Neutral<br \/>\nalcohol:<\/b><\/span><\/h3>\n<div style=\"margin: 0in;\">\n<span style=\"font-family: verdana, sans-serif;\">Neutral alcohol or<br \/>\nneutral spirit is the <a href=\"https:\/\/theliquorthing.blogspot.com\/search\/label\/NEUTRAL%20SPIRIT%20TALK\" target=\"_blank\"><span style=\"color: #3d85c6;\">ethyl alcohol<\/span><\/a> that has 95% of ABV. It is made from<br \/>\ngrains, grapes, potatoes, molasses, and other botanicals. The vast majority of<br \/>\ngin is made from neutral alcohol.\u00a0<\/span><\/div>\n<h3 style=\"margin: 0in 0in 0.0001pt; text-align: left;\"><span style=\"font-family: verdana, sans-serif;\"><b><span style=\"color: #660000;\">II. Production of<br \/>\ngin:<\/span><\/b><\/span><\/h3>\n<p>\n<span style=\"line-height: 107%;\"><span style=\"font-family: verdana, sans-serif;\">This step is also called an extraction method. In this step, the neutral<br \/>\nalcohol is distilled with chosen botanicals to extract their essential oils and<br \/>\nso flavor the neutral alcohol.\u00a0 Different distillers use different<br \/>\ndistillation methods for extracting the flavor of botanicals. Out of these<br \/>\nmethods, there are two main methods &#8211;<\/span><\/span><span style=\"font-family: verdana, sans-serif; font-size: 14pt; line-height: 107%;\">\u00a0<\/span><\/p>\n<h3 style=\"margin: 0in 0in 0.0001pt; text-align: left;\"><span style=\"font-family: verdana, sans-serif;\"><b><span style=\"color: #274e13;\">Steep and Boil<br \/>\nmethod:<\/span><\/b>\u00a0<\/span><\/h3>\n<p>\n<span style=\"line-height: 107%;\"><span style=\"font-family: verdana, sans-serif;\">This is a traditional and most common method of distillation. A pot<br \/>\nstill is filled with the base spirit or neutral alcohol (which has been reduced<br \/>\nin strength with water to 50% ABV) along with Juniper berries and other<br \/>\nbotanicals. The pot still comes in contact with heat. The steam of alcohol<br \/>\nbecomes saturated with the flavor of berries and botanicals. Once it completed,<br \/>\nwater is added to reduce the distillate to bottling strength.<\/span><\/span><\/p>\n<h3 style=\"margin: 0in 0in 0.0001pt; text-align: left;\"><span style=\"font-family: verdana, sans-serif;\"><b><span style=\"color: #274e13;\">Vapor infusion<br \/>\nmethod:<\/span><\/b>\u00a0<\/span><\/h3>\n<div style=\"margin: 0in 0in 0.0001pt; text-align: left;\">\n<span style=\"font-family: verdana, sans-serif;\">In this method,<br \/>\nthe mix of juniper berries and botanicals do not come directly in contact with<br \/>\nthe neutral alcohol. Instead, they are placed either in a still above alcohol<br \/>\nor in a perforated chamber. When alcohol is boiled, the vapor rises up and<br \/>\ninfuses with botanicals. The infused vapor then condenses into liquid and water<br \/>\nis added to reduce the alcohol to bottling strength.<\/span><\/div>\n<div style=\"margin: 0in 0in 0.0001pt; text-align: left;\">\n<span style=\"font-family: verdana, sans-serif;\">Sometimes these<br \/>\ntwo methods can be combined, where botanicals are first steeped and boiled and<br \/>\nthen the same botanicals are vapor infused. For example, Henrick&#8217;s gin, in<br \/>\nwhich both these methods are used.\u00a0<\/span><span style=\"font-family: verdana, sans-serif; font-size: 14pt;\"\/><\/div>\n<h3 style=\"margin: 0in 0in 0.0001pt; text-align: left;\"><span style=\"font-family: verdana, sans-serif;\"><b><span style=\"color: #274e13;\">New gin production<br \/>\nmethods:<\/span><\/b><\/span><\/h3>\n<div style=\"margin: 0in 0in 0.0001pt; text-align: left;\">\n<span style=\"font-family: verdana, sans-serif;\">In recent years,<br \/>\nseveral new production methods have been developed.<\/span><span style=\"font-family: verdana, sans-serif; font-size: 14pt;\"\/><\/div>\n<h3 style=\"margin: 0in 0in 0.0001pt; text-align: left;\"><span style=\"font-family: verdana, sans-serif;\"><b><span style=\"color: #274e13;\">Vacuum<br \/>\ndistillation method:<\/span>\u00a0<\/b><\/span><\/h3>\n<div style=\"margin: 0in 0in 0.0001pt; text-align: left;\">\n<span style=\"font-family: verdana, sans-serif;\">In this method,<br \/>\nthe base spirit and botanicals are steeped and boiled, but it takes under<br \/>\nvacuum. As a result, the temperature is reduced to 85 &#8211; 95<sup>o<\/sup>c. At<br \/>\nthis lower temperature, the botanicals are cooked less than they would be in a<br \/>\nnormal pot still, resulting in a fresher flavored gin.