For more information, see my <a href=\"https:\/\/sourdoughbrandon.com\/affiliate-disclosure\/\"> affiliate disclosures<\/a>. <\/i> <\/p>\n<\/div>\n<p class=\"has-drop-cap\">This sweet and tart homemade <strong>Strawberry Rhubarb Jam<\/strong> has a hint of vanilla and is the perfect way to preserve and can the early summer fruit.<\/p>\n<p>I grow rhubarb in my home garden, and the hardy plants produce many stalks of rhubarb. Many find it mysterious to use since it\u2019s generally not consumed raw. However, you can cook it on a stovetop with sweet and juicy strawberries, which happen to be in season at the same time, and the two balance each other perfectly in this ruby red jam.<\/p>\n<p>There\u2019s no pectin in this strawberry rhubarb jam recipe, but since strawberries and rhubarb are both low in pectin, you\u2019ll want to make sure you cook it to its gelling point so Stovetop Jam &amp; Canning Tips<\/h2>\n<p>This recipe calls for two pounds of strawberries and two pounds of rhubarb, which will make about six half-pint jars of jam for canning.<\/p>\n<ul class=\"wp-block-list\">\n<li><strong>Sterilize your jars<\/strong>\n<ul class=\"wp-block-list\">\n<li>Before canning, you should always sanitize and sterilize your canning jars, even if they\u2019re brand new. This prevents bacteria and mold growth so your jams will properly preserve.<\/li>\n<li>Some people use the sanitization setting in a dishwasher, but I personally don\u2019t risk it and boil the empty jars on a rack in my boiling water canner for 10 minutes.<\/li>\n<li>Please read <a href=\"https:\/\/nchfp.uga.edu\/how\/can\/general-information\/recommended-jars-and-lids\/\" target=\"_blank\" rel=\"noopener\" title=\"USDA jar sterilization recommendations\">sterilization recommendations<\/a> for safety and other canning tips.<\/li>\n<\/ul>\n<\/li>\n<li><strong>Use the freezer plate test to make sure the jam sets<\/strong>\n<ul class=\"wp-block-list\">\n<li>There are many ways to test if your jam is set. While temperature can be helpful, it\u2019s not always the best indicator for knowing when your jam is set due to the ripeness of your fruit and how much pectin is in it.<\/li>\n<li>After making lots of jams and using various tests, I think the best way to test if your jam is set is the freezer plate test. Place a small plate in the freezer when you begin cooking your jam and spoon a small amount onto the plate when it\u2019s close to being done. After a minute rest, run a finger through the jam. If it\u2019s done, it will wrinkle and leave a clean trail line.<\/li>\n<li>I have included more photos and tips on the freezer plate test in the recipe guide below.<\/li>\n<\/ul>\n<\/li>\n<li><strong>Wear heat-proof and water-proof gloves<\/strong>\n<ul class=\"wp-block-list\">\n<li>I\u2019ve burned myself making jam more times than I\u2019d like, so I recommend wearing heat-proof and water-proof gloves if you can! They\u2019re really helpful for boiling water baths, hot steam, and for splashing fruit juices.<\/li>\n<\/ul>\n<\/li>\n<li><strong>Adjust for altitude<\/strong>\n<ul class=\"wp-block-list\">\n<li>Like making <a href=\"https:\/\/sourdoughbrandon.com\/my-everyday-sourdough-bread-recipe\/\" title=\"My Everyday Sourdough Bread Recipe\">sourdough bread<\/a> or homemade maple syrup, altitude can affect the cooking process for jams. At higher altitudes, the boiling point of water is lower, so cooking times and exact temperatures can vary from person-to-person. <\/li>\n<li>At sea-level, jam sets at 220\u00baF (104\u00baC) and decreases by 1\u00baF for every 500 feet. I\u2019m at 1,000 ft, so my jam sets at 218\u00baF. <\/li>\n<\/ul>\n<\/li>\n<li><strong>Let jars cool completely<\/strong>\n<ul class=\"wp-block-list\">\n<li>Once the jars are out of the water bath, they need to rest and cool completely to vacuum seal. Moving or shaking the jars before they have cooled can result in them losing their seal. Finish Cooking and Freezer Plate Test<\/h3>\n<p>Continue cooking the jam, stirring often to avoid burning on the bottom, for another 10-15 minutes or until the jam has lava-like bubbles and is thicker.<\/p>\n<p>If you\u2019re using a thermometer at sea level, the jam should read about 218-220\u00baF (104\u00baC). This is the point when you\u2019ll want to start testing if the jam is set (see below).<\/p>\n<p>Once the jam passes the freezer plate test, immediately remove it from the heat.<\/p>\n<h3 class=\"wp-block-heading\" id=\"how-to-use-the-freezer-plate-test-for-jam\">How to Use the Freezer Plate Test for Jam<\/h3>\n<p>While temperature and time can be helpful indicators to know if the jam is close to being set, every batch of fruit cooks slightly differently due to natural pectin qualities, how ripe the fruit is, altitude, and other factors. To be most precise, use the freezer plate test to know if your jam is set properly.<\/p>\n<p>Keep a small plate in the freezer as your jam cooks. Then, spoon a small amount of jam onto the plate and let it rest in the freezer for a minute.<\/p>\n<p>Drag a finger through the middle of the jam. Canning Strawberry Rhubarb Jam (optional)<\/h3>\n<p>Once the jam is set, place a wide-mouth funnel on top of the sterilized canning jars and carefully ladle in the hot jam. <\/p>\n<p>Leave at least \u00bc-inch of room on top, as the jar will expand slightly when it cools. Also, make sure to wipe the edges of your glass jars with a clean towel if there is any drippage or jam around the top of the jars.