Brush an egg wash around the excess trim to help seal your lattice crust on top (save the rest for just before baking).<\/p>\n<p class=\"wp-block-paragraph\">Pour in the cooled strawberry rhubarb pie filling.<\/p>\n<p class=\"wp-block-paragraph\">Remove the lattice strips from the refrigerator and weave them in a pattern on top of your pie. There are many methods <span style=\"box-sizing: border-box;\">for doing so, but this\u00a0<a href=\"https:\/\/youtu.be\/vwQYd2ljw-4?si=H0WDj2ub33cIzwH1\" target=\"_blank\" rel=\"noopener\" title=\"How to weave lattice pie crust\">video from King Arthur<\/a>\u00a0is particularly helpful if you\u2019ve never done it<\/span> before.<\/p>\n<p class=\"wp-block-paragraph\">Trim the lattice edges to match the 1\u2033 overhang, pinch down to seal with the egg wash, and roll the overhang up and over to create a thick border. Then, crimp or flute the edges with your fingers for a decorative touch, or seal the edges with the tines of a fork.<\/p>\n<p class=\"wp-block-paragraph\">Finally, freeze the pie crust for at least 15 minutes while your oven preheats. The initial high temperature helps create more steam and a flakier crust.<\/p>\n<p class=\"wp-block-paragraph\">Turn the oven down to 375\u00b0F (191 \u00b0C), cover the edges of the pie with foil to prevent burning, and bake for an additional 35-40 minutes, or until the filling is bubbly and the crust is a dark golden brown.<\/p>\n<p class=\"wp-block-paragraph\">Remove from the oven to cool on a wire rack for at least 4 hours before serving. It\u2019s a long time, but fruit pies take a while to cool so the filling can set, and it\u2019ll be much easier to slice.<\/p>\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n<h2 id=\"how-to-store-and-serve\" class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"How_to_Store_and_Serve\"\/>How to Store and Serve<span class=\"ez-toc-section-end\"\/><\/h2>\n<p class=\"wp-block-paragraph\">The sourdough strawberry rhubarb pie is best served at room temperature for the first couple of days or refrigerated for up to five days.<\/p>\n<p class=\"wp-block-paragraph\">The crust will become more soggy over time, but you can reheat it for a couple of minutes in a toaster oven to re-crisp the top crust.<\/p>\n<p class=\"wp-block-paragraph\">To freeze the baked pie, wrap it tightly in plastic wrap and foil, and store it for up to 3 months. Thaw in the refrigerator for at least a day. However, I recommend using tapioca starch if you plan on freezing your pie, as cornstarch can separate when frozen.<\/p>\n<p class=\"wp-block-paragraph\">I enjoy this summery pie with a dollop of whipped cream or a scoop of vanilla ice cream.
