These muffins were born of a special request.\u00a0 A friend asked if I could make banana Oreo muffins and I thought, oh definitely!\u00a0 Based off my banana bread<\/a> recipe with my now favorite muffin method, the base banana muffin is wonderful.\u00a0 I liked the golden Oreo version the best but the regular was good too.\u00a0 If you want it less sweet, you can just sprinkle with crumbs before baking as I did for the extra batter testers.\u00a0 (I divided my batter in half by weight to make six of each flavor.)<\/div>\n

\u00a0<\/p>\n

I needed to make them again because the entire batch was happily delivered and devoured before I realized I hadn’t taken any nice pictures!\u00a0 And while we really liked the golden Oreo version, the recipients proclaimed the original Oreo muffin to be their favorite version.\u00a0 The bitterness of the cocoa can help balance the sweetness of the banana muffin.\u00a0 Both are excellent!\u00a0 (In a family where three out of four usually skip the muffins, everyone came running for these, especially the second batch we got to keep, and youngest used a, ahem, colorful metaphor to emphasize their goodness!)\u00a0 The next morning, I got up to find only 1 golden muffin left, I guess the fam really likes those ones best!<\/p>\n\n\n\n\n

First batch had more chopped Oreos but I decided less was more!<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n


Oreo Banana Muffins
<\/span><\/i>makes 14 standard muffins<\/span><\/p>\n

\u00bc cup butter, melted
\u00bc cup avocado oil
\u00bd cup + 1 tbsp buttermilk (or \u00bc cup sour cream + \u2153 cup milk – will brown a little less)
2 overripe bananas, mashed with 1 tsp lemon juice
1 tsp vanilla\u00a0
2\u20443 cup sugar\u00a0
1 egg
1\u00bd cups all purpose flour\u00a0
1 tsp baking soda
1 tsp baking powder
\u00bd tsp sea salt
1-1\u00bd cups Oreos, roughly chopped (About 10-12 Oreos)<\/p>\n

Optional glaze:
1 cup powdered sugar
\u00bd tsp vanilla
1-2 tbsp milk, enough to achieve drizzle consistency\u00a0<\/p>\n

Garnish:
\u00bd cup Oreos, chopped (About 6 Oreos)<\/p>\n

Grease or line a muffin tin with paper liners.\u00a0 Preheat oven to 375\u00baF.<\/p>\n

Combine
\n the flour, salt, baking powder, soda, and sugar in a large
\nbowl.\u00a0 Combine the oil and melted butter and stir into the flour mixture
\n until fully blended into fine crumbs.\u00a0 Work with fingers if necessary
\nto break up any larger crumbs.\u00a0 In small bowl or liquid measure, whisk
\ntogether the egg, sour cream, milk, mashed banana with lemon juice, and
\nthe vanilla.\u00a0 Add to the flour\/butter mixture
\nand whisk just until smooth and no lumps remain.\u00a0 \u00a0Gently fold in the chopped Oreos. Fill muffin wells
\nabout about two thirds full.\u00a0 (If no glaze is desired, sprinkle the tops of the muffins with finely chopped Oreo crumbs before baking.)<\/i><\/p>\n\n\n\n\n

easily tell which flavor is which.<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n


\u00a0<\/i>Bake at 375\u00ba for 23-28 minutes or
\n until a wooden pick inserted in the center comes out with a few moist crumbs.\u00a0 Cool in pan for 5-10
\nminutes, then remove to a wire rack to cool completely.\u00a0\u00a0<\/p>\n\n\n\n\n

Sour cream version, less browning.<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n

While
\nthe muffins are cooling, combine the glaze ingredients together in a
\nbowl and whisk until smooth.\u00a0 Thin with enough milk to achieve a thick
\ndrizzle.\u00a0 When the muffins have cooled, pipe or drizzle the icing across
\n the tops.\u00a0 Drizzle just two at a time to prevent the icing crusting before the cookie pieces can adhere.\u00a0 Immediately sprinkle with additional chopped Oreos if desired.\u00a0<\/p>\n\n\n\n\n
