My biggest tip? <strong>Don\u2019t over-proof<\/strong> once the beignets are cut. Since they\u2019re small, they <strong>only need 20 to 30 minutes for the final rise<\/strong>. As for frying, I don\u2019t think a thermometer is necessary at home. Just heat your oil over medium to medium-low and make sure it stays steady\u2014avoid adjusting the heat unless absolutely necessary. When dropped in the hot oil, they puff up, creating crispy rounded edges and a soft interior.<\/li>\n<li><strong>Beignets are made from enriched dough<\/strong>\u2014the eggs, milk, cream, and butter make the fried treats plush and soft inside.<\/li>\n<li><strong>Deep frying<\/strong> makes the outside crisp of instantly, and creates the signature light interior.<\/li>\n<\/ul>\n<\/li>\n<li>The beignet dough rises quickly because\n<ul>\n<li>This is an enriched dough, and the sugar, eggs, milk, and cream feed the yeast, contributing to a faster rise.<\/li>\n<li>Instant yeast is used, which promotes a fast and even rise.<\/li>\n<li>Additionally, <strong>cooking the beignets in the hot oil creates a dramatic puff.<\/strong><\/li>\n<\/ul>\n<\/li>\n<li>While Caf\u00e9 du Monde, which is most famous among New Orleans cafes, is widely credited with popularizing these light, puffs with their golden, crispy exterior, they actually originated in France in the 17th century. Catherine de Medici\u2019s head chef, Pantanelli, invented choux pastry, a high-moisture dough used to make cream puffs, eclairs, and eventually, beignets. Instant yeast can be put directly into the dry ingredients. Salt can deactivate the yeast, so mix it with flour first.<\/li>\n<li><strong>Substitute:<\/strong> If you only have access to active dry yeast, you can use it, but you will need to use a little more\u2014in this recipe, you would use 2 1\/4 teaspoons of active dry yeast.<\/li>\n<\/ul>\n<h3>Salt<\/h3>\n<ul>\n<li>Salt enhances the flavor in this beignet recipe.<\/li>\n<li>Additionally, salt strengthens the gluten structure.<\/li>\n<\/ul>\n<h3>Lukewarm water<\/h3>\n<ul>\n<li>Lukewarm water activates the yeast.<\/li>\n<li>Using lukewarm (blood temperature) water kickstarts the rise.<\/li>\n<li>To tell whether the water is lukewarm, take a small amount of water and put your finger in it; if it feels close to your body temperature or slightly warmer, then it\u2019s lukewarm water.<\/li>\n<\/ul>\n<h3>Whole milk<\/h3>\n<ul>\n<li>Milk adds moisture to the dough.<\/li>\n<li>Milk enriches the dough, contributing to a tender New Orleans beignet.<\/li>\n<li>The sugars (lactose) in the dough contribute to the browning.<\/li>\n<li>Whole milk is the best choice for this recipe. Both vegetable oil and canola oil are good choices here.<\/li>\n<li>Use fresh oil, as oil easily absorbs flavors and odors.<\/li>\n<\/ul>\n<h3>Powdered sugar<\/h3>\n<h2 id=\"how\">How To Make New Orleans Beignets<\/h2>\n<h3>Make the beignet dough<\/h3>\n<ol>\n<li><strong>Start the dough: <\/strong>In the bowl of a stand mixer fitted with a dough hook, combine the flour, sugar, yeast, and salt.<\/li>\n<li><strong>Combine wet ingredients:<\/strong>\u00a0In a measuring jug or small saucepan, combine the water, milk and cream and warm until lukewarm, either in the microwave or <strong>over a low flame.<\/strong><\/li>\n<li><strong>Add remaining ingredients:<\/strong> Whisk in the eggs, butter and vanilla, then pour this into the flour mixture.<\/li>\n<li><strong>Knead dough:<\/strong> Stir on<strong> low speed<\/strong> until the flour is moistened, and then <strong>increase the speed to medium<\/strong> and knead for <strong>6-8 minutes<\/strong>, until the dough is smooth and slightly sticky. Place this near the stove where you will be frying.<\/li>\n<\/ol>\n<h3>Fry the beignets<\/h3>\n<ol start=\"9\">\n<li><strong>Heat oil: <\/strong>When the dough is almost ready, pour oil about 2-inches deep in a medium-sized heavy bottomed pot and heat over medium heat. Watch carefully until it looks shimmery.<\/li>\n<li><strong>Test heat: <\/strong>Test the oil temperature by placing a small pinch of dough into the oil: if it floats to the top and the oil forms many small bubbles around it, it\u2019s ready. If the dough browns too quickly then your oil is too hot.