I used to be able to get kielbasa at Walmart for about $2.50. Less, if I had a coupon. Now its $3.99, which is cheaper than I paid a few weeks back at Hannaford. This recipe is a little different than the kielbasa and corn recipe<\/a> I shared then. This time I used different seasonings and added peas to the mix.<\/p>\n

I\u2019ll take savings where I can. Hannaford is usually more expensive than Walmart, but I like to shop there sometimes because Walmart doesn\u2019t have some of what Hannaford does, like my yogurt. <\/p>\n

I didn\u2019t grocery shop for this week but had the kielbasa in the freezer. I decided I wanted to make it for my workweek meals. Because I didn\u2019t have a lot on hand, I made simple things for the week. <\/p>\n

Frugal cooking includes practices such as using up what you have on hand. Since I didn\u2019t grocery shop, I had to use what was available to make this recipe. All of the ingredients other than the kielbasa were leftovers from previous meal prep days, and the seasonings I always have on hand. <\/p>\n

To save money, I am starting to grow my own herbs again. I do have a rosemary plant started but am using up what I have in the jar before I start using what I\u2019m growing. No need to be wasting food. Food waste is money waste. <\/p>\n

Kielbasa, Corn & Peas<\/p>\n

Serves: 5<\/em>\u00a0(4 if you want bigger servings)<\/p>\n

Ingredients:<\/strong><\/p>\n

(A cast iron skillet was used for this, but you can use a regular one and make this on the stove top.)<\/p>\n

Kielbasa<\/p>\n

1\/2 tsp garlic in oil<\/a><\/p>\n

1\/4 cup frozen corn<\/p>\n

1\/4 cup frozen peas<\/p>\n

sea salt to taste<\/p>\n

pepper to taste<\/p>\n

thyme<\/p>\n

rosemary<\/p>\n

    \n
  1. Put 1\/2 teaspoon of garlic in oil<\/a> in a cast Iron skillet and slide the pan into a 350* oven.<\/li>\n
  2. Allow the garlic to cook while you slice the kielbasa and gather the corn, peas and seasonings.<\/li>\n
  3. Remove the skillet from the oven, placing it on a towel on the sideboard.<\/li>\n
  4. Arrange the kielbasa in the pan, a cut side down.<\/li>\n
  5. Sprinkle seasonings over the top of everything. I don\u2019t measure these, preferring to go by taste. I used half of what I thought I would need at this point. <\/li>\n
  6. Put the skillet back into the oven for 10 to 15 minutes to allow the bottoms of the kielbasa to cook.<\/li>\n
  7. Remove the skillet, again placing it on the towel.<\/li>\n
  8. Turn each kielbasa in the pan.<\/li>\n
  9. Add 1\/4 cup each of frozen corn and peas.<\/li>\n
  10. Sprinkle more of the seasonings over everything. Again, this is done according to taste. Taste test things as you work. <\/li>\n
  11. Place the pan back into the 350* oven and allow to cook another 10 to 15 minutes, or until done.<\/li>\n
  12. Remove from oven. Serve or split into portions for this week\u2019s work meals.<\/li>\n<\/ol>\n

    Notes:<\/strong><\/p>\n

      \n
    • You can use any kind of sausage for this recipe. Go ahead and get the most affordable choice. Wait for sales or use coupons to get better deals. <\/li>\n
    • Stock up when you can get those deals. Kielbasa will last a while in the fridge and can be frozen. <\/li>\n
    • You can also use any seasonings you like. Maybe you like different seasonings than I used. That is fine.<\/li>\n
    • Grow your own herbs to save money. You can keep a pot of each going year-round on a windowsill. Just reseed as needed. Choose organic seeds, heirloom when possible.<\/li>\n<\/ul>\n
