The main difference is that, while tequila is made from only one agave plant, mezcal (pronounced \u201c<em>mescal<\/em>\u201d, as our Intrepid guide Valentina kept kindly \u2013 but firmly \u2013 reminding me) can be made from one or a combination of over 35 species of agave, so you get a much wider variety of flavours.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/www.intrepidtravel.com\/mexico\" target=\"_blank\" rel=\"noopener\" data-wpil=\"url\"><strong>EXPLORE OUR FULL RANGE OF ADVENTURES IN MEXICO NOW<\/strong><\/a><\/p>\n<p>We set off to El Rey de Matatl\u00e1n, a family-run distillery in Oaxaca that has been producing artisanal mezcal for 60 years. These can weigh up to 150 kilograms.<\/li>\n<li>The pi\u00f1as are collected. It\u2019s pretty common to see trucks going past, filled with people carrying the pi\u00f1as on their heads (did I mention they can weigh up to 150kg?!).<\/li>\n<li>Next, the pi\u00f1as are put into a type of shredder that cuts them into quarters.<\/li>\n<li>Then they\u2019re cooked for 72 hours in stone ovens and put into a grinder.<\/li>\n<li>Finally, they\u2019re put into wood-fired stills \u2013 this helps give the mezcal its signature smoky flavour. The liquid flows through a coil to get cold, and 30 hours are needed for the entire distillation process. The <em>palanquero<\/em> (ie. whoever\u2019s on duty) needs to stay awake for the entire process, because their job is to separate the different types of alcohol in casks for aging.<\/li>\n<\/ol>\n<p style=\"text-align: center;\"><a href=\"https:\/\/www.intrepidtravel.com\/mexico\/mexico-real-food-adventure-160380\" target=\"_blank\" rel=\"noopener\" data-wpil=\"url\"><strong>PREFER YOUR MEZCAL WITH A SIDE OF MOLE? Suffice to say, we were in the right place for some mezcal tasting.<\/p>\n<p>There were so many bottles, we didn\u2019t really know where to start \u2013 so they generously presented with just about everything they had on their shelves: the award-winners, the <em>jovenes<\/em> (\u2018young ones\u2019), the ones as old as me, bottles even older.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/www.intrepidtravel.com\/adventures\/real-food-adventure-in-mexico\/\" target=\"_blank\" rel=\"noopener\"><strong>RELATED: I THOUGHT I HATED MEXICAN FOOD. THEN I WENT ON A REAL FOOD ADVENTURE THROUGH MEXICO<\/strong><\/a><\/p>\n<p>I had a few unfortunate flashbacks when the fruit slices and salt were laid out, but here in Oaxaca there were some key differences:<\/p>\n<ul>\n<li>Mezcal is traditionally paired with orange slices, not lemon, as it helps to cleanse the palate (necessary for taste tests).<\/li>\n<li>While the worm at the bottom of the bottle is more for show than anything else, worm salt is a traditional part of mezcal culture. \u2018Sal de gusano\u2019 is ground-up salt, pepper and \u2013 you guessed it \u2013 worms or larvae that live inside the agave plant.<\/li>\n<li>The distiller stressed the importance of sipping the samples, not shooting them (perhaps this was where I\u2019d gone wrong in my youth\u2026). As mezcal can consist of a variety of different plants, slowly sipping means you get to appreciate the different flavour notes.<\/li>\n<\/ul>\n<p>I asked if there was anything to satiate my sweet tooth and out came the <em>cremas de mezcal<\/em> \u2013 a little bit like cream liqueurs, but with a higher ABV. The pi\u00f1a colada was a definite highlight, but then I was offered one that was cappuccino-flavoured.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/www.intrepidtravel.com\/adventures\/mexico-photography\/\" target=\"_blank\" rel=\"noopener\"><strong>RELATED: 15 PHOTOS THAT\u2019LL MAKE YOU WANT TO BOOK A TRIP TO MEXICO<\/strong><\/a><\/p>\n<p>\u201cWe call it \u2018the Oaxacan Baileys\u2019,\u201d said the distiller. Enough said, mi amigo.<\/p>\n<p>Of all the samples we tried, that one stuck with me the most. Neither the caffeine nor the spirit overpowered the other, it was a perfect balance of both that didn\u2019t overwhelm you with creaminess. It was silky smooth and slid down the throat.
