They look so innocent when placed before you \u2013 then they <em>explode<\/em> with colourful fillings when you <em>smash <\/em>into them! They are so iconically Aussie-Christmas. In years gone by, I\u2019ve done a towering <a href=\"https:\/\/www.recipetineats.com\/pavlova-christmas-tree-dessert\/\">Christmas tree pav<\/a>, <a href=\"https:\/\/www.recipetineats.com\/mini-pavlovas\/\">Mini Pavlovas<\/a>, and yup, even a <a href=\"https:\/\/www.recipetineats.com\/pavlova-recipe\/\">regular one<\/a>. <\/p>\n<p>This year might be my best yet. Introducing \u2013 Pavlova Bombs!! Inspired by  a <a href=\"https:\/\/www.instagram.com\/p\/DROGPKkgQo_\/?img_index=2\">pavlova ball<\/a> I recently had at <a href=\"https:\/\/bessiesrestaurant.com\">Bessie\u2019s<\/a> restaurant (rapidly becoming one of my favourite nice-restaurants in town), this is a pavlova that\u2019s got hidden fillings inside. Imagine the <em>wow<\/em> factor when you<em> <\/em>smash the pavlova open!<\/p>\n<p>The pavlova ball I had a Bessies was filled with elderflower strawberries. I chose <a href=\"https:\/\/www.recipetineats.com\/raspberry-coulis\/\">Raspberry Coulis<\/a> and <a href=\"https:\/\/www.recipetineats.com\/lemon-curd\/\">Lemon Curd<\/a> for visual impact (bright red streaks against yellow lemon curd looks so striking), and also because fruit + pav is my favourite thing ever. You\u2019ve got the sugary meringue shell and marshmallow insides, then fruity berry tartness from the Raspberry Coulis and silly-smooth custardy tang from the lemon curd. Plus, whipped cream of course!!! Is it really a Pav without whipped cream??<\/p>\n<p>You can fill it with anything that can be poured or stuffed inside: passionfruit pulp, mango puree, chopped berries, chocolate syrup, salted caramel\u2026 CAN YOU IMAGINE!<\/p>\n<p>As impressive as they look, they are surprisingly straightforward to make. You just shape the pavlova into a dome shape, punch a hole in the base and fill using a piping bag or just pour in the hole. I typically make them the night before then leave them in the oven overnight while I sleep, then store in an airtight container until required.<\/p>\n<h3 class=\"wp-block-heading\" id=\"h-1-ingredients-for-pavlova-bombs\">1. Using the right amount for Pavs really matters, given it is the key ingredient, so we need to measure rather than relying on \u201c3 eggs\u201d. Unfortunately chickens are extremely selfish and they don\u2019t lay exactly the same size eggs every time. <em>The nerve!!<\/em> \ud83e\udd23<\/p>\n<\/li>\n<li>\n<p><strong>Caster sugar (superfine sugar)<\/strong> \u2013 This is finer grains than regular white sugar so it dissolves more easily. Usually I say it\u2019s ok to use regular white sugar but for pavs, I highly recommend using caster sugar because if the sugar doesn\u2019t dissolve fully, you end up with sugar crystals on the edges.<\/p>\n<\/li>\n<li>\n<p><strong>Cornflour (cornstarch) and vinegar<\/strong> helps make the pavlova more structurally stable and strong so it won\u2019t crack or collapse which is a common problem with a large\u00a0<a href=\"https:\/\/www.recipetineats.com\/pavlova-recipe\/\">traditional pavlova<\/a>. Though less of a risk with mini ones, why risk it when we can take this easy precautionary measure? \ud83d\ude42<\/p>\n<\/li>\n<\/ul>\n<p><strong>* Sweetness note<\/strong> \u2013 The recipe uses 125g sugar (2\/3 cup) for 3 egg whites, which serves 5. It may sound like a lot, but\u00a0<strong>please don\u2019t reduce it<\/strong>. Pavlovas and meringues need enough sugar to bake into a dry, crisp shell. Reduce it and the shell becomes fragile and prone to weeping. I\u2019ve tested this extensively and this is the minimum amount that works. Pavs are sweet, but because they\u2019re light and served with fruit and barely-sweetened cream, they never feel heavy.