Bites of candied ginger add a delightful explosion of flavor and a blend of vibrant spices \u2013 cinnamon, allspice and ground ginger- lend festive notes to these simple cookies.\u00a0 They are even tastier the second day.<\/p>\n<p>If you prefer crispy cookies (aka ginger snaps), bake 10 to 11 minutes. Otherwise, cook a smidge under 10 minutes. Cookies may seem a little underdone when they come out of the oven, but will firm up as they cool.\u00a0 If you can get your hands on <a href=\"http:\/\/ryzeglutenfree.com\/product\/blue-bag\/\">RYZE Blue Flour Blend<\/a>, it adds remarkable chewiness to these cookies.\u00a0 However, you can make them with any all-purpose gluten-free flour blend.\u00a0 (Increase the amount of flour to 2 cups and add 1 teaspoon xanthan gum if it is not in the blend.)<a href=\"http:\/\/glutenfreemakeovers.com\/wp-content\/uploads\/2017\/12\/molasses-ginger-cookies-4-for-blog.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-860\" src=\"http:\/\/glutenfreemakeovers.com\/wp-content\/uploads\/2017\/12\/molasses-ginger-cookies-4-for-blog-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"http:\/\/glutenfreemakeovers.com\/wp-content\/uploads\/2017\/12\/molasses-ginger-cookies-4-for-blog-300x225.jpg 300w, http:\/\/glutenfreemakeovers.com\/wp-content\/uploads\/2017\/12\/molasses-ginger-cookies-4-for-blog-768x576.jpg 768w, http:\/\/glutenfreemakeovers.com\/wp-content\/uploads\/2017\/12\/molasses-ginger-cookies-4-for-blog-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\"\/><\/a><\/p>\n<p>1 \u00be cups <a href=\"http:\/\/ryzeglutenfree.com\/product\/blue-bag\/\">Ryze Blue Flour Blend<\/a> or 2 cups gluten-free flour blend with 1 teaspoon xanthan gum<br \/>2 teaspoons baking soda<br \/>2 to 3 teaspoons ground ginger (depending on your taste buds)<br \/>1 teaspoon ground cinnamon<br \/>\u00bd teaspoon ground allspice<br \/>\u00bc teaspoon salt<br \/>\u00be cup organic shortening<br \/>1 cup packed light brown sugar<br \/>1 large egg<br \/>\u00bc cup light (Original flavor) molasses<br \/>1 teaspoon cider vinegar<br \/>\u00bd cup finely chopped candied ginger<\/p>\n<p>Line 2 baking sheets with parchment paper. Preheat oven to 375 degrees.<\/p>\n<p>In a medium bowl, whisk together flour blend, baking soda, ginger, cinnamon, allspice, and salt. Set aside.<\/p>\n<p>In a medium bowl, beat the shortening and the sugar until mixture is fluffy, about 2 minutes.<\/p>\n<p>Add the egg, molasses, and vinegar and beat well.<\/p>\n<p>Add the flour mixture and beat until smooth. Fold in the chopped candied ginger.<\/p>\n<p>Scoop out generous tablespoon-size portions of dough. Roll in a ball and set on baking sheets, at least 1 inch apart. Flatten each ball into a disk about \u00bc inch in thickness.<\/p>\n<p>Sprinkle with granulated sugar. Bake 8 to 10 minutes or until the tops of the cookies are set and slightly brown on the edges. Do not overbake.
