Beverage director Nick Sinutko always thought Baja Blast tasted \u201cjust like a color,\u201d he says: some citrus, sure, but mostly, the soda seemed like the essence of bright aqua blue, no need to think about it further. The Baja Blast was, naturally, Sinutko\u2019s go-to order at Taco Bell, the fast-food chain at which the Mountain Dew variant was exclusive from its launch <\/span>in 2004<\/span><\/a> until 2024.\u00a0<\/span><\/p>\n

While developing drinks for fried chicken restaurant <\/span>Chick & Hawk<\/span><\/a> in Encinitas, California, Sinutko thought that a cocktail that riffed on a Baja Blast \u201cjust seemed like it was a natural fit\u201d for the \u201990s- and aughts-inspired menu. Plus, skateboarder Tony Hawk, who owns the restaurant with chef Andrew Bachelier, has <\/span>done ads for Taco Bell<\/span><\/a>.<\/span><\/p>\n

Enter Sinutko\u2019s homage, a fizzy teal highball known as the Neon Bell. It starts with a cordial of black pepper, Thai basil and lemongrass, inspired by <\/span>a video in which<\/span><\/a> someone puts a Baja Blast through a mass spectrometer and identifies flavor compounds including lemon and basil. That\u2019s followed by green Mommenpop lime aperitif, white vermouth and blue spirulina for color, before the whole thing is force-carbonated. \u201cIt all comes out as a bluish, greenish turquoise\u2014Baja Blast,\u201d Sinutko says. The name, he adds, came from \u201cimagining that that iconic Taco Bell logo lit up in the night sky.\u201d<\/span><\/p>\n

While early reporting on the soda <\/span>was skeptical<\/span><\/a> that it could gain traction at Taco Bell, for whom it was developed, a Baja Blast and a <\/span>Crunchwrap Supreme<\/span><\/a> eventually became as standard a pairing as Fire Sauce and a Cheesy Gordita Crunch. It has even more cult appeal than the classic Mountain Dew, and what marketers imagined 20 years ago came true: You go to Taco Bell, you get a Baja Blast. But the soda, no longer solely defined by Taco Bell, has become as much of a template as the <\/span>endlessly riffed-on Filet-O-Fish<\/span><\/a>. Everyone wants to drink a Baja Blast, so now here come the boozy versions.<\/span><\/p>\n

In Seattle, the kitschy <\/span>Dreamland Bar & Diner<\/span><\/a> has served a frozen drink known as the Bajaja Explosion, a chaotic blend of vodka, tequila, Powerade, Mountain Dew, Sprite, coconut and blue Cura\u00e7ao. <\/span>Rocco\u2019s Sports and Recreation<\/span><\/a>, a sports bar in New York City, previously made a Florida Gator-ade. With a base of a <\/span>blue Cura\u00e7ao-Baja Blast reduction, it <\/span>evoked both a Baja Blast and the electrolyte drink<\/span>.<\/span><\/p>\n<\/p><\/div>\n

The rendition at <\/span>Dirty Pretty<\/span><\/a>, a cocktail bar in Portland, Oregon, is known as the Bl\u00e5haj Blast, which is the bar\u2019s best-selling drink by a large margin. While conceptualizing the drink, general manager Emily McLean asked herself, <\/span>The main thing [Baja Blast] is, is bright blue\u2014what does that invoke?<\/span><\/i> She first settled on a mix of tequila, <\/span>blue Cura\u00e7ao, lime, and orange juice to hit the citrusy notes of the original.\u00a0<\/span><\/p>\n

There\u2019s something about a blue drink\u2014perhaps the fact that this particular fantastical hue doesn\u2019t really exist in natural foods, but is made possible through the magic of food dyes\u2014that inspires a loosened-up vacation mentality. So when tests with Powerade or a Baja Blast itself didn\u2019t turn out right, McLean shifted to asking, <\/span>What does \u201cfun-tropical\u201d mean to me?<\/span><\/i> \u201cWe ended up with a mix of blue raspberry syrup and guava syrup,\u201d she says. According to McLean, the result is more of a \u201ccreative interpretation\u201d than a direct copy.\u00a0<\/span><\/p>\n

And did you catch the other reference? The drink, which comes with a gummy shark, is named for Bl\u00e5haj, the <\/span>internet-beloved<\/span><\/a> Ikea plushie that has also <\/span>become a symbol<\/span><\/a> of the trans community. \u201cWe wanted to have a little subtle nod like, <\/span>Hey, we see you. This is a great place for you to come in<\/span><\/i>,\u201d McLean says.<\/span><\/p>\n

Of course, the Bl\u00e5haj Blast isn\u2019t the bar\u2019s only \u201ccreative interpretation\u201d of Taco Bell: It also serves takes on the Cheesy Gordita Crunch and the Crunchwrap. Earlier this year, in <\/span>a <\/span>New York Times<\/span><\/i> piece<\/span><\/a> about how the Crunchwrap has inspired all kinds of imitators, Luke Fortney concluded that, while the company could go after smaller businesses for trademark enforcement, all these imitators are \u201cessentially free advertising.\u201d They entrench the original deeper into our collective cultural consciousness until it\u2019s unavoidable: We can\u2019t escape Taco Bell even when we\u2019re in another restaurant, we still know the original reference even when the name attempts to mask it.<\/span><\/p>\n