<\/p>\n<h3 class=\"wp-block-heading\" id=\"h-2-pavlova-bomb-fillings\">2. pavlova bomb fillings<\/h3>\n<p>I filled these Pavlova Bombs with <a href=\"https:\/\/www.recipetineats.com\/lemon-curd\/\">Lemon Curd<\/a> and <a href=\"https:\/\/www.recipetineats.com\/raspberry-coulis\/\">Raspberry Coulis<\/a>, both of which balance the sugary shell with tang and berry brightness and bring traditional Pav fruitiness to this dish. Plus cream, of course! Here they are \u2013 the <a href=\"https:\/\/www.recipetineats.com\/raspberry-coulis\/\">Raspberry Coulis<\/a> and <a href=\"https:\/\/www.recipetineats.com\/lemon-curd\/\">Lemon Curd<\/a>. The coulis recipe also includes my cheeky shortcut coulis which I make using jam thinned with lemon juice. You can use anything that can be piped, poured or stuffed into a 1.25 cm \/ 1\/2\u2033 hole. Here are some ideas:<\/p>\n<ul class=\"wp-block-list\">\n<li>\n<p>Passionfruit pulp \u2013 so very Aussie pavlova!<\/p>\n<\/li>\n<li>\n<p>Mango puree \u2013 literally, just puree mango flesh. Excellent thick oozing consistency!)<\/p>\n<\/li>\n<li>\n<p>Chopped berries, cherries or other soft fruit \u2013 small enough to shove through the hole. I make the <a href=\"https:\/\/www.recipetineats.com\/raspberry-coulis\/\">Raspberry Coulis<\/a> and <a href=\"https:\/\/www.recipetineats.com\/lemon-curd\/\">Lemon Curd<\/a> while the Pavlova is in the oven then leave them in piping bags overnight, ready to fill the Pav shells. I also whip the cream the day before and leave that in a piping bag. I stabilise it using Cream Stabiliser so it doesn\u2019t weep or deflate \u2013 see <a href=\"https:\/\/www.recipetineats.com\/stabilised-whipped-cream\/\">Stabilised Whipped Cream recipe<\/a>.<\/p>\n<p>Then I have the garnishes ready to go \u2013 pistachios chopped, mint sprigs picked, extra raspberries. Egg whites tainted with even a drop of egg yolk won\u2019t fluff up properly.<\/p>\n<\/li>\n<li>\n<p><strong>Whip at room temperature<\/strong> \u2013 While eggs separate better when cold, they fluff up when they are not fridge cold. Snip the end to make a large 2cm \/ 0.8&#8243; hold. Pipe 5 mounds on the tray, then smooth into domes that are taller than they are wide (they flatten slightly when baked). Mine are about 4 cm \/ 1.6&#8243; wide and 6.5cm \/2.6&#8243; tall. Use a small offset spatula or butter knife to smooth into a dome shape (no need to be perfect, it gets decorated later).<\/span><\/p>\n<\/li>\n<li id=\"wprm-recipe-191121-step-2-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p><span style=\"display: block;\"><strong>Bake 1 hour 30 minutes \u2013 <\/strong>Place both trays in the oven, immediately <u><strong>turn oven DOWN <\/strong><\/u>to 110\u00b0C\/225\u00b0F (100\u00b0C fan) and bake for 1 hour 30 minutes or until they are dry to touch (check base). Keep baking if still sticky \u2013 exact times may vary. (Note 4)<\/span><\/p>\n<\/li>\n<li id=\"wprm-recipe-191121-step-2-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p><span style=\"display: block;\"><strong>Cool in oven \u2013 <\/strong>Turn oven OFF and leave to fully cool for 3 hours or overnight around 10 hours (I often do this while I sleep so handy!).<\/span><\/p>\n<\/li>\n<\/ul>\n<\/div>\n<div class=\"wprm-recipe-instruction-group\">\n<h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">Fillings:<\/h4>\n<ul class=\"wprm-recipe-instructions\">\n<li id=\"wprm-recipe-191121-step-3-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\"><strong>Make <\/strong>the <a href=\"https:\/\/www.recipetineats.com\/lemon-curd\/\">Lemon Curd<\/a> and <a href=\"https:\/\/www.recipetineats.com\/raspberry-coulis\/\">Raspberry Coulis<\/a> while the pavlovas are in the oven. Do this just prior to serving, unless you stabilise the cream (which can be done the day before). Note: if making <a href=\"https:\/\/www.recipetineats.com\/stabilised-whipped-cream\/\">stabilised whipped cream<\/a>, follow the steps for your chosen method (there&#8217;s multiple ways to do it).