It\u2019s my updated version of <a href=\"https:\/\/www.butterbaking.com\/2016\/12\/15\/christmas-cake-with-eggnog-cream-and-christmas-cookies\/\"><strong>this Christmas cake from last year<\/strong><\/a>, which is one of my absolute favourites that I just HAD to make again this year.<\/p>\n<p>Inside the cake there are three layers of lightly chocolatey, fudgy, fruit cake, that are filled and coated with a light mascarpone cream. A chocolate ganache drizzle makes it oh-so-shiny, and I topped it with everything red I could find \u2013 pomegranate, raspberries and rose petals. Feel free to use whatever you have in season here! Remove from the heat and set aside to cool for 30 minutes.<\/li>\n<li class=\"instruction\" itemprop=\"recipeInstructions\">In the meantime, grease and line the base and sides of three 7&#8242; cake tins with baking paper.<\/li>\n<li class=\"instruction\" itemprop=\"recipeInstructions\">Preheat the oven to 150 C (300 F).<\/li>\n<li class=\"instruction\" itemprop=\"recipeInstructions\">Once the fruit mixture has cooled, mix in the eggs, followed by all the remaining dry ingredients.<\/li>\n<li class=\"instruction\" itemprop=\"recipeInstructions\">Divide the mixture between the prepared tins, and bake for 35 &#8211; 40 minutes. The top will be firm but still shiny.<\/li>\n<li class=\"instruction\" itemprop=\"recipeInstructions\">Allow to cool completely before removing from the tins.<\/li>\n<li class=\"instruction\" itemprop=\"recipeInstructions\">MASCARPONE CREAM<\/li>\n<li class=\"instruction\" itemprop=\"recipeInstructions\">Place all the ingredients in the bowl of a stand mixer fitted with whisk attachment, Whip on high speed until stiff peaks form.<\/li>\n<li class=\"instruction\" itemprop=\"recipeInstructions\">To assemble the cake, place one round on a serving plate top with a quarter of the mascarpone cream, spreading it out to the edges.<\/li>\n<li class=\"instruction\" itemprop=\"recipeInstructions\">Top with another layer of fruit cake and repeat.<\/li>\n<li class=\"instruction\" itemprop=\"recipeInstructions\">Place the last fruit cake layer on top and use the remaining cream to coat the sides and top of the cake.<\/li>\n<li class=\"instruction\" itemprop=\"recipeInstructions\">Place in the fridge to allow to set.<\/li>\n<li class=\"instruction\" itemprop=\"recipeInstructions\">CHOCOLATE GANACHE<\/li>\n<li class=\"instruction\" itemprop=\"recipeInstructions\">To make the ganache, place the chocolate and cream in a small saucepan over a low heat, and stir until the ganache is smooth, melted and combined.<\/li>\n<li class=\"instruction\" itemprop=\"recipeInstructions\">Pour over the cake and allow to drizzle down the sides.<\/li>\n<li class=\"instruction\" itemprop=\"recipeInstructions\">Decorate with seasonal fruit or as you wish!<\/li>\n<li class=\"instruction\" itemprop=\"recipeInstructions\">Keep refrigerated.
