Degreed education and formal certification does exist but is often inconvenient or out of reach for those attempting to break into the brewing industry. Many brewers begin as homebrewers or volunteers at local craft breweries, sometimes part-timers staffing the taprooms on weekends. For Diana Hernandez, the career found her instead.<\/p>\n<p class=\"wp-block-paragraph\">\u201cThat\u2019s\u00a0the funny part,\u201d says Hernandez. \u201cI\u00a0actually wanted\u00a0to be a veterinarian.\u201d<\/p>\n<p class=\"wp-block-paragraph\">Hernandez was hired at <a href=\"https:\/\/windmills-usa.com\/\">Windmills<\/a> in The Colony in June 2024, working there under Marcus Baskerville (formerly of San Antonio\u2019s <a href=\"https:\/\/sanantonioreport.org\/weathered-souls-brewery-closes-san-antonio-marcus-baskerville-black-owned\/\">Weathered Souls Brewing<\/a>, closed in September that same year). She was recently elevated to head brewer at the Indian-styled suburban <a href=\"https:\/\/northtexasbeerblog.com\/2023\/02\/15\/focus-windmills\/\">brewpub, restaurant and world music venue<\/a>, which has just recently opened a sister location in <a href=\"https:\/\/windmills-india.com\/\">Hyderabad<\/a>. Hernandez presently runs the brewhouse by herself after eight years in the Texas craft brewing industry with a resume that includes Blazing Tree Brewing in El Paso and Celis Brewing and <a href=\"https:\/\/www.nomadicbeerworks.com\/\">Nomadic Beerworks<\/a> in Austin.<\/p>\n<p class=\"wp-block-paragraph\">Diana is a strong-willed, wiry Hispanic woman originally from El Paso, herself a product of the dual cross-border cultures there as are many residents. She graduated from <a href=\"https:\/\/www.nmsu.edu\/\">New Mexico State University<\/a> with a degree in microbiology and chemistry, which already makes her an outlier for her demographic. \u201cI had every intention to be a veterinarian. I love science\u2026 I\u2019m really good.\u00a0I like math\u2026 I wanted to take care of animals. And then somebody,\u201d as many good stories begin, \u201cmy good friend from El Paso, was\u00a0the manager of a brewery\u2026\u201d<\/p>\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p class=\"wp-block-paragraph\"><a href=\"https:\/\/www.youtube.com\/watch?v=F5qHb5iwnc0\">\u201cCounterfeit Love,\u201d Rebelution<\/a><\/p>\n<\/blockquote>\n<p class=\"wp-block-paragraph\">Taking a summer break after graduation and before applying to <a href=\"https:\/\/www.tamu.edu\/\">Texas A&amp;M<\/a>\u2018s <a href=\"https:\/\/vetmed.tamu.edu\/\">veterinary school<\/a>, Hernandez filled in for an absent server at <a href=\"https:\/\/blazingtreebreweryelpaso.com\/\">Blazing Tree Brewing<\/a> one summer, which eventually led to an invitation into the brewhouse. \u201c\u2018So Diana, my\u00a0cousin\u00a0is ruining all the beer,&#8217;\u201d said her manager. \u201c\u2018Would you like to come brew with us, back\u00a0there?\u2019\u00a0And I was\u00a0like,\u00a0I\u00a0don\u2019t\u00a0know how to brew.\u201d She was not unfamiliar with craft beer nor the hobby (\u201cat NMSU,\u00a0almost everyone\u00a0used to\u00a0homebrew\u201d), although it was one she had never formally picked up. Oddly enough, what convinced the manager to invite her to learn to brew was the time they spent together in high school welding classes. Turns out that Hernandez has a wealth of practical and industrial skills.<\/p>\n<p class=\"wp-block-paragraph\">El Paso is by its nature and geography a secluded town. The nearest cities of any note are Las Cruces and Odessa\/Midland, none of which are large or modern urban centers. The San Antonio metro area is more than 500 miles distant; Phoenix, Arizona, is closer. Not until a trip visiting family in San Diego was Hernandez exposed to more than the three close-knit craft brewing operations local to El Paso at the time. \u201cThey have a a small craft beer culture down there that\u2019s\u00a0kind of unique\u00a0to the Valley,\u201d says Hernandez. \u201cSo\u00a0it\u2019s\u00a0all\u00a0sort\u00a0of\u00a0self-enclosed. Everybody knows each other. They\u00a0don\u2019t\u00a0get a lot of exposure to the rest of the state. Nothing except big ones come in,\u201d referring to brewery distribution and commercial representation.