Originally, \u201cstout\u201d simply meant \u201cstrong,\u201d and \u201cstout porter\u201d referred to a more robust version of the same beer. Over time, stout took on its own identity.<\/span><\/span><span data-ccp-props=\"{&quot;335559739&quot;:110}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"auto\"><span>Thanks to heavily roasted malts, stout\u2019s flavour profile leans towards coffee, chocolate and <\/span><span>burnt <\/span><span>bread. Beer writer Annabel Smith puts it succinctly:<\/span><\/span><span data-ccp-props=\"{&quot;335559739&quot;:110}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"auto\"><span>\u201cIf stout were coffee, it would be a rich, dark espresso.\u201d<\/span><\/span><span data-ccp-props=\"{&quot;335559739&quot;:110}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"auto\"><span>This roasty depth made stout a<\/span><span> reliable favourite:<\/span><span> beloved by dockworkers, brewers\u2019 draymen, and eventually worldwide through the success of brands like Guinness.<\/span><\/span><span data-ccp-props=\"{&quot;335559739&quot;:110}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"auto\"><span>Today\u2019s brewers continue to <\/span><span>innovate:<\/span><span> oatmeal stouts add silkiness, milk stouts bring a touch of sweetness<\/span><\/span><span><span data-contrast=\"auto\"><span>,<\/span><\/span><\/span><span data-contrast=\"auto\"><span> and imperial stouts dial up <\/span><span>alcoholic strength<\/span><span>. Whatever the variation, the style <\/span><span>remains<\/span><span> a celebration of roasted malt, body, and balance <\/span><span>&#8211;<\/span><span> something students experience first-hand in WSET&#8217;s beer tasting framework.<\/span><\/span><span data-ccp-props=\"{&quot;335559739&quot;:110}\">\u00a0<\/span><\/p>\n<h3><span data-contrast=\"auto\"><span>Pale<\/span><span> a<\/span><span>le<\/span><span>: The <\/span><span>b<\/span><span>eer <\/span><span>t<\/span><span>hat <\/span><span>c<\/span><span>hanged <\/span><span>b<\/span><span>eer <\/span><span>f<\/span><span>orever<\/span><\/span><span data-ccp-props=\"{&quot;335559739&quot;:110}\">\u00a0<\/span><\/h3>\n<p><span data-contrast=\"auto\"><span>Before the 18th century, most beers were dark, brewed using malts dried over fire. The invention of pale malt, kilned more gently and cleanly, was a revolution<\/span><span>:<\/span><span> it produced beers that were<\/span><span> bright<\/span><span>er in colour<\/span><span> and visually striking.<\/span><\/span><span data-ccp-props=\"{&quot;335559739&quot;:110}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"auto\"><span>One town played a starring role: Burton upon Trent. Its sulphate-rich water created crisp, clear, hop-forward beers that quickly became famous. Burton pale ales were highly prized and fetched premium prices.<\/span><\/span><span data-ccp-props=\"{&quot;335559739&quot;:110}\">\u00a0<\/span><\/p>\n<p><span data-ccp-props=\"{&quot;335559739&quot;:110}\"><img decoding=\"async\" id=\"__mcenew\" src=\"https:\/\/www.wsetglobal.com\/media\/17994\/1086x672-burton-trent.png\" alt=\"\" data-id=\"207573\"\/><\/span><\/p>\n<p><span class=\"caption\" data-ccp-props=\"{&quot;335559739&quot;:110}\">The Ferry bridge over the river Trent in Burton upon Trent.<\/span><\/p>\n<p><span data-contrast=\"auto\"><span>Pale ale also became one of Britain\u2019s most influential exports.<\/span><\/span><span><span data-contrast=\"auto\"><span> E<\/span><\/span><\/span><span data-contrast=\"none\"><span>xtra hops and <\/span><span>boosted alcohol levels<\/span><span> he<\/span><span>lped the beer to survive months-long overseas journeys to British colonies in India<\/span><span>, eventually giving rise to the<\/span><span> India <\/span><span>p<\/span><\/span><span><span data-contrast=\"none\"><span>ale <\/span><\/span><\/span><span data-contrast=\"none\"><span>a<\/span><\/span><span><span data-contrast=\"none\"><span>le<\/span><\/span><\/span><span data-contrast=\"none\"><span> (IPA).<\/span><\/span><span data-ccp-props=\"{&quot;335559739&quot;:110}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"auto\"><span>But pale ale <\/span><span>wasn\u2019t<\/span><span> always in ascendancy. As<\/span><span> Annabel<\/span><span> explains,<\/span><\/span><span data-ccp-props=\"{&quot;335559739&quot;:110}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"auto\"><span>\u201cBy the 1950s and 60s, pale ales lost market share to lighter, cheaper beers coming in from the continent<\/span><span>.