It\u2019s Black Forest Cake season, yayyy! Hello summer, hello cherry<\/a><\/strong> season<\/em> & hello delicious eggless black forest cake trifle! I love the way the flavours came together \u2013 a one bowl eggless chocolate cake<\/a><\/strong>, silky smooth almond cream, quickest stove top cherry<\/a> <\/strong>pie filling and finally a luscious ganache to tie it all in! Each element in this eggess trifle<\/a><\/strong> is one I use often in different desserts<\/a><\/strong> at different times; just what I love about simple desserts<\/a><\/strong> like these! <\/em><\/p>\n

\"Indian\"Indian<\/figure>\n

The stone fruit<\/a><\/strong> season is probably my next most favourite fruit in season after mangoes, and it\u2019s not difficult to see why. Come summer and the plains of North India are flooded by the most luscious stone fruit<\/a><\/strong> from the hills. We are quite fortunate to get the juiciest local cherries<\/a><\/strong>, peaches<\/a><\/strong>, apricots<\/a><\/strong>, nectarines too sometimes if we\u2019re lucky. Stone fruit<\/a><\/strong> are packed with health benefits<\/a><\/strong>, and we\u2019re not complaining!<\/p>\n

\"Quick\"Quick<\/figure>\n

It\u2019s that time of the year when a fruit diet<\/a><\/strong> makes a lot of sense as you tick off the iron<\/em> and fibre<\/em> boxes, and the \u2018how can this be so delicious<\/em>\u2018 box too!! We\u2019re quite spoilt for choice<\/a><\/strong> with some of the most tempting stone fruit<\/a><\/strong> crammed into a clutch of summer months. Thankfully mangoes appear a little early, so once we really enjoy that load of fresh mangoes, it\u2019s often time to dive into stone fruit<\/a><\/strong>!<\/p>\n

Some of our favourite ways to enjoy stone fruit<\/a><\/strong> is crumbles<\/a><\/strong> where often you can have dessert for breakfast<\/a><\/strong> or breakfast for dessert<\/a><\/strong>, something that works brilliantly. A breakfast crumble<\/a> <\/strong>might be the most enjoyable way to begin the day, while a generous scoop of vanilla ice cream on a serving of crumble<\/a><\/strong> a great way to end it. You get the drift\u2026<\/em><\/p>\n

Crumbles<\/a><\/strong> apart, a dessert said to owe its origins to Germany<\/em>, that has been very popular in India ever since I can remember is the Black Forest Cake or gateau<\/a><\/strong> or the BFC<\/em><\/strong>. Every little local corner bakery in Delhi would sell a BFC when we were kids, the popular choice next only to a pineapple cream cake. I can\u2019t remember if we had any other choices but in the golden or rather good old days<\/em>, we were perfectly happy with 2 choices, happier still to dig into a light as a cloud Black Forest Cake<\/a><\/strong>!<\/p>\n

Back then, the bakery bought cake and cream were always light and airy with the quintessential layers. A whipped cream<\/em> from a local dairy<\/em>, sweetened cherries always from a can, the sponge barely chocolate<\/em> in taste, yet the cake<\/a><\/strong> was a treat. It\u2019s no wonder that you\u2019ll see so many versions of the eggless black forest cake here on the blog<\/strong>, a nostalgia of sorts to hang on to the years that went by. The jelly<\/a><\/strong> cake below is one of our favourite cakes inspired by a few BFC ingredients. The Eggless Chocolate Cherry Jelly Cake<\/a><\/strong>, though not quite a black forest cake<\/a><\/strong>, was too delicious.<\/p>\n

    • 50<\/span> g<\/span> castor sugar<\/span><\/li>\n
    • 1\/4<\/span> tsp<\/span> baking soda<\/span><\/li>\n
    • 1\/2<\/span> tsp<\/span> baking powder<\/span><\/li>\n
    • Pinch<\/span> salt<\/span><\/li>\n
    • 8<\/span> g<\/span> cocoa powder<\/span><\/li>\n
    • 25<\/span> g<\/span> wholewheat flour\/atta<\/span><\/li>\n
    • 50<\/span> g<\/span> all purpose flour<\/span><\/li>\n<\/ul>\n<\/div>\n

