pour, the wine won\u2019t come sloshing over the<br \/>\ntop.\u00a0 <\/p>\n<p class=\"wp-block-paragraph\">Place the glass on the table and<br \/>\nhold the foot of it to the table and slowly rotate the glass in small<br \/>\ncircles.\u00a0 You\u2019ll see that the liquid<br \/>\ncan\u2019t quite keep up with your swirling and you\u2019ll get that pretty vortex that<br \/>\nsucks in air and lets the aromas flow.\u00a0<br \/>\nThis works best when there isn\u2019t a table cloth and the bottom of the<br \/>\nglass can move freely.\u00a0 After a few<br \/>\nswirls, let it settle and bring the edge of the glass to your nose.\u00a0 Really stick your nose in the glass!\u00a0 Take a nice smell and let it sit, I usually<br \/>\nblow that one out to a side and go in for a second one as well.\u00a0 <\/p>\n<p class=\"wp-block-paragraph\"><strong>Tip:<\/strong> <strong>Don\u2019t Over Swirl<\/strong><\/p>\n<p class=\"wp-block-paragraph\">I mentioned a few swirls, usually 3-5 because that is what it takes.\u00a0 The pros don\u2019t swirl their wine like they are trying to make a smoothie.\u00a0 One set of swirls, smell and enjoy.\u00a0 Sometimes they\u2019ll do it again after the wine has been in the glass a bit to see how it is developing.\u00a0 <\/p>\n<p class=\"wp-block-paragraph\">The second approach, which is<br \/>\nbetter for experienced swirlers and earlier in the night is the free-hand<br \/>\nswirl.\u00a0 You\u2019ll lift the glass, holding<br \/>\nthe stem and swirl the bowl, creating the vortex effect.\u00a0 This one is harder because it is way easier<br \/>\nto splash over the rim and douse yourself, the table or your dining companion with<br \/>\nyour elixir.\u00a0\u00a0 Trust me, I\u2019ve done it and<br \/>\nbeen the recipient of a wine bath towards the end of a meal.<\/p>\n<p class=\"wp-block-paragraph\">Remember, your glass isn\u2019t a<br \/>\nprop.\u00a0 Fill 1\/3 full, give it three to<br \/>\nfive good swirls on the table or free-hand, and enjoy the wonderful complexity the<br \/>\nwine has to