<\/span><span style=\"font-family: verdana, sans-serif; font-size: 14pt;\"\/><\/div>\n<h3 style=\"margin: 0in; text-align: left;\"><span style=\"font-family: verdana, sans-serif;\"><b><span style=\"color: #274e13;\">Individual<br \/>\nbotanical distillation:<\/span><\/b><\/span><\/h3>\n<p>\n<span style=\"line-height: 107%;\"><span style=\"font-family: verdana, sans-serif;\">In this method, each botanical is steeped individually and blended<br \/>\ntogether to make the final gin. This method allows more control in the<br \/>\ndistillation process resulting in better gin production.<\/span><\/span><\/p>\n<h3 style=\"margin: 0in; text-align: left;\"><span style=\"font-family: verdana, sans-serif;\"><b><span style=\"color: #274e13;\">One-shot<br \/>\ndistillation:<\/span><\/b>\u00a0<\/span><\/h3>\n<p>\n<span style=\"line-height: 107%;\"><span style=\"font-family: verdana, sans-serif;\"><\/p>\n<p><span style=\"line-height: 107%;\">In this distillation process, the botanicals distilled only for a single<br \/>\ntime. After distilling, it is diluted with water to reach the alcoholic strength required for bottling.<\/span><\/span><\/span><\/p>\n<h3 style=\"margin: 0in; text-align: left;\"><span style=\"font-family: verdana, sans-serif;\"><b><span style=\"color: #274e13;\">Multi-shot or<br \/>\nconcentrated distillation:<\/span><\/b><\/span><\/h3>\n<p>\n<span style=\"font-family: verdana, sans-serif;\">In this method, a greater quantity of botanicals is distilled to produce a more concentrated<br \/>\nflavor. After distillation, neutral spirit and water are added.<\/span><\/p>\n<h3 style=\"margin: 0in; text-align: left;\"><span style=\"font-family: verdana, sans-serif;\"><b><span style=\"color: #660000;\">III. Diluting and<br \/>\nfiltering:<\/span><\/b><\/span><\/h3>\n<p>\n<span style=\"font-family: verdana, sans-serif;\"><span style=\"line-height: 107%;\">Distilled alcohol is left to rest for a few hours in the vat. Then its<br \/>\nalcohol content is gradually reduced by dilution. Cold filtration is carried<br \/>\nout by chilling the spirit up to -2<\/span><sup><span style=\"line-height: 107%;\">o<\/span><\/sup><span style=\"line-height: 107%;\">c. Then the spirit is<br \/>\npassed through a cellulose filter to remove any particles in suspension. Other<br \/>\nfiltration techniques such as activated carbon are also used.<\/span><\/span><span style=\"font-family: verdana, sans-serif; font-size: 14pt; line-height: 107%;\">\u00a0<\/span><span style=\"font-family: verdana, sans-serif;\">\u00a0<\/span><\/p>\n<h2 style=\"margin: 0in; text-align: left;\"><span style=\"font-family: verdana, sans-serif;\"><b><span style=\"color: #0c343d; font-size: large;\">What are the Gin<br \/>\nBotanicals?<\/span>\u00a0<\/b><\/span><\/h2>\n<p>\n<span style=\"font-family: verdana, sans-serif;\"><span style=\"line-height: 107%;\">Gin botanicals are the main ingredients to make gin. These botanicals<br \/>\nare natural ingredients from which oils and flavors are extracted. There are<br \/>\nmore than hundreds of botanicals used for\u00a0<\/span>flavoring gin.<br \/>\nFrom those, the following are most commonly used &#8211;\u00a0<\/span><\/p>\n<h3 style=\"margin: 0in; text-align: left;\"><span style=\"font-family: verdana, sans-serif;\"><span style=\"color: #674ea7;\"><b>Juniper berries:<\/b>\u00a0<\/span><\/span><\/h3>\n<div style=\"margin: 0in;\">\n<span style=\"font-family: verdana, sans-serif;\">It is the most<br \/>\nessential botanical used in the production of gin. It is a female seed cone of<br \/>\nvarious species of juniper. It is mainly found in Italy, Serbia, Macedonia, and<br \/>\nIndia. The flavor comes from the essential oils within the seeds of berries.<br \/>\nThe three flavors are &#8211; alpha-pinene, p-terpineol, and camphor. It holds the<br \/>\nvolatile flavors of other botanicals and binds them together giving a substance<br \/>\nof gin.