<\/span><\/div>\n<\/li>\n<\/ul>\n<\/div>\n<div class=\"wprm-recipe-instruction-group\">\n<h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">Assemble Pavlova Bombs:<\/h4>\n<ul class=\"wprm-recipe-instructions\">\n<li id=\"wprm-recipe-191121-step-4-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p><span style=\"display: block;\"><strong>Piping bags<\/strong> \u2013 Transfer the raspberry coulis, lemon curd and cream into separate piping bags. Snip a small 5 mm \/ 1\/5&#8243; off the end of the raspberry coulis, and a larger 1cm \/ 0.4&#8243; off the cream piping bag. (No piping bag? See Note 5)<\/span><\/p>\n<\/li>\n<li id=\"wprm-recipe-191121-step-4-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p><span style=\"display: block;\"><strong>Access hole! <\/strong>Place a pavlova bomb upside down in a muffin tin, to hold in place as you work. Carefully cut a 1cm \/ 0.4&#8243; hole in the middle using a small sharp knife. Stick a chopstick into the hole and squidge around GENTLY to move some pavlova marshmallow centre out of the way to make room for the fillings.<\/span><\/p>\n<\/li>\n<li id=\"wprm-recipe-191121-step-4-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p><span style=\"display: block;\"><strong>Pipe<\/strong> some raspberry coulis in (~ 1 1\/2 tsp), then lemon curd (~ 2 \u2013 3 tsp). Plug the hole with cream. <\/span><\/p>\n<\/li>\n<li id=\"wprm-recipe-191121-step-4-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p><span style=\"display: block;\"><strong>Plate up \u2013 <\/strong>Pipe ~2 tbsp cream on a plate, top with pavlova bomb (stops it from sliding). Pipe then spread more cream on the top of the pavlova bomb. Someone needs to have a talk to chickens! \ud83d\ude02<\/li>\n<li>Separate the egg whites from the yolks while fridge cold (it\u2019s easier to do than with warm eggs)<\/li>\n<li>Leave whites for 15 minutes to take out the fridge chill, cold eggs don\u2019t fluff as well.\u00a0<\/li>\n<li>DO NOT use carton egg whites \u2013 it doesn\u2019t fluff up nearly as well<\/li>\n<\/ul>\n<p><span style=\"display: block;\"><strong>2. Vinegar &amp; cornflour\/cornstarch<\/strong>\u00a0\u2013 Helps stabilise pav and avoid cracks. For vinegar just use plain white vinegar. Not anything fancy!<\/span><br \/>\n<span style=\"display: block;\"><strong>3. Stabilised whipped cream \u2013<\/strong> This is just whipped cream that\u2019s been stabilised so you can whip it the day before and it stays fluffy. Store in a piping bag for ease of storage and use the next day, else in an airtight container but do NOT stir before spooning onto pavs (this will deflate it ia bit).<\/span><br \/>\n<span style=\"display: block;\">See the <a href=\"https:\/\/www.recipetineats.com\/stabilised-whipped-cream\/\">Stabilised Whipped Cream recipe<\/a> for different methods (store bought powder, gelatine and mascarpone), I use all 3 methods.<\/span><br \/>\n<span style=\"display: block;\"><strong>4. How to check the Pav is ready \u2013<\/strong>\u00a0Bake time can vary depending on how well heat distributes in your oven. Goal: dry, lightly crispy shell. The shell will dry out further as it cools in the oven, whilst the centre stays marshmallowy.<\/span><br \/>\n<span style=\"display: block;\"><strong>5. No piping bag? <\/strong>That\u2019s ok! Use ziplock bags (snip the corner) or just carefully pour the fillings into the hole, and use a spoon for the cream.<\/span><br \/>\n<span style=\"display: block;\"><strong>6. Storage<\/strong> \u2013 \u00a0Pavlova shells can be stored in an airtight container as soon as you take them out of the oven and they are fully cooled. If pavs are exposed to heat and humidity, the surface may get sticky and chewy.<\/span><br \/>\n<span style=\"display: block;\">Best served on the day you take them out of the oven after cooling. The shell will stay dry and crisp for 2 to 3 days (as long as they are kept in a cool dry place), but the marshmallow inside will start to deflate. It reduces by about 1\/3 on Day 3. Do not refrigerate! The meringue shell will disintegrate.<\/span><br \/>\n<span style=\"display: block;\"><strong>EXCELLENT PREP AHEAD dinner party dessert.<\/strong> Have the fillings in piping bags in the fridge. Make\u00a0<a href=\"https:\/\/www.recipetineats.com\/stabilised-whipped-cream\/\">Stabilised whipped cream<\/a> and put that in a piping bag in the fridge (it will be 100% fluffy for 24 hours). Make the holes in the pav balls. Then assemble when ready to serve!
