Peanut Butter Cup Turkey Cookies<\/b><\/h2>\n
\n These cute little turkeys have a triple-shot of peanut butter: the cookie,
\n the peanut butter cup, and a peanut butter buttercream.\u00a0 They might
\n even make the real turkey jealous!\u00a0\n <\/p>\n
Yield: 30 cookies<\/p>\n
Bake time: 13 minutes<\/p>\n
Prep Time: 45 minutes<\/p>\n
For the cookies:<\/p>\n
3 cups unbleached, all-purpose flour<\/p>\n
2 teaspoons baking soda<\/p>\n
\u00bd teaspoon kosher salt<\/p>\n
\u00be cup shortening<\/p>\n
\u00bc cup unsalted butter<\/p>\n
1 cup granulated sugar<\/p>\n
1 cup lightly packed light brown sugar<\/p>\n
2 eggs<\/p>\n
2 teaspoons vanilla extract<\/p>\n
1 cup smooth peanut butter<\/p>\n
\u00a0<\/p>\n
For the frosting:<\/p>\n
\n 1 1\/2 cups salted butter, shortening, or a combination (recommend 1 cup
\n butter and 1\/2 cup shortening)\n <\/p>\n
1 teaspoon vanilla extract<\/p>\n
2 pounds powdered sugar, sifted<\/p>\n
6-8 tablespoons milk<\/p>\n
4 TBSP smooth peanut butter<\/p>\n
Red, Orange, and Yellow food colorings (gel paste preferred)<\/p>\n
For the assembly:<\/p>\n
\u00bd cup chocolate chips<\/p>\n
30 Reese\u2019s Peanut Butter Cups<\/p>\n
White chocolate chips<\/p>\n
Bake the cookies:<\/p>\n
\n Preheat oven to 350.\u00a0 Line cookie sheets with parchment paper.\n <\/p>\n
\n In a medium bowl, whisk the flour, baking soda, and salt together.\u00a0
\n Set aside.\n <\/p>\n
\n In a large bowl of an electric mixer, cream the shortening, butter, and
\n sugars together until light and fluffy.\u00a0 Beat in the eggs and vanilla
\n until combined.\u00a0 Add in the peanut butter and mix until smooth.\n <\/p>\n
Stir in the flour mixture.<\/p>\n
\n Scoop the dough with a 2-tablespoon cookie scoop onto the prepared
\n sheets.\u00a0 Flatten slightly with the bottom of a glass. (Dip the bottom
\n of the glass in flour if the dough is sticking.)\n <\/p>\n
\n Bake for 13 minutes, or until the cookies are golden and baked
\n through.\u00a0 Let them rest on the cookie sheet for 2 minutes, then
\n remove to a wire rack to cool completely.\u00a0 The cookies will look
\n poofy out of the oven, and deflate as they cool.\n <\/p>\n
Make the buttercream:<\/p>\n
\n Cream the butter\/shortening until completely smooth. Beat in the vanilla
\n extract. (If using all shortening, add 1\/4 teaspoon fine sea or kosher
\n salt.)\n <\/p>\n
\n On low speed, add in the sifted sugar, about 1 cup at a time, alternating
\n with 1 tablespoon of milk. Stop frequently to scrape down the sides and
\n bottom of the bowl. After the last addition of the sugar, evaluate the
\n consistency of the frosting before adding more milk. Beat for two more
\n minutes, on a medium-high speed.\n <\/p>\n
\n The frosting should be thick and not fall off of a spatula unless tapped
\n on the side of the bowl. Adjust consistency by adding more milk or
\n powdered sugar as needed.\n <\/p>\n
Add the peanut butter at the end and beat until incorporated.<\/p>\n
Divided into three bowls and color red, orange, and yellow.<\/p>\n
Assembly:<\/p>\n
\n Melt the chocolate chips and place in a piping bag.\u00a0 Snip off the
\n end.\u00a0\n <\/p>\n
\n Apply the melted chocolate to the top of the peanut butter cup, and place
\n face down onto the cookie (so that the bottom of the cup is face up).\n <\/p>\n
\n Press 2 white chocolate chips into each peanut butter cup for the
\n eyes.\u00a0 Use the melted chocolate to add pupils.\n <\/p>\n
\n Fit three piping bags with star tips, and fill with the red, orange and
\n yellow buttercream.\u00a0 Starting with the yellow, closest to the peanut
\n butter cup, pipe \u201cfeathers.\u201d\u00a0 Add a row of orange and a row of red.\n <\/p>\n
\n Switch the tips on the red and orange frosting to #2 tips.\u00a0 Add the
\n feet with orange frosting and smiles in the red.\u00a0\n <\/p>\n
\n [Note: To make only a dozen turkeys, make a \u00bd\u00a0 batch of buttercream
\n (adding 2TBSP peanut butter), use 12 peanut butter cups, and you\u2019ll have