\u00a0<\/span><\/div>\n<h3 style=\"margin: 0in 0in 0.0001pt; text-align: left;\"><span style=\"font-family: verdana, sans-serif;\"><b><span style=\"color: #674ea7;\">Lemon and Orange<br \/>\npeel:<\/span>\u00a0<\/b><\/span><\/h3>\n<div style=\"margin: 0in 0in 0.0001pt; text-align: left;\">\n<span style=\"font-family: verdana, sans-serif;\">Lemon peel<br \/>\ncontains a high proportion of the fruit&#8217;s flavor. Lemon peels give fresh,<br \/>\ncitrusy, juicy and lemony flavors. After peeling, lemon peels are dried before<br \/>\ninfusion and distillation. Orange peel is also dried before distillation. It<br \/>\ngives oil-rich rind and citrus aroma.\u00a0<\/span><\/div>\n<h3 style=\"margin: 0in 0in 0.0001pt; text-align: left;\"><span style=\"font-family: verdana, sans-serif;\"><b><span style=\"color: #674ea7;\">Orris root:<\/span><\/b><\/span><\/h3>\n<div style=\"margin: 0in 0in 0.0001pt; text-align: left;\">\n<span style=\"font-family: verdana, sans-serif;\">It has a very<br \/>\nperfumed character and like angelica root can help fix aromas and flavors<br \/>\nwithin the gin. These roots are harvested after three to four years of<br \/>\nplantation and stored for three to four years before use in distillation. Orris<br \/>\nroots are ground into powder before use. It is very bitter and tastes of Parma<br \/>\nviolets.\u00a0<\/span><\/div>\n<h3 style=\"margin: 0in 0in 0.0001pt; text-align: left;\"><span style=\"font-family: verdana, sans-serif;\"><b><span style=\"color: #674ea7;\">Coriander seeds:<\/span><\/b>\u00a0<\/span><\/h3>\n<div style=\"margin: 0in 0in 0.0001pt; text-align: left;\">\n<span style=\"font-family: verdana, sans-serif;\">It is found in<br \/>\nMorocco, Romania, Moldavia, Bulgaria, and Russia. The essential oil in<br \/>\ncoriander seed is linalool. When the seed is crushed, it releases a strong<br \/>\nlemony citrus aroma and flavor.\u00a0<\/span><\/div>\n<h3 style=\"margin: 0in 0in 0.0001pt; text-align: left;\"><span style=\"font-family: verdana, sans-serif;\"><b><span style=\"color: #674ea7;\">Cassia:<\/span><\/b><\/span><\/h3>\n<div style=\"margin: 0in 0in 0.0001pt; text-align: left;\">\n<span style=\"font-family: verdana, sans-serif;\">It is a member of<br \/>\nthe cinnamon family. It is the bark of a tree named Cinnamomum Cassia found in<br \/>\nSouthern China. The bark from the tree is harvested, stripped, and dried. It has<br \/>\na hotter and sweeter taste. In gin, Cassia gives earthy and warming<br \/>\nflavor.\u00a0<\/span><\/div>\n<h3 style=\"margin: 0in 0in 0.0001pt; text-align: left;\"><span style=\"font-family: verdana, sans-serif;\"><b><span style=\"color: #674ea7;\">Almond:<\/span><\/b>\u00a0<\/span><\/h3>\n<div style=\"margin: 0in 0in 0.0001pt; text-align: left;\">\n<span style=\"font-family: verdana, sans-serif;\">Two types of<br \/>\nalmond &#8211; sweet and bitter, are used in gin. It has a high essential oil content<br \/>\nand adds almond or marzipan, nutty, soapy and spicy flavor with a mouthfeel to<br \/>\ngin.<\/span><\/div>\n<h3 style=\"margin: 0in 0in 0.0001pt; text-align: left;\"><span style=\"font-family: verdana, sans-serif;\"><b><span style=\"color: #674ea7;\">Cardamom:<\/span><\/b>\u00a0<\/span><\/h3>\n<div style=\"margin: 0in 0in 0.0001pt; text-align: left;\">\n<span style=\"font-family: verdana, sans-serif;\">It adds a spicy,<br \/>\ncitrusy, almost eucalyptus flavor to gin. It has two varieties &#8211; black and<br \/>\ngreen. The green variety is mostly used, as it has a very fine texture.\u00a0<\/span><\/div>\n<h3 style=\"margin: 0in 0in 0.0001pt; text-align: left;\"><span style=\"font-family: verdana, sans-serif;\"><b><span style=\"color: #674ea7;\">Cubeb berries:<\/span><\/b><\/span><\/h3>\n<div style=\"margin: 0in 0in 0.0001pt; text-align: left;\">\n<span style=\"font-family: verdana, sans-serif;\">Cubeb berries<br \/>\ntaste like pepper and allspice berries. In gin, it is used for aromatic<br \/>\nproperties.\u00a0<\/span><\/div>\n<h3 style=\"margin: 0in 0in 0.0001pt; text-align: left;\"><span style=\"font-family: verdana, sans-serif;\"><b><span style=\"color: #674ea7;\">Licorice:<\/span>\u00a0<\/b><\/span><\/h3>\n<div style=\"margin: 0in 0in 0.0001pt; text-align: left;\">\n<span style=\"font-family: verdana, sans-serif;\">It is a hard<br \/>\nfibrous root of the licorice plant. It is ground into a powder before<br \/>\ndistillation.