<\/li>\n<li><strong>Fry beignets: <\/strong>Once the oil is ready, carefully place a few beignets at a time in the oil and fry for <strong>about 2 minutes<\/strong>, until golden. Flip over and fry the other side for <strong>about another minute<\/strong>, or until golden. To use active dry yeast instead, use 1 tablespoon of yeast and proof it in the lukewarm water that is used for this recipe for 10 minutes (or until frothy) before kneading in the rest of the ingredients.<\/li>\n<li><strong>Do not over-proof:<\/strong> Everyone\u2019s kitchen temperature is different. Be careful not to over-proof these on the second rise. They\u2019re done when they double in size.<\/li>\n<li>Fry right: <strong>Use my tips to fry successfully (no thermometer necessary)<\/strong>, even if you\u2019re new to it:\n<ul>\n<li>Fill the pot with 2 inches of oil, so the beignets have enough to float easily.<\/li>\n<li>Test that the oil is hot enough by putting in a small pinch of dough. If it rises to the surface and is surrounded by small bubbles, it\u2019s ready.<\/li>\n<li><strong>Fry only a few beignets at a time<\/strong>. This will allow the oil to stay hot. If you overcrowd the pan, the oil will cool down, and you\u2019ll end up with soggy beignets.<\/li>\n<li>If your oil is not too dirty, you can <strong>strain it through cheesecloth or a fine mesh strainer, store it in a clean container, and use it again<\/strong>.<\/li>\n<li>If the oil is dirty, put cooled oil in a sealable container and dispose of it in the trash. <strong>Do not pour oil down the drain.\u00a0<\/strong><\/li>\n<\/ul>\n<\/li>\n<li>After mixing the dough, you can proof it overnight in the refrigerator. The next day, roll and cut the dough and let proof for <strong>30 minutes<\/strong> before you heat up your oil and fry them up!<\/li>\n<li>Beignets themselves are delicious in part because of their simplicity. If you want to change things up, I suggest two ways:\n<ul>\n<li>Add a dry spice of your choice, \u00bd teaspoon for stronger spices like nutmeg or cardamom, or a full teaspoon of cinnamon or mixed spice.\n<ul>\n<li>You could also replace the vanilla extract with another extract of your choice or even add a touch of espresso powder.<\/li>\n<\/ul>\n<\/li>\n<li>Another way to vary the flavor is to make a dipping sauce. To use active dry yeast instead, use 1 tablespoon of yeast and proof it in the lukewarm water that is used for this recipe for 10 minutes (or until frothy) before kneading in the rest of the ingredients.<\/li>\n<li><strong>Do not over-proof:<\/strong> Everyone\u2019s kitchen temperature is different. Be careful not to over-proof these on the second rise. They&#8217;re done when they double in size.<\/li>\n<li>Fry right: <strong>Use my tips to fry successfully (no thermometer necessary)<\/strong>, even if you&#8217;re new to it:\n<ul>\n<li>Fill the pot with 2 inches of oil, so the beignets have enough to float easily.<\/li>\n<li>Test that the oil is hot enough by putting in a small pinch of dough. If it rises to the surface and is surrounded by small bubbles, it&#8217;s ready.<\/li>\n<li><strong>Fry only a few beignets at a time<\/strong>. This will allow the oil to stay hot. If you overcrowd the pan, the oil will cool down, and you&#8217;ll end up with soggy beignets.<\/li>\n<li>If your oil is not too dirty, you can <strong>strain it through cheesecloth or a fine mesh strainer, store it in a clean container, and use it again<\/strong>.<\/li>\n<li>If the oil is dirty, put cooled oil in a sealable container and dispose of it in the trash. <strong>Do not pour oil down the drain.\u00a0<\/strong><\/li>\n<\/ul>\n<\/li>\n<li>After mixing the dough, you can proof it overnight in the refrigerator. If you want to change things up, I suggest two ways:\n<ul>\n<li>Add a dry spice of your choice, \u00bd teaspoon for stronger spices like nutmeg or cardamom, or a full teaspoon of cinnamon or mixed spice.\n<ul>\n<li>You could also replace the vanilla extract with another extract of your choice or even add a touch of espresso powder.<\/li>\n<\/ul>\n<\/li>\n<li>Another way to vary the flavor is to make a dipping sauce.