<\/span> <span>T<\/span><span>he<\/span><span>se<\/span><span> were easier to look after and had a longer shelf life.\u201d<\/span><\/span><span data-ccp-props=\"{&quot;335559739&quot;:110}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"auto\"><span>All <\/span><span>wasn\u2019t<\/span><span> lost though. In the <\/span><span>late 20<\/span><\/span><span data-contrast=\"auto\"><span data-fontsize=\"10\">th<\/span><\/span><span data-contrast=\"auto\"><span> century, pale ales made a comeback&#8230; across the pond.<\/span><span> American homebrewers and craft brewers<\/span><span> put their own spin on the British classic by incorporating<\/span><span> American hops, instead of the <\/span><span>traditional <\/span><span>Briti<\/span><span>sh hops that would have been used back home. This <\/span><span>is why <\/span><span>tod<\/span><span>ay\u2019s pale ales and IPAs<\/span><span> are known for their <\/span><span>citrus and<\/span><span> pine character. <\/span><\/span><span data-ccp-props=\"{&quot;134233117&quot;:false,&quot;134233118&quot;:false,&quot;201341983&quot;:0,&quot;335551550&quot;:1,&quot;335551620&quot;:1,&quot;335559685&quot;:0,&quot;335559737&quot;:0,&quot;335559738&quot;:0,&quot;335559739&quot;:110,&quot;335559740&quot;:259}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"auto\"><span>Although it was the pale malt that initially made the pale ale style stand out, these days<\/span> <span>it\u2019s<\/span><span> all about <\/span><span>the<\/span> <span>(American) <\/span><span>hops<\/span><span>!<\/span><\/span><span data-ccp-props=\"{&quot;134233117&quot;:false,&quot;134233118&quot;:false,&quot;201341983&quot;:0,&quot;335551550&quot;:1,&quot;335551620&quot;:1,&quot;335559685&quot;:0,&quot;335559737&quot;:0,&quot;335559738&quot;:0,&quot;335559739&quot;:110,&quot;335559740&quot;:259}\">\u00a0<\/span><\/p>\n<h3>Mild: The quiet classic<\/h3>\n<p>If stout is the bold espresso and pale ale the pioneering innovator, mild is the comforting cup of tea: smooth and malty.<\/p>\n<p>Originally, \u201cmild\u201d simply referred to a young beer that was not aged or heavily hopped and was available in a range of alcoholic strengths. This made it affordable, approachable and incredibly popular during the Industrial Revolution, when factory workers wanted a pint with lower alcohol and bitterness after long shifts.<\/p>\n<p>\u201cMild suited factory owners perfectly,\u201d Annabel notes, \u201cbecause workers could drink large quantities without turning up to work still inebriated.\u201d<\/p>\n<p>By the early 20th century, mild dominated the market, accounting for more than three-quarters of all beer brewed in Britain. But post-war rationing and changing tastes saw its strength fall, and by the 1960s mild was unfairly dismissed as \u201cwishy-washy\u201d or old-fashioned.<\/p>\n<p>Today, mild is finding new fans. With growing demand for lower-alcohol but flavour-rich options, drinkers are rediscovering the style\u2019s soft maltiness and gentle sweetness. Campaigns like \u201cMild May\u201d have helped pubs reintroduce it to curious drinkers.<\/p>\n<h3>The cask connection<\/h3>\n<p>What unites stout, pale ale and mild isn\u2019t just their heritage &#8211; it\u2019s how they were traditionally served: from the cask.<\/p>\n<p><img decoding=\"async\" id=\"__mcenew\" src=\"https:\/\/www.wsetglobal.com\/media\/17995\/1086x672-beer-cask.png\" alt=\"\" data-id=\"207574\"\/><\/p>\n<p><span class=\"caption\">Beer being served from a cask at a festival.<\/span><\/p>\n<p>Cask-conditioned beer (or \u201creal ale\u201d) is unfiltered, unpasteurised and still alive with yeast. It undergoes a final fermentation in the pub cellar, leading to natural carbonation and incredible flavour nuance. Annabel describes it perfectly:<\/p>\n<p>\u201cCask beer is like a meal kit: all the components are there, but you have to apply time, temperature and skill to finish it.\u201d<\/p>\n<p>Cask beer must be kept at 11\u201313\u00b0C, allowed to settle, and sold within days. This makes it labour-intensive to manage, and in the late 20th century many pubs moved to easier, more stable keg beers.<\/p>\n<p>Its survival owes much to CAMRA (the Campaign for Real Ale), whose grassroots activism helped preserve cask culture and protect countless traditional styles from disappearing.<\/p>\n<h3>Learning from the beers that built Britain<\/h3>\n<p>Stout, pale ale and mild aren\u2019t just historic curiosities: they remain essential reference points for today\u2019s beer professionals, enthusiasts and learners.
