The raw materials contain sugar or carbohydrate, which converts to alcohol in the fermentation process. Carbon dioxide is also formed with alcohol. So the produced alcohol undergoes the distillation process to enhance the concentration.\u00a0<\/span><\/p>\n<\/div>\n<p>\n<span style=\"font-family: verdana, sans-serif;\"><span style=\"font-family: verdana, sans-serif;\">Two main distillation processes take place: <b>Column distillation<\/b> and <b>Pot distillation<\/b>. When the mixture of ethanol and water (a mixture of ethanol and water is called <b>wash<\/b>) is heated, ethanol boils at a lower temperature <b>(78.5<\/b><\/span><span style=\"vertical-align: super;\"><b>o<\/b><\/span><span style=\"font-family: verdana, sans-serif;\"><b>C)<\/b> than water <b>(100<\/b><\/span><span style=\"vertical-align: super;\"><b>o<\/b><\/span><b>C)<\/b>. <b>There are three stages of vaporization &#8211;\u00a0<\/b><\/span><\/p>\n<div>\n<ul style=\"text-align: left;\">\n<li><span style=\"font-family: verdana, sans-serif;\"><b><span style=\"color: #990000;\">Boil-off:<\/span><\/b> In this stage, compounds with the low boiling point vaporizes. It is also called Foreshot or Heads. <b>Generally, the following substances get vaporized during this stage &#8211;\u00a0<\/b><\/span><\/li>\n<\/ul>\n<ol style=\"text-align: left;\">\n<li><span style=\"font-family: verdana, sans-serif;\"><span style=\"font-family: verdana, sans-serif;\"><b><span style=\"color: #38761d;\">Acetaldehyde (<b><span style=\"line-height: 107%;\">CH<sub>3<\/sub>CHO<\/span><\/b>)<\/span><\/b> boils at <b>20.8<sup>o<\/sup>C<\/b>. It has a <b>pungent fruity odor reminiscent of metallic green apple<\/b>. It is an aldehyde produced by plants as part of their normal metabolism. <b>Acetaldehyde<\/b> is also produced by the oxidation of ethanol.<\/span><span style=\"font-family: verdana, sans-serif;\">\u00a0<\/span><\/span><\/li>\n<\/ol>\n<ol style=\"text-align: left;\">\n<li><span style=\"font-family: verdana, sans-serif;\"><b><span style=\"color: #38761d;\">Acetone (<b><span style=\"line-height: 107%;\">(CH<sub>3<\/sub>)<sub>2<\/sub>O<\/span><\/b>)<\/span><\/b> is a <b>colorless, flammable liquid<\/b> with a boiling point of<b> 56.2<sup>o<\/sup>C<\/b>. Acetone is the simplest form of the group ketone. It is commonly used as a cleaning agent.\u00a0<\/span><\/li>\n<\/ol>\n<ol style=\"text-align: left;\">\n<li><span style=\"font-family: verdana, sans-serif;\"><b><span style=\"color: #38761d;\">Esters (RCO2R\/)<\/span><\/b>, where R is the hydrocarbon part of the carboxylic acid, R\/ is the alcohol, C is the carbon atom and O<sub>2<\/sub>\u00a0is the oxygen. It is a naturally occurring compound responsible for the aroma of many fruits such as apple, strawberry, banana, etc. Esters include ethyl acetate (boiling point 77.1<sup>O<\/sup>C), ethyl butyrate (121<sup>O<\/sup>C), ethyl formate (54<sup>O<\/sup>C), and hexyl acetate (171.5<sup>O<\/sup>C).\u00a0<\/span><\/li>\n<\/ol>\n<ol style=\"text-align: left;\">\n<li><span style=\"font-family: verdana, sans-serif;\"><b><span style=\"color: #38761d;\">Methanol (<b><span style=\"line-height: 107%;\">CH<sub>3<\/sub>OH<\/span><\/b>)<\/span><\/b> boils at <b>64.7<sup>O<\/sup>C<\/b>. It is also called <b>methyl alcohol<\/b>. The boiling point of methanol and ethanol is almost the same, so it is very hard to separate them in distillation. However, methanol is separated as it is very <b>bad for the liver<\/b>, and consumption is likely to lead to <b>blindness<\/b>.\u00a0<\/span><\/li>\n<\/ol>\n<ul style=\"text-align: left;\">\n<li><span style=\"font-family: verdana, sans-serif;\"><b><span style=\"color: #990000;\">The heart or spirit:<\/span><\/b> The heart is the good tasting part of the distillation that is safe to digest. It is the part of a distillate produced during distillation that is separated to make alcoholic beverages. The main substance found in the <b>heart<\/b> of the distillation is <b>ethanol<\/b>.\u00a0<\/span><\/li>\n<\/ul>\n<ul style=\"text-align: left;\"><span style=\"font-family: verdana, sans-serif;\"><\/p>\n<li><b><span style=\"color: #990000;\">The tails:<\/span><\/b><span style=\"font-family: &quot;helvetica neue&quot;, arial, helvetica, sans-serif;\"> Tails are the last part of a distillation process. In this stage, compounds with a high boiling point are found. <\/span><b>Those substances are &#8211;\u00a0<\/b><\/li>\n<p><\/span><\/ul>\n<ol style=\"text-align: left;\">\n<li><span style=\"font-family: verdana, sans-serif;\"><b><span style=\"color: #38761d;\">1-Propanol (<b><span style=\"line-height: 107%;\">CH<sub>3<\/sub>CH<sub>2<\/sub>CH<sub>2<\/sub>OH<\/span><\/b>)<\/span><\/b> is formed naturally during the fermentation process. It has a boiling point of <b>97<sup>O<\/sup>C<\/b>. It is used as a solvent in the pharmaceutical industry.