It is to be attuned\u00a0<a href=\"https:\/\/doi.org\/10.4324\/9781003135449\">to cycles that are not linear but layered, not fixed but flowing<\/a>. This photo essay explores how traditions of olive oil are cultivated through\u00a0flow\u2014not merely as movement, but as a lived and situated condition in which people, plants, and practices are entangled across generations.<\/p>\n<p>Flow was the central concept in my doctoral thesis, developed through long-term fieldwork with olive culturalists in southern Puglia, Italy. I used it to understand how olive oil is not only made but\u00a0<a href=\"https:\/\/www.politybooks.com\/bookdetail\/?isbn=9781509544103\">occurs<\/a>, as the emergent outcome of multigenerational practices of\u00a0<a href=\"https:\/\/anthrosource.onlinelibrary.wiley.com\/doi\/10.1002\/sea2.12248\">living landscape.<\/a>\u00a0Flow, as I use it, refers to\u00a0<a href=\"https:\/\/www.academia.edu\/9380249\/Reclaiming_flow_for_a_lively_anthropology\">conditions<\/a>\u00a0that structure possibility: an ecology of movement shaped by material, temporal, and affective dynamics. In Pugliese olive culture, flow describes how plants grow and oils become made, but also how bodies move and landscapes shift, as traditions of\u00a0<em>olivicoltura<\/em><strong><em>\u00a0<\/em><\/strong>are lived through everyday practice and\u00a0<a href=\"https:\/\/doi.org\/10.1017\/9781108867450\">deep time ecologies<\/a>\u00a0of care.<\/p>\n<p>Flow is not automatic but cultivated through sensory work, embodied knowledge, and seasonal attentiveness. In early spring, for instance,\u00a0<em>la potatura<\/em>\u00a0(pruning) begins. This is not merely maintenance; it is making trees and growing oil, a concept adapted from\u00a0<a href=\"https:\/\/doi.org\/10.4324\/9781315593258\">Stephanie Bunn,<\/a>\u00a0who explores blurred boundaries between growing and making, and how humans and nonhumans co-shape form and meaning. In Puglia, pruning is a form of co-creation. Practitioners understand the\u00a0<em>ordine<\/em>\u2014the growth zones of the trees\u2014and cut to enhance future fruiting. As Giorgio, an agronomist and first-level taster, told me while sketching pruning principles in my notebook: \u201c<em>Non ce ne sono olive buone senza di cura e coltivazione dell\u2019umano<\/em>\u201d (There are no good olives without human care and cultivation). Yet <a href=\"https:\/\/www.upress.umn.edu\/9781517900656\/matters-of-care\/\">care is not control<\/a>, but a practiced sensitivity to how olive plants behave over time.<\/p>\n<p>Olive oil flows from these plant\u2013human collaborations. In autumn, harvest begins. Olives are collected using various techniques\u2014combing, shaking, hitting\u2014each chosen according to oil makers\u2019 preferences and desired quality. The resulting oil is a condensation of atmospheres, intentions, and rhythms. Whether made through the\u00a0<a href=\"https:\/\/su.diva-portal.org\/smash\/record.jsf?pid=diva2%3A1890707&amp;dswid=-3169\"><em>tecnica tradizionale<\/em> with stone wheels or through the streamlined\u00a0<em>metodo moderno<\/em><\/a>, the process is deeply crafted, situated in a landscape of cultivated flows.<\/p>\n<div class=\"uk-grid uk-grid-collapse uk-position-relative article-image-container\" uk-grid=\"\">\n<p>\n\t\t\t\t\t<span class=\"image-desc uk-text-right\"><br \/>\n\t\t\t\t\t\tA worker trims pruned olive branches on the ground amid centuries-old olive trees under a dramatic cloudy sky in southern Italy. Pruning is both care and creation: an act of making the plant growing tree and crafting oil.\t\t\t\t\t\t<\/p>\n<\/p><\/div>\n<\/p><\/div>\n<\/p><\/div>\n<\/p><\/div>\n<p>Flow, however, is not always smooth or life-giving. The outbreak of\u00a0<em>Xylella fastidiosa<\/em>, a vector-transmitted bacterium that disrupts the vascular systems of olive trees, set off a destructive flow that stall or reroute many others. Farmers graft resistant cultivars onto old rootstock, experiment with planting densities, and forge connections across agricultural and scientific networks.\u00a0<a href=\"https:\/\/su.diva-portal.org\/smash\/record.jsf?pid=diva2%3A1890707&amp;dswid=7689\">This too is flow\u2014disrupted, rechanneled, but ongoing<\/a>. The spread of\u00a0<em>Xylella<\/em>, and the human and nonhuman responses it elicits, are shaped in frictions between old and new cultivars, between science and situated knowledge, between grieving loss and experimenting with continuity. Drawing on\u00a0<a href=\"https:\/\/esajournals.onlinelibrary.wiley.com\/doi\/abs\/10.1890\/1051-0761%282000%29010%5B1327%3AKEIPOT%5D2.0.CO%3B2\">Enrique Salm\u00f3n<\/a>, I use the notion of\u00a0<em>kincentric ecology<\/em>\u00a0to describe how growers in Puglia live among olive trees not as resources but as relatives. These relationships are rhythmic,\u00a0<a href=\"https:\/\/doi.org\/10.4324\/9781315581613\">atmospheric<\/a>, and attuned to\u00a0<a href=\"https:\/\/www.upress.umn.edu\/9781517900656\/matters-of-care\/\">weather, soil, light, and memory<\/a>.
