These Roasted Cauliflower Tacos are loaded with flavor and deliciously easy to make. <\/p>\n

Colorful, flavorful, and packed with veggies!<\/figcaption><\/figure>\n

We utilize store-bought refried beans as the time-saving, creamy base. Then we add roasted cauliflower and sweet potatoes, and top with avocado and Chimichurri sauce. <\/p>\n

These tacos are a great way to get more veggies into your day and to use all the fresh herbs in your garden.<\/p>\n

What is Chimichurri?<\/h3>\n

If you\u2019re new to Chimichurri, you\u2019re in for a treat. Similar to pesto, it\u2019s made with fresh herbs, garlic, lime, olive oil, vinegar and chili. It\u2019s zesty, bright, flavorful and you can use it to top almost anything!<\/p>\n

Chimichurri originates from Argentina and tastes amazing on grilled steak or chicken. But it\u2019s equally amazing on roasted veggies, potatoes, eggs, and salmon<\/a>. And it makes these tacos AMAZING. <\/p>\n

Chimichurri also makes a great topping for salmon in this delicious recipe!<\/a><\/figcaption><\/figure>\n

You can easily make your own Chimichurri sauce, or pick up a delicious version at your local grocer. I love this one from Trader Joe\u2019s because it has cilantro in addition to other herbs.<\/p>\n

For these delicious tacos, here\u2019s what you\u2019ll need:<\/h2>\n
    \n
  • 1 head cauliflower, cut into florets<\/li>\n
  • 1 sweet potato, sliced lengthwise into wedges<\/li>\n
  • 1 lime, sliced into wedges<\/li>\n
  • 1 can refried black beans (or pinto if you prefer)<\/li>\n
  • 1 jar Chimichurri Sauce<\/li>\n
  • 1 avocado, sliced<\/li>\n
  • 1 package corn tortillas<\/li>\n
  • *Cilantro for garnish (optional)<\/li>\n<\/ul>\n

    How to Make Roasted Cauliflower Tacos <\/h2>\n

    You can top half the cauliflower and use some of the plain in another recipe tomorrow..if it lasts!<\/figcaption><\/figure>\n

    Preheat oven to 425\u00b0F<\/p>\n

      \n
    1. Place chopped cauliflower and sweet potato on a baking sheet (for easy cleanup, use parchment paper to line the pan).<\/li>\n
    2. Drizzle the veggies with olive oil and roast them for 20 minutes.<\/li>\n
    3. Meanwhile, slice the avocado and warm the beans and tortillas.<\/li>\n
    4. Remove the veggies from the oven and assemble the tacos.<\/li>\n
    5. To Serve the Tacos<\/li>\n
    6. Spread a spoonful of the warm beans on a tortilla.<\/li>\n
    7. Top with a wedge of sweet potato and a few pieces of cauliflower. <\/li>\n
    8. Top with sliced avocado and drizzle with Chimichurri sauce. <\/li>\n<\/ol>\n