<\/p>\n<p class=\"wp-block-paragraph\">But her friend\u2019s invitation was enough for Hernandez to consider brewing professionally as a viable career, especially after three years on staff and working her way to head brewer. She was later recruited to <a href=\"https:\/\/www.celisbeers.com\/\">Celis Brewing<\/a> by Daytona Camp (granddaughter of the legendary <a href=\"https:\/\/www.beerandbrewing.com\/dictionary\/XGU2S4VosK\">Pierre Celis<\/a>) via a mutual friend, and eventually made her way to North Texas with her present position at Windmills. Along the way, scholarships to <a href=\"https:\/\/www.whitelabs.com\/\">White Labs<\/a> and the <a href=\"https:\/\/www.pinkbootssociety.org\/\">Pink Boots Society<\/a> national conference in New Orleans expanded her skillset and professional network and cemented her experience. \u201cI went to\u00a0White\u00a0Labs to learn more about yeast counting\u2026 So\u00a0I was familiar with that for a year and a half. But it was just nice to see from\u00a0textbook, from actual life, just to see if I missed anything.\u201d<\/p>\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p class=\"wp-block-paragraph\"><a href=\"https:\/\/www.youtube.com\/watch?v=5paVbkVmgRQ\">\u201cJean Jacket,\u201d The Elovaters<\/a><\/p>\n<\/blockquote>\n<p class=\"wp-block-paragraph\">\u201cI never went back [for]\u00a0schooling\u00a0or anything,\u201d says Hernandez. \u201cI just bought a whole bunch of books. I have a whole little library for\u00a0it.\u201d By this point, her professional education and training became largely self-guided as she shadowed other brewers while at work. \u201cI always would just be,\u00a0\u2018Hey, why does this happen? Why the salt? Why the calcium? Why\u00a0the\u00a0gypsum?\u2019 I just wanted to know everything\u2026 I\u00a0don\u2019t\u00a0want to feel embarrassed when somebody\u00a0asked\u00a0me.\u00a0So\u00a0it\u2019s\u00a0just like I try over-learning it, just in case somebody asked.\u201d<\/p>\n<p class=\"wp-block-paragraph\">Her professional brewing philosophy developed to be as realistic as her education, with a basis in the practical rather than theory: \u201cI do not want to pour anything that I personally\u00a0don\u2019t\u00a0even like. If I\u00a0don\u2019t\u00a0like it,\u00a0it\u2019s\u00a0just not up to standard\u2026 the beer\u00a0has to\u00a0be clean and\u00a0has to\u00a0be good. If it\u00a0didn\u2019t\u00a0turn out\u2026\u00a0I\u2019m\u00a0not pouring that at all.\u201d\u00a0<\/p>\n<p class=\"wp-block-paragraph\">The move from El Paso to the burgeoning Austin area brought more than just a minor culture shock. The craft beer culture along border towns is unsurprisingly largely Latino, and El Paso\u2019s relative isolation created a close brewing \u201cbubble\u201d where everyone knew everyone else and support came naturally. Austin, however, was something different: \u201cBut going into Austin, into the brewing community, which was my first exposure to\u2026 a huge brewery, and I felt the competitiveness\u2026 [as] if they didn\u2019t want to teach me, they didn\u2019t want to show me anything, and it\u2019s just like, \u2018What are you afraid of?\u2019 When\u00a0you\u00a0feel\u00a0secure in what you know, you\u00a0teach\u00a0other people,\u00a0that\u2019s\u00a0what you do.