width=\"474\"\/><\/a><\/div>\n<p>All my childhood, we had zucchini bread every summer, using up the ever plentiful and overly bountiful zucchini that would spring from the garden.\u00a0 I love Great Grandma&#8217;s zucchini bread, even if I tweaked it occasionally over the years.\u00a0 I have made zucchini cupcakes, but I had never made muffins out of it!\u00a0 I&#8217;ve always loved using my Great Grandmother&#8217;s vintage Wonder grater, which makes nice, fine shreds.\u00a0 It is the small sized hole grater out of the set of three that were sold in the &#8217;30s.\u00a0 I have the small and large but have to use a modern grater if I want the medium sized hole.\u00a0 I just found out they still make a version of the Wonder shredder\/grater as a three set by Jacob Bromwell.\u00a0 Boy is it expensive!\u00a0 I like the solid frame of my vintage one better though.\u00a0 Thanks Grandma!!<\/p>\n<div class=\"separator\" style=\"clear: both; text-align: center;\"><a width=\"400\"\/><\/a><\/div>\n<p>Well, yum.\u00a0 I like these even better than the loaf form!\u00a0 But hubby doesn&#8217;t like the mess of the streusel as much and prefers the bread.\u00a0 I told him that it was okay to be wrong.\u00a0 \ud83d\ude01\u00a0 The method change of working the oil into the flour gives a beautiful, moist and tender crumb to the muffins as opposed to the more solid results of the original method.<\/p>\n<p><span style=\"font-size: large;\"><i>Zucchini Bread Muffins<\/i><\/span><br \/>makes 7 muffins<\/p>\n<p>1 egg (50g)<br \/>\u2153 cup oil (70g)<br \/>3 tbsp light brown muscovado sugar (40g)<br \/>\u00bc cup granulated sugar (50g)<br \/>\u2154 cup finely grated zucchini (one small garden zucchini) (~110g)<br \/>1 tsp vanilla (5ml)<br \/>1 cup whole wheat pastry flour (125g)<br \/>\u215c tsp sea salt<br \/>\u00bc tsp soda<br \/>1 tsp cinnamon<br \/>\u00bd tsp baking powder<br \/>\u2153 cup nuts, chopped (walnuts or pecans), <i>optional<\/i>\u00a0<\/p>\n<p>Streusel topping:<\/p>\n<p>6 tbsp flour (45g)<br \/>\u00bc cup brown sugar, packed (53g)<br \/>pinch of salt<br \/>2 Tbsp cold butter, in small pieces\u00a0<br \/>\u00bc cup finely chopped nuts<br \/>\u00bd tsp cinnamon<\/p>\n<p>Combine the streusel ingredients, except for the nuts, in a bowl and rub together with your<br \/>\nfingers or a fork until very crumbly with a mixture of fine crumbs and<br \/>\nsmall, even clumps.\u00a0 Mix in the chopped nuts and set aside.\u00a0<\/p>\n<p>Pre-heat oven to 425\u00baF.\u00a0 Line a muffin tin with liners, dividing the cups to every other well as possible so that there is a space between the muffins.\u00a0 Whisk together the flour, salt, soda, cinnamon, and baking powder in a large bowl.\u00a0 Add the oil and stir into the flour mixture until fully incorporated into a loose paste.\u00a0 In small bowl or liquid measure, mix together the egg, sugars, vanilla, and zucchini.\u00a0 Add to the flour mixture and mix just until smooth and no lumps remain.\u00a0\u00a0Gently fold in the chopped nuts.\u00a0\u00a0<\/p>\n<p>Fill muffin cups \u2154 full.\u00a0 Top generously with the streusel mixture.<\/p>\n<p>Bake for\u00a0 about 20 minutes or until muffin tops are golden brown on the edges and fully baked through (200-210\u00ba internal).\u00a0 Allow to cool in the pan for 5-10 minutes before removing to a wire rack to finish cooling.<\/p>\n<div class=\"separator\" style=\"clear: both; text-align: center;\"><a
