Jose Jimenez is a master at the Caja China. His Cuban heritage plays a large part in this.\u00a0 From specific charcoal to seasoning and all kinds of meats including whole chicken, chicken wings, and whole pig. A stand out are his ribs. Season and set inside the smoking and steaming box for three hours. Play a hand of cul de sac wiffle ball or catch with his sons before a practice or a game, take them out then conquer the dinner table with incredible flavor. His three sons love these ribs paired with corn on the cob, black beans, and sweet potato fries!\u00a0<\/p>\n<p><strong>Coach&#8217;s Ribs RECIPE<\/strong><\/p>\n<div>\n<ul>\n<li>Two racks of ribs<\/li>\n<li>Roll of aluminum foil<\/li>\n<li>Brown sugar to coat<\/li>\n<li>Paprika to coat<\/li>\n<li>Salt and pepper<\/li>\n<\/ul>\n<\/div>\n<p>After seasoning with all ingredients, lay in a &#8220;bed&#8221; of foil then place into caja china. Slow cook for three hours. Take out and allow to sit a few minutes before slicing apart.
