Food producers adopted dubious cost-cutting techniques such as \u201cmixing wood shavings with cinnamon and chalk into flour.\u201d<\/p>\n<figure class=\"article-image \">\n<p>    <img decoding=\"async\" src=\"https:\/\/th-thumbnailer.cdn-si-edu.com\/kdDi3shtG06HzGRmGnAPnfIOq3w=\/fit-in\/1072x0\/filters:focal(640x378:641x379)\/https:\/\/tf-cmsv2-smithsonianmag-media.s3.amazonaws.com\/filer_public\/ca\/77\/ca771ba1-af59-4603-ac64-361121fd9b93\/daily_sales_record_of_school_lunches_from_school_feeding-_its_history_and_practice_at_home_and.jpeg\" alt=\"record of school lunches\" loading=\"lazy\"\/><figcaption class=\"caption\">\n<p>      A weekly record of school lunches<\/p>\n<p>      <span class=\"credit\">Science History Institute<\/span><\/p>\n<\/figcaption><\/figure>\n<p>\u201cProbably the most notorious example was the dairy industry, which routinely added formaldehyde to milk to keep it from spoiling,\u201d Alex Asal, a museum educator at the Science History Institute, tells the <em>Times<\/em>.<\/p>\n<p>Medical inspections revealed that schoolchildren were malnourished. Many had\u00a0scurvy or rickets, diseases caused by vitamin deficiencies. Officials began to notice. Philadelphia and Boston became two of the first cities to offer meals to public school students in 1894. According to a statement from the museum, the exhibition features a tiny aluminum token from 1909, which a Philadelphia child would have used to purchase a \u201cpenny lunch\u201d at school.<\/p>\n<p>Meanwhile, a\u00a01910 record from Columbia University Teachers College provides a snapshot of school lunch in the early 20th century: It says schoolchildren ate frankfurters and rolls, bananas and licorice, Swiss cheese bread and frosted cakes, per WHYY.<\/p>\n<p>\u201cWe wanted to highlight some of the meals that students would have been eating at the time,\u201d Smith tells the radio station. \u201cI think that today, we have a sense of what iconic school lunches might be\u2014things like fish sticks and Salisbury steak\u2014but at other times, it might have been liver loaf and cheese rice souffle.\u201d<\/p>\n<figure class=\"article-image \">\n<p>    <img decoding=\"async\" src=\"https:\/\/th-thumbnailer.cdn-si-edu.com\/7dJl_8GIxCbKIuhNu-GMrGpFuDo=\/fit-in\/1072x0\/filters:focal(640x329:641x330)\/https:\/\/tf-cmsv2-smithsonianmag-media.s3.amazonaws.com\/filer_public\/b0\/a9\/b0a95172-b9cc-470a-9a16-1c0dc4ccff52\/5_supersandwich_box_courtesy_science_history_institute.jpeg\" alt=\"Super Sandwich\" loading=\"lazy\"\/><figcaption class=\"caption\">\n<p>      The Super Sandwich board game, which aimed to gamify nutrition<\/p>\n<p>      <span class=\"credit\">Science History Institute<\/span><\/p>\n<\/figcaption><\/figure>\n<p>The exhibition examines how advances in food science and government interventions have influenced the items served in school cafeterias. For example, improved seeds and fertilizers led to food surpluses, which the government distributed to schools\u2014\u201csometimes at the expense of nutrition\u201d\u2014during the <a href=\"https:\/\/www.britannica.com\/event\/Great-Depression\">Great Depression<\/a>, according to the museum. The\u00a0<a href=\"https:\/\/www.britannica.com\/topic\/Works-Progress-Administration\">Works Progress Administration<\/a> also hired workers to make and serve lunches in schools nationwide.<\/p>\n<p>Before and during World War II, nutrition research conducted by the military generated support for subsidized school lunches. Around the same time, the\u00a0<a href=\"https:\/\/www.archives.gov\/research\/guide-fed-records\/groups\/224.html\">War Food Administration<\/a> distributed posters promoting healthy meals. A poster from 1944 reads, \u201cEvery child needs a good school lunch. The War Food Administration will help your community start a school lunch program.\u201d In 1946, President Harry Truman signed the National School Lunch Act, which established the\u00a0<a href=\"https:\/\/www.fns.usda.gov\/nslp\">National School Lunch Program<\/a>.<\/p>\n<p>\u201cThe National School Lunch Program is the longest running children\u2019s health program in U.S. history, and it has an outsized impact on nutritional health,\u201d <a href=\"https:\/\/mhb.wisc.edu\/staff\/ruis-andrew\/\">Andrew R. Ruis<\/a>, author of the book\u00a0<a href=\"https:\/\/www.rutgersuniversitypress.org\/eating-to-learn-learning-to-eat\/9780813584072\/\"><em>Eating to Learn, Learning to Eat: The Origins of School Lunch in the United States<\/em><\/a>, tells the <em>Times<\/em>. \u201cResearch in the \u201920s and \u201930s showed overwhelmingly that school lunch programs had a huge impact on student health, on educational attainment, on behavior and attitude.\u201d Still, by the late 1950s, less than a third of American children received a meal at school.<\/p>\n<p>Throughout the 20th century, nutritional guidelines were constantly evolving. In 1916, the Department of Agriculture recommended that children between 3 and 6 eat \u201ca lamb chop, chopped spinach, rice with milk and sugar, bread and butter and baked potato,\u201d per WHYY.<\/p>\n<figure class=\"article-image right\">\n<p>    <img decoding=\"async\" src=\"https:\/\/th-thumbnailer.cdn-si-edu.com\/AUUQonf83ILMIz5KEPE8mzs0x0o=\/fit-in\/1072x0\/filters:focal(460x644:461x645)\/https:\/\/tf-cmsv2-smithsonianmag-media.s3.amazonaws.com\/filer_public\/d4\/a8\/d4a88fec-fc24-4b42-a418-e0f93cd04bb6\/wpa_1.jpeg\" alt=\"School lunch poster\" loading=\"lazy\"\/><figcaption class=\"caption\">\n<p>      School lunch poster for the War Food Administration in 1944<\/p>\n<p>      <span class=\"credit\">University of North Texas Digital Library<\/span><\/p>\n<\/figcaption><\/figure>\n<p>In 1973, a board game called\u00a0<a href=\"https:\/\/digital.sciencehistory.org\/works\/vl7jout\">Super Sandwich<\/a> provided a fun way to teach children about eating the recommended daily allowance of protein, calcium, iron, vitamins A, vitamin B-complex and vitamin C. About a decade later, Reagan-era budget cuts <a href=\"https:\/\/www.nytimes.com\/1981\/11\/18\/us\/president-gets-revised-proposals-for-standards-on-school-lunches.html\">sparked a debate<\/a> over whether schools could count ketchup and pickle relish as vegetables.<\/p>\n<p>\u201cWhenever we tell someone about this exhibit, they mention ketchup,\u201d Smith tells WHYY. \u201cIt seems to be one of the few elements of school lunch history that people know about.\u201d<\/p>\n<p>\u201cLunchtime\u201d also highlights the rise of frozen and pre-packaged foods in recent decades. In response, advocates have pushed for more fresh fruits and vegetables in children\u2019s diets. But for many schools, distributing healthy meals remains a challenge.
