We didn\u2019t know it then, but that one decision would change the entire direction of our restaurant, our careers, and eventually The Meat Dudes. Welcome to the Lady Jaye Wagyu Beef Journey.<\/p>\n<p>We sold that entire cow out of our <em>garage window<\/em> during the West Seattle Farmers Market\u2026 and it was gone in <em>two hours<\/em>.<\/p>\n<p>A whole cow.<br \/>Two hours.<br \/>During COVID.<\/p>\n<p>But it wasn\u2019t just the speed of the sale that blew our minds\u2014it was the taste. When we finally sat down and sampled cut after cut, we realized we weren\u2019t just eating \u201cgood beef.\u201d We were tasting something completely different.<\/p>\n<p>Rich. Beefy. Buttery. Clean. Flavorful.<br \/>And it came from <em>20 miles away<\/em>.<\/p>\n<p>That moment flipped a switch for us.<br \/>It showed us that world-class <a href=\"https:\/\/themeatdudes.com\/wagyu\/american-wagyu-vs-a5-wagyu\/\" data-wpel-link=\"external\" target=\"_blank\" rel=\"external noopener noreferrer\">American Wagyu<\/a> exists right here in Washington, and that ranchers across the U.S. were raising beef every bit as special\u2014and sometimes more aligned with American tastes\u2014than the ultra-premium A5 from Japan.<\/p>\n<p>We explored <a href=\"https:\/\/a5wagyu.com\/wagyu\/what-is-a5-wagyu\/\" data-wpel-link=\"external\" target=\"_blank\" rel=\"external noopener noreferrer\">Japanese A5<\/a> too (and still love it), but <a href=\"https:\/\/themeatdudes.com\/wagyu\/a5-japanese-wagyu-vs-american-wagyu\/\" data-wpel-link=\"external\" target=\"_blank\" rel=\"external noopener noreferrer\">American Wagyu<\/a> hit differently. It felt like the perfect intersection of craft, flavor, and approachability.<\/p>\n<h2 class=\"wp-block-heading\"><strong>Bringing Wagyu Into Lady Jaye<\/strong><\/h2>\n<p>After that first full-blood cow, we couldn\u2019t stop.<br \/>We started bringing small amounts of American Wagyu into the restaurant\u2014experimenting, testing, tasting, refining. That led to:<\/p>\n<p>-The Smoked Wagyu Burger \u2014 West Seattle\u2019s #1 Burger for 3 years<br \/>-Wagyu briskets, New York Strips, Rib Roasts, Zabutons, and whole-muscle cuts smoked as weekend specials<br \/>-A growing obsession with sourcing from ethical, transparent American ranchers<\/p>\n<p>We weren\u2019t just \u201ccooking beef\u201d anymore.<br \/>We were learning an entire craft.<\/p>\n<h2 class=\"wp-block-heading\"><strong>The Birth of The Meat Dudes<\/strong><\/h2>\n<p>As we dove deeper into Wagyu, we realized something huge:<\/p>\n<p>Most people had no idea what Wagyu actually was.<\/p>\n<p>-They didn\u2019t know the difference between <a href=\"https:\/\/themeatdudes.com\/wagyu\/whats-the-difference-between-u-s-japanese-australian-wagyu-beef\/\" data-wpel-link=\"external\" target=\"_blank\" rel=\"external noopener noreferrer\">A5 and American Wagyu<\/a>\u2026<br \/>-They didn\u2019t know how it\u2019s raised\u2026<\/p>\n<p><a href=\"https:\/\/ladyjaye.com\/blog\/is-wagyu-beef-healthy\/\" data-wpel-link=\"internal\">-The Health benefits<\/a>\u2026<br \/>-They didn\u2019t know why it tastes the way it does\u2026<br \/>-They just knew it looked expensive.<\/p>\n<p>So we created <a href=\"https:\/\/open.spotify.com\/episode\/2IQIV9DBwNN8Gw5l6VvbUk?si=YyamaWDgTMS5pthY9wsC4w\" data-wpel-link=\"external\" target=\"_blank\" rel=\"external noopener noreferrer\">The Meat Dudes Podcast<\/a> to fix that\u2014an educational, entertaining show focused on bringing real information straight from the source.<\/p>\n<p>Since starting, we\u2019ve talked with Wagyu ranchers and experts from:<\/p>\n<p>?? Elevate. And help the American Wagyu industry thrive.<\/p>\n<h2 class=\"wp-block-heading\"><strong>Creating the Ultimate Wagyu Smash Burger<\/strong><\/h2>\n<p>After four years of learning from ranchers, tasting hundreds of cuts, and refining what \u201cgreat American Wagyu\u201d means, we set out to create the perfect everyday Wagyu burger.<\/p>\n<p>That journey brought us to <a href=\"https:\/\/purecountryfarms.org\/\" data-wpel-link=\"external\" target=\"_blank\" rel=\"external noopener noreferrer\">Pure Country Farms<\/a> in Moses Lake, WA\u2014one of the most dialed-in purebred Wagyu programs in the country.<\/p>\n<p>Together, we built a custom Wagyu grind that became the foundation of the brand-new Lady Jaye <a href=\"https:\/\/ladyjaye.com\/blog\/american-wagyu-smash-burger\/\" data-wpel-link=\"internal\">Wagyu Smash Burger<\/a>.<\/p>\n<p>It\u2019s everything we\u2019ve learned distilled into one sandwich:<\/p>\n<p>??
