Most don\u2019t have the tolerance for the <a href=\"https:\/\/modernfarmer.com\/2025\/03\/how-to-care-for-your-garden-in-unpredictable-weather\/\">extreme cold<\/a> in upper North America, and many die back in late winter in the South. But if you have time, you can<strong> build a December cold frame<\/strong>, <strong>hoop house<\/strong>, or <strong>covered row<\/strong> to grow even when it\u2019s frigid outdoors.<\/p>\n<p>The key is to ensure you\u2019ve got a good setup for your climate, and to <strong>plant crops that enjoy a little cold<\/strong>. Those in colder areas should <strong>choose more secure structures<\/strong> to weather intense cold and wind. Cold frames are easy to build from repurposed materials. Hoop houses, on the other hand, are larger and need securing.\u00a0<\/p>\n<p><a href=\"https:\/\/www.uvm.edu\/extension\/news\/cold-frames-season-extenders\" target=\"_blank\" rel=\"noopener\">Season extension<\/a> with a good seal is best for climates with extremely cold winter weather. In milder areas, vent the cover when temperatures are above 50\u00b0F (10\u00b0C). The interior of the extender can reach <strong>50 degrees warmer<\/strong> than the air outside in direct sunlight. Note this as you decide what to go with.\u00a0<\/p>\n<p>Make your seasonal extension a part of your current growing space to cut down on costs. As long as what you choose reaches the correct temperature and is easy to adjust, you\u2019re in business.\u00a0<\/p>\n<p class=\"h2\">What to Plant<\/p>\n<p>Go for cool-weather crops in your December cold frame, hoop house, or row. Cold-loving plants can <strong>handle a little bit of exposure<\/strong> as you make any necessary adjustments. The greens and the supple, earthy roots are <strong>edible<\/strong>. Both are great for the early spring market stand. And they\u2019re ready in just over a couple of months.\u00a0<\/p>\n<p>For farmers who want to bring specialty produce to the market, <strong>grow <a href=\"https:\/\/www.botanicalinterests.com\/products\/golden-boy-beet-seeds?_pos=1&amp;_psq=golden+b&amp;_ss=e&amp;_v=1.0\">golden beets<\/a><\/strong>. \u2018Chioggia\u2019 is another great option, with its inner flesh that looks like a target when cut. They are <strong>more sensitive to cold<\/strong> than beets, but they <strong>mature much more quickly<\/strong>, making them a viable option in areas where the cold comes on hard and fast.\u00a0<\/p>\n<p><a href=\"https:\/\/www.botanicalinterests.com\/products\/french-breakfast-radish-seeds?_pos=1&amp;_psq=french+brea&amp;_ss=e&amp;_v=1.0\">French breakfast radishes<\/a> are mild and quick-maturing, <strong>ready in 30 days<\/strong>. For a radish that\u2019s robust and spicy, black varieties are your best bet. Tuck the seeds in between rows of radishes and carrots, and <strong>start harvesting them at their baby stage<\/strong>.\u00a0<\/p>\n<p>For head lettuces, give them a little more room. Space romaine and butterhead at <strong>6 to 12 inches apart<\/strong> for the best results. All of these cold-hardy greens sweeten with a kiss of frost. When it gets too cold, pop your hoop cover or cold frame over the top and let them mature.\u00a0<\/p>\n<p>The days to maturity vary widely depending on what you\u2019re growing and the growth stage you\u2019re harvesting at. Baby kale needs<strong> less than a month<\/strong>. The same goes for spinach. If you want to ensure your success, plant sets if you can find them, rather than seeds. They\u2019ll be ready <strong>within 40 to 60 days<\/strong>. Broccoli rabe and aspabroc are <strong>ready in 50 days<\/strong> or so, while larger crowns take up to three months. Brussels sprouts <strong>take up to three months<\/strong> as well.\u00a0<\/p>\n<p>Both love some frost, and <strong>their flavor sweetens<\/strong> with it. They require a bit of feeding through the cold to produce the best heads. But to name a few, there are <strong>hellebore<\/strong>, <strong>winter aconite<\/strong>, <strong>crocus<\/strong>, <strong>primrose<\/strong>, <strong>pussytoes<\/strong>, and <strong>violas<\/strong>. Check the days to maturity on your seed packet and make a plan if you want to grow more than one kind.\u00a0<\/p>\n<p>Having flowers through winter is not just a boon to your pocketbook, but it also offers a little lightness to the barren, cold season. If yours make it through winter, you can plan for <strong>early spring bouquets<\/strong> as a seasonal market item.
