But only Baltimore is known for its highway food.<\/span><\/span><\/span><\/p>\n<\/div>\n<div data-breakout=\"normal\">\n<p class=\"IFLJx f1-1G KVAVd sDlj2\" dir=\"auto\" id=\"viewer-6w2st603\"><span class=\"GnvzP\"><span style=\"color:rgb(0, 0, 0);background-color:transparent;text-decoration:inherit\"><span>The Pulaski Highway, to be exact. Since the early 1970s, this 35-mile stretch from \u201cEast Bawlmor\u201d to Abingdon has been Maryland\u2019s open-air food court \u2014 a smoky corridor of roadside shacks carving up <\/span><\/span><em style=\"font-style:italic\"><span style=\"color:rgb(0, 0, 0);background-color:transparent;text-decoration:inherit\"><span>Pit Beef sandwiches<\/span><\/span><\/em><span style=\"color:rgb(0, 0, 0);background-color:transparent;text-decoration:inherit\"><span>. Thinly shaved roast beef, seared over charcoal embers until blackened at the edges and blush-pink within, piled high on a Kaiser roll, buried under raw onions, and baptized with tiger sauce \u2014 a sharp, creamy blessing of horseradish and mayo. Pit Beef doesn\u2019t drip red like a <\/span><a target=\"_blank\" href=\"https:\/\/www.foodigenous.com\/post\/a-boston-three-way\" rel=\"noopener noreferrer\" class=\"Y2xcL uFqDN\" data-hook=\"web-link\"><strong style=\"font-weight:700\"><u style=\"text-decoration:underline\"><span>North Shore three-way<\/span><\/u><\/strong><\/a><span> slathered in James River sauce and cheese. It doesn\u2019t carry the salty caraway crust of Buffalo\u2019s <\/span><a target=\"_blank\" href=\"https:\/\/www.foodigenous.com\/post\/hot-wet-beef\" rel=\"noopener noreferrer\" class=\"Y2xcL uFqDN\" data-hook=\"web-link\"><strong style=\"font-weight:700\"><u style=\"text-decoration:underline\"><span>Beef on Weck,<\/span><\/u><\/strong><\/a><span> and there\u2019s no ceremonious double-dipping in au jus like its Brooklyn or Los Angeles cousins. Pit Beef skips the pomp and circumstance \u2014 no melted mutz, no crazy acronyms, no curly fries on the side (though Arby\u2019s fries rock). Just beef, fire, asphalt \u2014 and onion. Since the 1970s, drivers have been pulling over for foil-wrapped beef sandwiches from a rotating crop of seasonal pop-up trailers. The plywood hut eventually gave way to a modern brick-and-mortar restaurant, and the menu grew to include corned beef, turkey, sausage, and every imaginable combo of the three \u2014 <\/span><strong style=\"font-weight:700\"><span>Charm City\u2019s non-barbecue barbecue.<\/span><\/strong><\/span><\/p>\n<\/div>\n<div data-breakout=\"normal\">\n<p class=\"IFLJx f1-1G KVAVd sDlj2\" dir=\"auto\" id=\"viewer-kucix1587\"><span class=\"GnvzP\"><span>Then there\u2019s <\/span><a target=\"_blank\" href=\"https:\/\/charcoalstyle.com\/\" rel=\"noopener noreferrer\" class=\"Y2xcL uFqDN\" data-hook=\"web-link\"><strong style=\"font-weight:700\"><u style=\"text-decoration:underline\"><span>Charcoal Style<\/span><\/u><\/strong><\/a><span>, a stand in White Marsh owned by Nik Courtalis, who, like me, entered the culinary world as a busboy at fourteen. Nik took over Charcoal Style at twenty-one and has carried the torch ever since, serving pit ham every bit as good as the beef \u2014 with a bbq sauce that bites back just a little harder.<\/span><\/span><\/p>\n<\/div>\n<p><h2 class=\"bk4bG b3yOZ KVAVd sDlj2\" dir=\"auto\" id=\"viewer-6otfp2970\"><span class=\"Tcz9z\"><span>Plug Into the GPS<\/span><\/span><\/h2>\n<\/p>\n<div data-breakout=\"normal\">\n<p class=\"IFLJx f1-1G KVAVd sDlj2\" dir=\"auto\" id=\"viewer-ykydc3468\"><span class=\"GnvzP\"><span>Though seafood rightfully dominates Maryland\u2019s culinary landscape, Pit Beef remains a cherished exception \u2014 a smoky, blue-collar classic enjoyed throughout the state.
