Set aside to cool to lukewarm.\u00a0<\/p>\n<p><i>Make a sponge:\u00a0<\/i><\/p>\n<p>Activate the yeast in the \u00bc cup lukewarm water with just a pinch of sugar.  Let stand until foamy, around 5 minutes or so.\u00a0 Stir the yeast into the cooled oats.\u00a0 Add the spoonful of starter, the remaining sugar, and \u00bd cup of flour.\u00a0 Stir to thoroughly mix, then cover and let rise in a warm place until bubbly.  <\/p>\n<p><i>Making the dough:<br \/><\/i><br \/>Add the salt and the rest of the flours, mixing well.  Knead until the dough is nicely elastic. <i> (Although the dough had a reputation for being sticky, mine was a nicely firm dough.\u00a0 I decided to add two more tbsp water and work it in until the dough was slightly tacky.)<\/i><\/p>\n<p>Once the dough has been developed,\u00a0cover and let rise until double. This should take about an hour depending on the temperature in the kitchen.<\/p>\n<p>Divide the dough into 8 equal parts.\u00a0 <i>(I had 8 buns around 97g each.)<\/i>\u00a0 Shape the dough into balls and place on a parchment lined baking sheet to rest for a few minutes.\u00a0 Press the balls down to flatten slightly.\u00a0 Cover the buns with plastic or a damp towel and leave to rise until noticeably puffy, about 45 minutes to an hour.<\/p>\n<div class=\"separator\" style=\"clear: both; text-align: center;\"><a width=\"320\"\/><\/a><\/div>\n<p>Preheat the oven to 375\u00ba F.\u00a0 Bake the buns for about 15-18 minutes, or until golden.\u00a0 Brush tops with melted butter if desired.\u00a0 Cool on racks