<\/p>\n<p>Place the canning lids on top and tighten the rings to fingertip tight (not too tight).*<\/p>\n<p>If canning the jam, boil the water in your water bath canner pot again and place the jams onto your canning rack. Slowly lower the rack into the water bath to cover them in at least 1-2 inches of boiling water.<\/p>\n<p>Cover with the lid and boil the half-pint jars for 10 minutes at sea level. Add an additional minute for every 1,000 feet above sea level and more time for larger jars (refer to the <a href=\"https:\/\/nchfp.uga.edu\/how\/make-jam-jelly\/jams-jellies-general-information\/general-information-on-canning-jams-jellies-and-marmalades\/\" target=\"_blank\" rel=\"noopener\" title=\"National Center for Home Food Preservation\">National Center for Home Food Preservation<\/a> or other approved sources).<\/p>\n<p>Lift the hot jars from the boiling water and let them cool completely at room temperature without disturbing them for 24 hours. Within minutes, you should hear the satisfying pop of the canning lids sealing!<\/p>\n<p>When done properly with new lids, I\u2019ve never had issues with jars not sealing properly. However, you should double-check them after 24 hours to ensure the jars are sealed. To check if sealed, press the lid. The lid should not spring up, and it should curve inwards (not bulging).<\/p>\n<p>Finally, be sure to label the jars and date them so you don\u2019t forget what flavor they are or the date you made them!<\/p>\n<div style=\"border: 3px solid #000000; border-radius: 0%; background-color: #eaeaea; \" class=\"ub-styled-box ub-bordered-box wp-block-ub-styled-box\" id=\"ub-styled-box-77d7d68d-5281-4792-a10d-8870d31ed118\">\n<p id=\"ub-styled-box-bordered-content-06d6f324-15a4-489f-a5af-ba490c9faaf4\"><strong>*If you\u2019re not canning the jam:<\/strong> The strawberry rhubarb jam can usually be refrigerated for 2-3 months. However, many keep homemade jams refrigerated for longer with no issues. I\u2019m not a food scientist (consult the USDA!), so you should always discard the jam if you\u2019re unsure if it\u2019s safe, has an off taste, or grows mold.<\/p>\n<\/div>\n<figure If you&#8217;re using a thermometer, it should read about 218-220\u00baF (103-104\u00baC). This is the point when you want to test it to see if it&#8217;s set.<\/span><\/div>\n<p><span class=\"wprm-recipe-instruction-ingredient wprm-recipe-instruction-ingredient-14093-32\" data-separator=\", \" style=\"margin-bottom: 5px;\">3 TBS Lemon Juice, <\/span><span class=\"wprm-recipe-instruction-ingredient wprm-recipe-instruction-ingredient-14093-16\" data-separator=\"\" style=\"margin-bottom: 5px;\">1 Vanilla Bean<\/span><\/p>\n<\/li>\n<li id=\"wprm-recipe-14093-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\"><strong>Test if the Jam is set:<\/strong><\/span><span style=\"display: block;\">To test if the jam is set, spoon a small amount of hot jam onto the frozen plate and let it rest in the freezer for another minute.<\/span><span style=\"display: block;\">Drag a finger through the middle of the jam. The jam is set if it wrinkles slightly and leaves a clear straight line through the middle without filling in. If it&#8217;s still runny, then it needs to cook longer for the natural pectin to set.<\/span><span style=\"display: block;\">Remove from the heat as soon as the jam passes the freezer plate test.<\/span><span style=\"display: block;\">At this point, you can transfer the jam to jars and store in the refrigerator for 2-3 weeks if not canning.<\/span><\/div>\n<\/li>\n<li id=\"wprm-recipe-14093-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\"><strong>Sterilize the Canning Jars:<\/strong><\/span><span style=\"display: block;\">If you haven&#8217;t already sterilized your canning jars, you can do so while the jam cooks.<\/span><span style=\"display: block;\">Boil the glass jars in a large canning pot with a wire rack with at least an inch of water covering the top of the jars for 10 minutes. Carefully empty and remove the jars from the water and set them on a clean towel until the jam is cooked.<\/span><span style=\"display: block;\">Cover the hot water bath with a lid to keep the water warm.<\/span><\/div>\n<\/li>\n<li id=\"wprm-recipe-14093-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\"><strong>Canning Strawberry Rhubarb Jam (optional):<\/strong><\/span><span style=\"display: block;\">When the jam is set, place a wide-mouth funnel on top of the sterilized canning jars and carefully ladle in the hot jam (wear heat-proof gloves!). Leave \u00bc-inch of room on top and wipe the rims if any jam has splattered on them.<\/span><span style=\"display: block;\">Place the canning lids on top and twist on the rings to fingertip tight.*<\/span><span style=\"display: block;\">Boil the water in your water bath canner pot again and place the jams onto your canning rack. Slowly lower the rack into the water bath to cover them in at least 1-2 inches of boiling water.<\/span><span style=\"display: block;\">Cover with the pot lid and boil the jars for 10 minutes.** <\/span><span style=\"display: block;\">Lift the hot jars from the water and let them cool completely at room temperature without disturbing for 24 hours. Within minutes, you should hear the satisfying pop of the canning lids sealing!***<\/span><span style=\"display: block;\">Label and date the jars.
