\nA new year signals the time to think about new enterprises \u2013
\nexploring how, and where, to begin profiting from a \u201cfamily favorite\u201d recipe.
\nThe 2011 Food Safety Modernization Act, and subsequent FDA rules, have made it
\na bit more challenging (but not impossible) to start a food business, in that even
\nif state regulations allow a food product to be made in an inspected home
\nkitchen (in Pennsylvania, referred to as a \u201climited food establishment\u201d), when
\nthe food goes regional or national, FDA requires that all products be made in a
\ncommercial kitchen.<\/span><\/p>\n

<\/p>\n

\nFor the start-up food venture, a shared kitchen offers an
\naffordable, safe, legal place to launch. Instead of investing a large amount of
\nmoney in designing and equipping your kitchen, a modest fee allows access an
\nestablished commercial kitchen on a timeslot basis.\ufeff\ufeff<\/p>\n\n\n\n\n

<\/span>As you begin to search, you will
\nlearn that not all shared kitchens are created equally \u2013 and knowing the type
\nof assistance you need makes a world of difference when searching for the
\n\u201cright place.\u201d For instance, you may just need a shared use kitchen \u2013 that is,
\na place that provides space and equipment to multiple food business owners for
\nthe commercial preparation and handling of food that will be sold. This type of
\nkitchen will likely be accessed very affordably, because no other services beside
\nkitchen access will be offered. In a fast-changing environment like food
\nbusiness, you will have to keep up on food code and the current acceptable
\nmethods of production, as well as making, marketing and selling your product if
\nyou select a shared use kitchen \u2013 but many food businesses have gotten their start
\nin just such a place.\ufeff\ufeff<\/span><\/p>\n

\n<\/span>The next step up is a shared
\nkitchen incubator \u2013 at which you will not only access commercial equipment and
\nfacilities, but also benefit from \u201csupportive services,\u201d that apply to food
\nproduction and business management. There will be an on-site manager who can
\nhelp you navigate the complex network of regulation, packaging and distribution
\nto have the best opportunity for a profitable enterprise. Because of the
\nincreased level of service, the per-hour rate will probably be higher than that
\nof a shared use kitchen \u2013 but depending on the complexity of product and
\nmarketplace, this can be money well-spent. <\/span>

<\/span><\/p>\n

You may also determine the need
\nfor small-scale co-packing \u2013 allowing trained workers who are already familiar
\nwith commercial equipment and recipe conversions to make valuable contributions
\nto your venture. One such facility here in Pennsylvania is the <\/span>\u201cField to Fork Agricultural
\nIncubator,\u201d<\/span><\/span><\/a> which opened
\nits doors at the Greater Johnstown Career and Technology Center in Johnstown
\nPennsylvania in September 2016. Joining \u201cField to Fork\u201d not only means
\naccessing the CTC\u2019s commercial kitchen, but allows you to enlist the knowledge
\nand skills of culinary arts students who are working towards their ProStart
\nCertification, and are available to work side by side with kitchen tenants. As
\nwith all shared kitchens, \u201cField to Fork\u201d is focused on specific targeted
\ngroups \u2013 local value-added producers with smaller crop yields and food
\nentrepreneurs who need a place to start. Products that can be most easily
\ncreated in this kitchen are non-organic, jarred fruits and vegetables, dried
\nfoods, and baked goods. During its pilot phase, use of the kitchen will be
\navailable on a first come, first serve basis. Dry storage and cold storage are
\nalso available for a monthly fee.\u00a0 <\/span><\/span><\/p>\n

In short, shared kitchen
\nincubators do provide the environment necessary for food businesses to start,
\ngrow and succeed \u2013 by offering not only the right equipment and environment but
\nmany services that simplify and economically provide just what is needed in
