So take it away Nadine\u2026.<\/p>\n<p><strong>BBQ SET UP<\/strong><\/p>\n<p>A kettle type grill is perfect for this. If you don\u2019t have one, swap chicken for prawns and grill on an open grill \u2013 I did say this was a versatile marinade!<\/p>\n<p><strong>FUEL SET UP\u00a0<\/strong><\/p>\n<p>For this cook I used <a href=\"https:\/\/firebrandbbq.com.au\/product-category\/fuel\/lump-charcoal\/\">Firebrand Professional Hardwood Lump,<\/a> being single source the consistency of the fuel is always reliable. I love using a <a href=\"https:\/\/firebrandbbq.com.au\/product\/stainless_steel-fire-it-up-charcoal-starter\/\">chimney charcoal starter<\/a> As I only need enough for one basket to the one side of the grill, I used a half full Firebrand Chimney.\u00a0<\/p>\n<div class=\"video video-fit mb\" style=\"padding-top:56.25%;\">\n<p><iframe loading=\"lazy\" title=\"Firebrand BBQ - Lighting lump charcoal\" width=\"840\" height=\"473\" src=\"https:\/\/www.youtube.com\/embed\/NcBz-1Uaxag?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" referrerpolicy=\"strict-origin-when-cross-origin\" allowfullscreen><\/iframe><\/p>\n<\/div>\n<p><strong>THE RECIPE\u00a0<\/strong><\/p>\n<p>As this is a marinade, you can be flexible with the ingredients to suit your tastes, if you find you have made too much, it will keep for a short time so you can marinade other proteins or use it as a dipping sauce:<\/p>\n<ul>\n<li>4 chicken thighs with skin on and bone in<\/li>\n<li>\u00bc cup soy sauce<\/li>\n<li>\u00bc cup fish sauce<\/li>\n<li>\u00bc cup palm sugar<\/li>\n<li>1 tbsp minced ginger<\/li>\n<li>2 tsp sambel olek<\/li>\n<li>Juice and zest from one lime<\/li>\n<li>3 cloves of minced garlic<\/li>\n<li>2 tbsp finely chopped coriander<\/li>\n<li>2 tbsp grapeseed or other neutral oil<\/li>\n<\/ul>\n<p><strong>METHOD\u00a0<\/strong><\/p>\n<p>Mix all the ingredients and add to the chicken to marinate for at least 30 minutes and up to 4 hours, this gives you time to prepare your grill.<\/p>\n<p>Place the marinated chicken on the cool side of your grill (indirect) with the lid on until the internal temperature of the chicken reaches around 75\u2070c (around 30 minutes or so), I like to baste with more marinade as I go.