      Almond cream<\/h4>\n

      • 150<\/span> g<\/span> cream cheese<\/span> chilled<\/span><\/li>\n
      • Few drops almond extract {or vanilla extract}<\/span><\/li>\n
      • 2<\/span> tbsp<\/span> icing sugar<\/span><\/li>\n
      • 50<\/span> g<\/span> whipping cream<\/span> chilled<\/span><\/li>\n<\/ul>\n<\/div>\n

        Chocolate ganache<\/h4>\n
          \n
        • 50<\/span> g<\/span> cream<\/span> 25% fat<\/span><\/li>\n
        • 40<\/span> g<\/span> 55% couverture chocolate<\/span><\/li>\n<\/ul>\n<\/div>\n
          \n

          Cherry pie filling<\/h4>\n
            \n
          • 250<\/span> g<\/span> cherries<\/span> pitted<\/span><\/li>\n
          • 1<\/span> tbsp<\/span> cornflour<\/span><\/li>\n
          • 1<\/span> tbsp<\/span> water<\/span><\/li>\n
          • 50<\/span> g<\/span> sugar<\/span><\/li>\n
          • Juice of 1 lime<\/span><\/li>\n
          • 25<\/span> ml<\/span> Kirsch {cherry brandy} or simple sugar syrup for moistening<\/span><\/li>\n<\/ul>\n<\/div>\n

            To finish<\/h4>\n

            • Fresh cherries, edible flowers, fresh mint<\/span><\/li>\n
            • 1<\/span> tsp<\/span> cocoa powder<\/span><\/li>\n<\/ul>\n<\/div>\n<\/div>\n

              Eggless chocolate sponge<\/h4>\n

              • \n

                Preheat the oven to 180C.<\/p>\n<\/li>\n

              • \n

                Line the base of two 4\u2033 square baking \/ steel dessert tins with foil and the sides with parchment.<\/span><\/p>\n<\/li>\n

              • \n

                In a large bowl, add all the ingredients and give them a good whisk with an electric hand mixer.<\/span><\/p>\n<\/li>\n

              • \n

                Divide the batter between the tins, about 130g batter per tin. Bake for 18-20 minutes, until the tester comes out clean. Cool completely, then trim the tops.<\/p>\n<\/li>\n<\/ul>\n<\/div>\n

                Almond cream<\/h4>\n
                  \n

                  In a small bowl, whip the cream cheese, almond extract and icing sugar until smooth. Reserve.<\/p>\n<\/li>\n

                • \n

                  In a large bowl, whip the whipping cream to firm peaks, then add in the whipped cream cheese and beat until smooth. Transfer to a piping bag with a 2A nozzle fitted.<\/p>\n<\/li>\n<\/ul>\n<\/div>\n

                  Cherry pie filling<\/h4>\n

                    Whisk everything together in a heavy bottom pan and gently simmer for about 5 minutes until thick and glossy, the cherries still holding shape. Strain the cherries out and reserve in a bowl. Reduce the liquid until thick, then stir it back into the reserved cherries. Cool.<\/p>\n<\/li>\n<\/ul>\n<\/div>\n

                    Assemble<\/h4>\n

                      Layer 1 \u2013 Line the base of a 4\u2033 dessert bowl with a layer of cake. Moisten with Kirsch.<\/p>\n<\/li>\n

                    • \n

                      Layer 2 \u2013 Pipe over a layer of almond cream.<\/p>\n<\/li>\n

                    • \n

                      Layer 3 \u2013 Top the cream with the cherry pie filling {you might not need all the cherry liquid}.<\/p>\n<\/li>\n

                    • \n

                      Layer 4 \u2013 Pour over a layer of ganache.<\/p>\n<\/li>\n

                    • \n

                      Layer 5 \u2013 Place the second layer of chocolate sponge over the ganache and moisten it with Kirsch.<\/p>\n<\/li>\n

                    • \n

                      Layer 6 \u2013 Pipe over a layer of almond cream.<\/p>\n<\/li>\n

                    • \n

                      Dust the top with cocoa powder and garnish with fresh cherries, mint, edible flowers etc.<\/p>\n<\/li>\n<\/ul>\n<\/div>\n<\/div>\n
