They seem to take the marinade more quickly and they cook faster.<\/li>\n<li><b>Marinade<\/b> &#8211; All things equal, I like to use this recipe for <a href=\"https:\/\/www.nibblemethis.com\/2009\/06\/jamaican-jerk-chicken.html\" target=\"_blank\">Marinade for Jerk Chicken<\/a>. But I also like the classic <a href=\"https:\/\/walkerswood.com\/jerk-seasonings\/\">Walkerswood Jerk Seasoning<\/a> and I cut that with an ounce or two of orange juice, a splash of lime juice and 2 ounces of peanut oil.<\/li>\n<li><b>Pimento Wood<\/b> &#8211; For peak authenticity, pimento wood is the ticket. However, it is a slow growing wood so Jamaica has tight restrictions on the export of pimento wood. Honestly, quality lump charcoal works for me.<\/li>\n<\/ul>\n<p><span><a name=\"more\"\/><\/span><\/p>\n<p class=\"MsoNormal\" style=\"text-align: justify;\">The two local joints<br \/>\nwhere I get my shawarma serve it with fries, a hint of pickle, and a creamy<br \/>\ngarlic sauce wrapped in warm flatbread. I swapped the traditional potato fries<br \/>\nout with earthy seasoned sweet potato fries. Place the chicken in the marinade, making sure to coat all sides.\u00a0 Refrigerate and rest for 24-48 hours.<\/li>\n<li class=\"instructions\" style=\"margin: 0px 0px 0.25em; padding: 0px;\">Make the roasted garlic lime sauce. Whisk together the roasted garlic, lime juice, lime zest, chile flake and yogurt. Refrigerate for at least 1 hour before using.<\/li>\n<li class=\"instructions\" style=\"margin: 0px 0px 0.25em; padding: 0px;\">Grill the chicken. Preheat a charcoal grill to 500\u00b0f. Remove the chicken from the marinade and shake off the excess. Grill the chicken thighs until they reach an internal temperature of 170-175\u00b0f, about 4-6 minutes per side. Let the chicken rest for 5-7 minutes and then thinly slice it.<\/li>\n<li class=\"instructions\" style=\"margin: 0px 0px 0.25em; padding: 0px;\">Grill the naan bread. Grill the bread just long enough to heat through, about 30 seconds per side.\u00a0<\/li>\n<li class=\"instructions\" style=\"margin: 0px 0px 0.25em; padding: 0px;\">Assemble the shawarma.\u00a0 Place 4-6 of the mini-pickle spears along the center of a piece of naan bread. The theory is the suction opens up the meat to receive the marinade. Plenty of people swear by it.
