Smoky from the grill, slightly tangy from the vinegar and citrus, and a touch of sweetness that ties it all together.\u00a0<\/p>\n<p>These chicken quarters are much different that my traditional <a href=\"https:\/\/www.grillseeker.com\/how-to-grill-chicken-quarters\/\" target=\"_blank\" rel=\"noreferrer noopener\">grilled chicken quarters<\/a>, which I love. They\u2019re a completely different flavor profile.<\/p>\n<p>I first tried Chicken Inasal while in the Philippines during my time in the Marine Corps. It\u2019s just enough time for all those big flavors: the lemongrass, garlic, ginger, and citrus to work their way into the meat without taking over.\u00a0<\/p>\n<p>It\u2019s one of those \u201cget it in the marinade in the morning, grill it for dinner\u201d kind of recipes, and the results are perfectly balanced every time.<\/p>\n<h2 class=\"wp-block-heading\" id=\"h-what-vinegar-is-best-for-chicken-inasal\">What Vinegar Is Best for Chicken Inasal?<\/h2>\n<p>Traditionally, Chicken Inasal is made with either coconut vinegar or cane vinegar, both of which are pretty common in the Philippines.
