They contained a pale<br \/>\nale&#8211;and an experiment. One had been infused with two ounces of Simcoe hops<br \/>\n(pellets), one two ounces of Yakima Chief&#8217;s soon-to-be-released hop<br \/>\nproduct called lupulin powder from Simcoe hops (<a href=\"http:\/\/beervana.blogspot.com\/2017\/01\/lupulin-powder-next-big-thing.html\"><b>backgrounder here<\/b><\/a>). The<br \/>\nnotion is simple (though it took Stan Hieronymus to suggest it): how do<br \/>\nthey differ?\u00a0<\/div>\n<div id=\"yui_3_16_0_ym19_1_1488819447433_3757\">\nI&#8217;ll<br \/>\n be looking for a few things. Does the quality of aroma differ?<br \/>\nBitterness (remember the <a href=\"http:\/\/beervana.blogspot.com\/2017\/03\/the-riddle-of-bitterness.html\"><b>humulinones<\/b><\/a>!)? Intensity? Durability of these<br \/>\nqualities? Diagnostically, the experiment should offer some clues about<br \/>\nhow to use lupulin powder going forward. I will of course report back.\u00a0<\/div>\n<p>\nThat&#8217;s<br \/>\n not really the point of this post, though. The remarkable thing about<br \/>\nboth batches (but especially the lupulin powder), was the way the aromas<br \/>\n exploded out of the carboys. Simcoes are famous for being<br \/>\ngrapefruity-to-piney, but the aroma&#8211;especially with the lupulin<br \/>\npowder&#8211;was intensely fruity. Not like any existing fruit, but a<br \/>\nheretofore undiscovered, I imagine fleshy, tropical fruit that might, to<br \/>\n the most careful of sniffers, suggest hop. But only just. It was mesmerizing; I can&#8217;t<br \/>\nimagine any human being who wouldn&#8217;t be instinctively drawn to it. Even<br \/>\nfrom the inch-wide aperture at the top of the carboy, it was like<br \/>\nincense pouring out.\u00a0<\/p>\n<p>\nThis<br \/>\n is why we like IPAs. This is why IPAs have evolved as they have. One<br \/>\nwhiff of hops like the scent coming from my carboy would make a believer<br \/>\n out of even the most hardened Germanophile. Brewers across the country<br \/>\nhave sampled that aroma and become magnetized (because how could you<br \/>\nnot?), and have then spent their careers trying to infuse the beer we<br \/>\ndrink with something as potent. I&#8217;m not an IPA fanatic, and yet about half the beers I brew are in that general tradition and end up with hops in the carboy so I can experience that wafting succulence. <\/p>\n<div id=\"yui_3_16_0_ym19_1_1488819447433_3775\">\nThis<br \/>\n thrills me in part because the experience is something new under the<br \/>\nsun. Beer dates back at least <a href=\"https:\/\/www.cambridge.org\/core\/services\/aop-cambridge-core\/content\/view\/A1AA4FB20657599F859860D94CCD090E\/S0003598X00047840a.pdf\/div-class-title-the-role-of-cult-and-feasting-in-the-emergence-of-neolithic-communities-new-evidence-from-gobekli-tepe-south-eastern-turkey-div.pdf\"><b>11,000 years<\/b><\/a>, but hops only go back a<br \/>\nthousand. Dry-hopping is not new, but the strains capable of producing<br \/>\nthese aromas are. East Kent Golding is a spectacular hop, an ancient<br \/>\nhop, a hop long used in dry-hopping, but it doesn&#8217;t have the oomph of a<br \/>\nSimcoe (or Citra or Mosaic, etc). American brewers had the dawning<br \/>\nrecognition of the potential of their native hops, and followed them to<br \/>\ntheir natural conclusion. This is the same process that Bavarians<br \/>\nfollowed, using local barley, hops, and their unique fermentation. And<br \/>\nthe British, with their fruity-earthy hops and floor malts, and on and<br \/>\non.\u00a0<\/div>\n<p>\nAs<br \/>\n I scented those Simcoes, I was encountering something Josef Groll,<br \/>\nArthur Guinness, and Anton Dreher never experienced. That scent <i>is<\/i><br \/>\n in some ways undiscovered&#8211;or just-discovered. It is wholly modern and<br \/>\nwholly American. It is irresistible&#8211;even for people like me who revere gueuzes and bitters and sv\u011btl\u00fd le\u017e\u00e1ks.\u00a0 And it&#8217;s why we Americans are as likely to walk away from our IPAs as<br \/>\nMunichers are from their helleses. <\/p>\n<\/div>\n\n","protected":false},"excerpt":{"rendered":"<p>Yesterday afternoon, I tansferred two half-batches of beer to into kegs.
