You can also use an active sourdough starter, but I don\u2019t think it will make much of a difference. Once the dough comes together, it goes straight into the fridge, so there\u2019s no extended fermentation time. In fact, I don\u2019t recommend letting these cookies ferment on the counter, as that would develop gluten\u2014and we don\u2019t want that! (Tough cookies, anyone?)<\/p>\n<p class=\"has-background\" style=\"background-color:#fff5df\">As with most of my <a href=\"https:\/\/milkandpop.com\/sourdough-discard-recipes\/\">sourdough discard recipes<\/a>, you\u2019ll need sourdough discard at 100% hydration, meaning it comes from a starter fed with equal parts water and flour. That\u2019s really important! Using a different hydration level could throw off the recipe, adding too much or too little liquid.<\/p>\n<p><strong>Butter.<\/strong> We\u2019re using melted, unsalted butter. If you only have salted butter, that\u2019s fine\u2014just skip the added salt.<\/p>\n<p class=\"has-background\" style=\"background-color:#fff5df\">For a vegan alternative, <em>use vegan butter<\/em>. I don\u2019t recommend using oils like avocado or olive oil as substitutes in this recipe. When I tried using oil, the cookies spread too much.<\/p>\n<p><strong>Molasses.<\/strong> Use 100% fancy molasses. If you don\u2019t like molasses or need a substitution, honey or <a href=\"https:\/\/milkandpop.com\/vegan-honey-made-with-apples-and-chamomile\/\">vegan honey<\/a> works just as well.<\/p>\n<p><strong>Sugar.<\/strong> Granulated sugar works perfectly\u2014no need for brown sugar since the molasses already adds that rich, caramelized flavor.<\/p>\n<p><strong>Flour.<\/strong> Use all-purpose white flour for this recipe.<\/p>\n<p><strong>Baking Soda.<\/strong> Don\u2019t skip this ingredient! Baking soda is essential both for neutralizing the tangy sourdough flavor and for helping the cookies rise. Without it, you\u2019ll end up with tough cookies.