\u201d<\/p>\n<p class=\"wp-block-paragraph\">Was this due to being female, or just an outsider on a big team for the first time? Was it part of the state\u2019s greater craft brewing culture or due to the politics of that specific business as it experienced some <a href=\"https:\/\/craftbeeraustin.com\/celis-brewery-leadership-changes\">heavy corporate reorganization<\/a> at the same time, and the related stresses felt by nervous employees? Difficult to say: \u201cI just think that they\u00a0didn\u2019t\u00a0really want to teach me anything\u2026 They\u00a0didn\u2019t\u00a0take me very seriously. It was just a very, very odd culture.\u201d Whatever the reasons, Hernandez continued to watch and learn as much as she could in an industry recognized for very few women in her position.<\/p>\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p class=\"wp-block-paragraph\"><a href=\"https:\/\/www.youtube.com\/watch?v=CSJXle3LP_Q\">\u201cComing Undone,\u201d Korn<\/a><\/p>\n<\/blockquote>\n<p class=\"wp-block-paragraph\">\u201cI\u00a0don\u2019t\u00a0think\u00a0it\u2019s\u00a0bad,\u201d she adds.\u00a0\u201cIt almost feels that as a woman, I just\u00a0have to\u00a0[have] \u2018double proof\u2019\u2026 because\u00a0I\u2019m\u00a0not to be believed\u2026 You know,\u00a0I\u00a0can\u2019t\u00a0just say\u00a0something because\u00a0I know\u00a0it\u2019s\u00a0a fact. Now I\u2019ve\u00a0got to\u00a0bring up proof.\u201d Unfortunately, Hernandez feels her ethnicity might also play a part in such attitudes. \u201cThis is\u00a0going to\u00a0sound silly, but for a white woman in the brewhouse, it might be even easier for her to [get] some points across, and they might be believed a little more. But for me, [they say] \u2018you\u00a0don\u2019t\u00a0know what\u00a0you\u2019re\u00a0talking about, you have no idea what\u00a0you\u2019re\u00a0talking about.&#8217;\u201d<\/p>\n<p class=\"wp-block-paragraph\">\u201cI\u2019ve\u00a0been in the industry for eight years.\u00a0I\u2019ve\u00a0worked\u00a0with four different brew systems.\u00a0I\u2019ve\u00a0done distribution and\u00a0non-distribution [brewing].\u00a0I\u2019ve\u00a0done a variety of things\u00a0in order to\u00a0make my resume\u00a0very strong. And even after eight years,\u00a0I\u2019m\u00a0still\u00a0doubted.\u201d That is somewhat of a mic-drop statement regarding the state\u2019s craft brewing industry.<\/p>\n<p class=\"wp-block-paragraph\">Fortunately, her experience in the Dallas\/Fort Worth area has been better overall but still with its own subculture subtleties. Hernandez uses words like <em>welcoming<\/em> and <em>sweet<\/em> but also <em>alienating<\/em> and <em>disconnected<\/em> to describe it, mostly based on the sprawling distances between breweries and between home and work for most people. \u201cYou know, the guys\u00a0won\u2019t\u00a0hang out\u00a0with me\u2026 they just\u00a0don\u2019t\u00a0[ever] hang out. Everyone just goes home\u2026 That in Austin, anyone that you would ask is,\u00a0\u2018Yeah,\u00a0let\u2019s\u00a0go get\u00a0a beer anytime.\u2019 But the\u00a0culture up\u00a0here in North Texas feels like nobody really gets a shift* after work. They just go straight home. It is more suburban-based.\u201d\u00a0<\/p>\n<p class=\"wp-block-paragraph\">Such new lifestyle limitations have even affected her hobbies, to a degree. \u201cI play guitar, and right now, my current obsession is trying to learn the\u00a0drums.\u201d She managed to acquire a drum set for her brother back in El Paso, which she now has at her apartment in Fort Worth. \u201cI\u2019m\u00a0obsessed with heading home and playing before 10 pm, even if\u00a0it\u2019s\u00a0just 20 minutes. That way I\u00a0don\u2019t\u00a0disturb anyone.\u00a0Noise ordinance says I can\u2019t play past 10 pm.\u00a0I love\u00a0doing that.\u201d <code><strong>PH<\/strong><\/code><\/p>\n<p class=\"has-small-font-size wp-block-paragraph\"><em>* By tradition, most breweries give a free \u201cshift beer\u201d to employees as a courtesy to enjoy after their work day ends.<\/em><\/p>\n<p><span id=\"wordads-inline-marker\" style=\"display: none;\"\/>\t\t\t<\/div>\n\n","protected":false},"excerpt":{"rendered":"<p>The career path for professional brewers can often be indirect, to say the least.
