Whether hailing from surprising origins or possessing a less-Juniper-forward flavor profile, today\u2019s gins lend themselves to experimentation with creative cocktails.<\/span><\/span><\/span><\/span><\/p>\n<p><span><span><span><span><span>Last fall, <em>Washington Post<\/em> spirits writer M. Carrie Allan sampled gins from five continents and recognized styles and flavors of gin that \u201cstretch its very definition.<em>\u201d <\/em>She quoted<em> <\/em>Stu Gregor, co-founder of\u00a0<\/span><\/span><a href=\"https:\/\/www.fourpillarsgin.com\/\"><span><span>Four Pillars Gin<\/span><\/span><\/a><span><span>\u00a0in Australia\u2019s Yarra Valley: \u201cOne of the things that makes gin so exciting now is that 10, 20 years ago, there was a pretty singular style of gin, and if you didn\u2019t like that style, then you weren\u2019t loving gin. \u2026 Now it\u2019s like, well, if you don\u2019t like that gin, try this one!\u201d <\/span><\/span><\/span><\/span><\/span><\/p>\n<p><span><span><span><span><span>New gins feature a range of citrus flavors, sometimes reflecting their provenance. (<em>Gin<\/em> magazine mentions the use of yuzu from East Asia; kumquats; and different types of limes \u2013 finger limes from Australia, bergamot from the Mediterranean and gondoraj limes from India.) <\/span><\/span><\/span><\/span><\/span><\/p>\n<p><span><span><span><span><span>Savory gins are making their mark, as well. St. Louis Gin Bar owner Natasha Bahrami, also known as The Gin Girl, cites an example to <\/span><\/span><a href=\"https:\/\/vinepair.com\/articles\/why-you-need-to-know-savory-gin\/#:~:text=One%20of%20the%20most%20commonly,%2C%20thyme%2C%20and%20Arbequina%20olives.\"><span>Vinepair<\/span><\/a><span><span><span>. <\/span><\/span><\/span><span><span>Made in Italy from four types of tomatoes, the gin Moletto \u201chas a savory botanical profile with crisp pepper notes. On the note you get spaghetti sauce! Then on the palate, it\u2019s crisp with salinity.\u201d<\/span><\/span><\/span><\/span><\/span><\/p>\n<p><span><span><span><span><span>Craft gin in the 2020s may be barrel-aged. Or smoked. It may even be pink. Consumers can easily find an expression that challenges their ideas about the gin experience, as Allan experienced.
