But it\u2019s easy to forget that the big, bright and beautiful produce which fills our shopping bags, all starts with a tiny seed. The key to growing veggies all year round in different climates comes back to genetics. It\u2019s the kind of science that gives cauliflowers UV protection or even turns them orange or purple. <\/p>\n<p>Plant scientist, Eliza Seymour develops seeds to suit every climate in Australia. She\u2019s even transplanted herself from Darwin to Melbourne to pursue her career in agronomy. Image: Eliza Seymour<\/figcaption><\/figure>\n<p>\u201cThe seed is where it all starts,\u201d she says with passion. <\/p>\n<p>As an expert in vegetable genetics and seed breeding, Eliza knows that the right seed has the potential to shape an entire crop\u2019s future. From improving flavour to enhancing disease resistance, the right genetics can make all the difference. Her job revolves around developing seeds that not only meet the needs of farmers but also improve the efficiency and sustainability of farming practices. <\/p>\n<h2 class=\"wp-block-heading\">A blooming career<\/h2>\n<p>Eliza\u2019s journey into agriculture wasn\u2019t a traditional one. <\/p>\n<p>\u201cI didn\u2019t come from an agricultural background,\u201d she explains. Image: Eliza Seymour<\/figcaption><\/figure>\n<\/div>\n<p>\u201cI didn\u2019t realise everyone didn\u2019t have this strange obsession like I did,\u201d she laughs. This fascination led her to study plant science and accounting at university.<\/p>\n<p>\u201cI wasn\u2019t entirely sure about a career in agriculture, so I thought I\u2019d balance it out with accounting just in case,\u201d she says, smiling at her decision. <\/p>\n<p>\u201cIn hindsight, I probably should have gone for agribusiness instead of accounting, but it was a good balance. The plant science kids were pretty kooky, and accounting was very black and white.\u201d<\/p>\n<p>Despite her early uncertainty, Eliza has found a fulfilling career in the agricultural industry, having now spent five years immersed in seed breeding and plant genetics. <\/p>\n<p>\u201cI love being in this industry. There\u2019s so much to learn, and every day brings something new,\u201d she shares. <\/p>\n<p>\u201cI feel lucky to be in an industry where people are genuinely passionate and excited about what they do.\u201d Although she didn\u2019t grow up on a farm, Eliza quickly adapted to the rhythm of agricultural life. <\/p>\n<p>\u201cI feel like I\u2019m an aggie person now,\u201d she says, referring to herself as a proud member of the agricultural community. <\/p>\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p>Everyone\u2019s been so welcoming, and it\u2019s been great to see how intelligent and skilled farmers are in their work.<\/p>\n<\/blockquote>\n<p>In her role, Eliza works closely with farmers, testing new varieties of crops in real-world conditions. <\/p>\n<p>\u201cIt\u2019s all about trial and error. When we test new seed varieties, we start small\u2014sometimes just 50 plants\u2014and track how they perform,\u201d she explains. \u201cOver time, as the data comes in, we decide whether to scale up. Image: Eliza Seymour<\/figcaption><\/figure>\n<p>It\u2019s a process that demands patience, but the end result can mean improved yields and higher-quality produce. For instance, Eliza is involved in breeding crops like tomatoes and broccoli, both of which require careful selection. <\/p>\n<p>\u201cFarmers are always looking for new varieties that are resilient against diseases or pests. A lot of the work I do is focused on breeding plants with disease resistance built in,\u201d she says. <\/p>\n<h2 class=\"wp-block-heading\">Challenges constantly cropping up<\/h2>\n<p>One crop she\u2019s particularly focused on is spinach, which faces challenges from downy mildew. <\/p>\n<p>\u201cEvery year or two, a new race of this disease pops up, and it\u2019s been evolving for decades,\u201d Eliza explains. \u201cThe breeders have to keep up, constantly developing new varieties with resistance to the new strains of mildew that show up.\u201d<br \/>In addition to breeding disease-resistant crops, Eliza\u2019s work extends to improving the harvesting process. <\/p>\n<p>\u201cBroccoli is still hand-harvested in Australia, and it\u2019s a labour-intensive process,\u201d she explains. Image: Eliza Seymour<\/figcaption><\/figure>\n<p>\u201cThe stems are thick and strong, and most of the broccoli you see in stores is actually more stem than flower,\u201d Eliza continues. \u201cIt\u2019s a physically demanding job, with workers often hurting their backs from bending over for long periods.\u201d To address this, Eliza is involved in developing a \u201chigh-rise\u201d broccoli variety. <\/p>\n<p>\u201cWe\u2019re working on broccoli with longer stems, so the heads sit higher off the ground\u2014around 50 centimetres rather than just 20 centimetres. This way, machines can harvest the crops more efficiently, and it will reduce the strain on the workers.\u201d Though still in the trial phase, Eliza is excited about the potential for these changes. \u201cIt\u2019s a game-changer for labour efficiency on farms, but like with all breeding work, it will take time to get it right.\u201d<\/p>\n<h2 class=\"wp-block-heading\">Insights on the internet<\/h2>\n<p>Beyond her work in the field, Eliza is passionate about educating the public on the science behind farming and seed breeding. Through her TikTok account, <a href=\"https:\/\/www.tiktok.com\/@needforseed\">\u201cNeed for Seed,\u201d<\/a> and her <a href=\"https:\/\/www.instagram.com\/needforseed_\/\">Instagram<\/a>, she shares insights into the vegetable world and the complexities of plant genetics. <\/p>\n<p>\u201cThere\u2019s so much that goes on behind the scenes in farming and seed breeding. It\u2019s not just about food\u2014it\u2019s about the science that makes that food possible.\u201d <\/p>\n<p>Her TikTok videos cover everything from cauliflower breeding to the processes farmers use to ensure quality crops. She\u2019s built a platform that makes the complexities of agriculture accessible to everyday people. <\/p>\n<p>\u201cConsumers are becoming more interested in where their food comes from and how it\u2019s produced. I think we\u2019re starting to see more of a push for transparency in the food industry,\u201d Eliza says. <\/p>\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p>That\u2019s a huge opportunity to educate the public and show them the work that goes into producing food sustainably.\u201d<\/p>\n<\/blockquote>\n<figure class=\"wp-block-embed alignright is-type-video is-provider-tiktok wp-block-embed-tiktok\"\/>\n<p>Eliza\u2019s ultimate dream for the future is to continue in both the technical side of breeding and the communication side of agriculture. <\/p>\n<p>\u201cI want to keep learning and growing in my career, but I also want to continue using platforms like TikTok and Instagram to raise awareness about the importance of seeds and breeding in agriculture,\u201d she says. <\/p>\n<p>\u201cIt\u2019s not just about producing more food but producing better food that can withstand challenges like disease and climate change. The future of food security depends on understanding the science behind what we\u2019re growing.\u201d<\/p>\n<p>As for where Eliza sees herself in future, she\u2019s open to new opportunities. <\/p>\n<p>\u201cThe sky\u2019s the limit. I\u2019m only five years into my career, so there\u2019s a lot more to learn, but I\u2019m excited to see what the future holds.