\u00a0<\/span><\/li>\n<\/ol>\n<ol style=\"text-align: left;\">\n<li><span style=\"font-family: verdana, sans-serif;\"><b><span style=\"color: #38761d;\">Butyl alcohol or Butanol (C<sub>4<\/sub>HO<sub>2<\/sub>)<\/span><\/b> has a boiling point of <b>118<sup>O<\/sup>C<\/b>. It is formed naturally during the fermentation of sugar and other carbohydrates. Butanol has a banana-like flavor.\u00a0<\/span><\/li>\n<\/ol>\n<ol style=\"text-align: left;\">\n<li><span style=\"font-family: verdana, sans-serif;\"><b><span style=\"color: #38761d;\">Amyl alcohol (<b><span style=\"line-height: 107%;\">C<sub>5<\/sub>H<sub>12<\/sub>O<\/span><\/b>)<\/span><\/b> is colorless alcohol with a boiling point of <b>131.6<sup>O<\/sup>C<\/b>. It has a strong smell and sharp burning taste.\u00a0<\/span><\/li>\n<\/ol>\n<ol style=\"text-align: left;\">\n<li><span style=\"font-family: verdana, sans-serif;\"><b><span style=\"color: #38761d;\">Fusel alcohol<\/span><\/b>, also known as <b>fusel oil<\/b>\u00a0includes all the bitter compounds found in the trails during the distillation process. The term <b>fusel<\/b> is a German word, which means <b>bad liquor<\/b>.\u00a0 It includes propanol, butanol, and amyl alcohol. Fusels are high order alcohols, have more than two carbon atoms, and significantly soluble in water. The <b>column<\/b> is made of several trays or plates. The substance to be distilled (referred to as <b>feedstock<\/b>) is fed into the column vertically from top to bottom and hot vapors are coming up from bottom to top is a blast of the <b>stream<\/b>. When the feedstock comes into contact with the stream, it volatilizes ethanol and flavor compounds. As a result, these vapors begin traveling back up through plates. Since hot vapors are constantly coming through the column, the condensed vapors are redistilled and thrown back into a vapor state. As this rapid transformation from vapor to liquid to vapor happens, it separates heavier compounds like fusels from the lighter compounds like ethanol. This distillation is also known as <b>Alembic Distillation<\/b> as an <b>alembic<\/b>\u00a0or a big kettle shaped vessel, where the primary fermented liquid, also known as a <b>wash<\/b>, is heated up. Ethanol evaporates before the water, traveling into a cooling tube and back into another vessel to condense. Other compounds such as heads and tails (eg. esters, tannins, methanol, fusel alcohols) also evaporate during distilling and can impact the flavor. This distillate produces alcohol, has a concentration of about <b>20-30%<\/b> by volume. This lower concentrated alcohol is further distilled a second time to produce more concentrated alcohol.\u00a0<\/span><\/p>\n<div>\n<h2 style=\"text-align: left;\"><span style=\"color: #274e13; font-family: verdana, sans-serif; font-size: large;\"><b>Different grades of neutral alcohol<\/b><\/span><\/h2>\n<h3 style=\"text-align: left;\"><span style=\"color: #4c1130; font-family: verdana, sans-serif;\"><b>Grain Neutral Spirit (GNS)<\/b><\/span><\/h3>\n<p><span style=\"font-family: verdana, sans-serif;\">Neutral spirit or alcohol made from grain is called Grain Neutral Spirit. The most popular grains to make GNS are &#8211; barley, corn, wheat, rye, etc. It is distilled up to 95% ABV. Due to the higher level of alcohol GNS is treated with a higher level of care than normal spirit. Potato alcohol is distilled up to <b>95% ABV<\/b>. Potato alcohol is\u00a0<b>gluten-free<\/b> colorless alcohol with a neutral smell. It is produced in various regions of the Northern Hemisphere such as the US, Canada, Western Europe, and Eastern Europe. Examples &#8211; vodka<\/span><br \/>\n<span style=\"font-family: verdana, sans-serif;\"><br \/><\/span><\/p>\n<h3 style=\"text-align: left;\"><span style=\"color: #4c1130; font-family: verdana, sans-serif;\"><b>Grape-based neutral alcohol<\/b><\/span><\/h3>\n<p><span style=\"font-family: verdana, sans-serif;\">Also known as vinous alcohol or wine alcohol, is made from grape residues such as skin, pulp, seed, stem, and the wine lees (sediments dead yeast cells left after fermentation), during wine production. It is distilled up to <b>96% ABV<\/b> (sometimes 95.5%).
