Needing to find more ways to use the lovely passion fruit<\/a>\u00a0puree that lives in my freezer, I decided that lemon poppy seed muffins could use an upgrade!\u00a0 These took a couple tries to nail down, but now everyone has given their thumbs up.<\/p>\n

What makes me especially happy about these muffins is that they disappeared throughout the week without my help.\u00a0 That means my normally muffin-apathetic family members really did like them!\u00a0<\/p>\n

Passion Fruit Poppy Seed Muffins<\/i><\/span>
makes 12 standard muffins<\/p>\n

\u00bd scant cup (105g) large egg whites, room temperature (from 6 or 7 eggs or carton whites)
6 tbsp (90g) sour cream, room temperature
6 tbsp (90g) passion fruit pur\u00e9e, room temperature
2 tbsp lemon juice
2 tbsp milk
\u00be tsp vanilla
1\u00bd cups (200g) all-purpose flour\u00a0\u00a0\u00a0
1 cup (200g) granulated sugar (May be reduced to \u00be cup 150g if desired)<\/i>
2 tsp baking powder\u00a0\u00a0\u00a0
\u00bd tsp sea salt\u00a0 \u00a0\u00a0
\u00bc cup (56g) butter, melted
\u00bc cup avocado oil\u00a0 \u00a0\u00a0
1 tbsp poppy seeds, plus more for sprinkling\u00a0\u00a0\u00a0 <\/p>\n

Passion Fruit Icing <\/i>\u00a0\u00a0
\u00be cups (90g) powdered sugar\u00a0\u00a0\u00a0
2 tbsp (30g) passion fruit pur\u00e9e\u00a0\u00a0\u00a0
\u00bd tbsp butter, melted\u00a0\u00a0\u00a0
\u00bc tsp vanilla\u00a0\u00a0\u00a0 <\/p>\n

For the muffins:<\/p>\n

Preheat the oven to 400\u00b0F.\u00a0 Grease or line with baking papers, a large six-cup muffin tin.\u00a0<\/p>\n

In a bowl or liquid\u00a0 measuring cup, whisk together the egg whites, sour cream, passion fruit pur\u00e9e, poppy seeds, and\u00a0 vanilla.\u00a0 Let sit for at least 10 minutes.<\/p>\n

In a large bowl or stand mixer, combine the flour,\u00a0 sugar, baking powder, and salt.\u00a0\u00a0<\/p>\n

On low speed,\u00a0 add in the melted butter and oil, mixing until a sandy mixture is achieved.\u00a0 Fluff with a fork to ensure no large lumps and give another quick mix for a few seconds.\u00a0\u00a0<\/p>\n

Add the wet ingredients and mix to incorporate, about 20-30 seconds at medium speed, until smoothly combined.\u00a0\u00a0<\/p>\n

Portion the batter into the muffin cups; the batter\u00a0 should fill the wells to about \u00bc inch below the rim.\u00a0<\/p>\n

Tap the pans gently on the counter once or twice to remove any air bubbles.\u00a0<\/p>\n

Bake in the center of the oven for ~20 minutes, rotating the pans\u00a0 halfway through baking.\u00a0 Muffins will be pale and have a crackled top and a wooden skewer or\u00a0 toothpick inserted into the centers should come out with a few moist crumbs.\u00a0\u00a0\u00a0\u00a0<\/p>\n

For the icing drizzle:<\/p>\n

While the muffins are baking, whisk together the powdered sugar, passion fruit pur\u00e9e, melted butter, and vanilla until smooth.\u00a0<\/p>\n

Add a few drops of water if necessary to thin the icing to the desired consistency.\u00a0<\/p>\n

When the muffins are done baking, let cool on a wire rack for 5 minutes.\u00a0 Brush or pour half the icing over the tops of the\u00a0 muffins before removing them from the tins.<\/p>\n

Transfer to a wire rack set over a sheet pan lined with parchment paper.\u00a0<\/p>\n

Pour the remaining icing over the\u00a0 muffins and sprinkle with additional poppy seeds.<\/p>\n

Let cool completely.\u00a0<\/p>\n

Muffins are best eaten the same day they are made, but may be stored in an airtight container at room temperature for 2 days.\u00a0\u00a0<\/p>\n
