This means that the ingredients will easily be incorporated as the dough will be wetter. A looser texture also makes it harder to handle since it\u2019s so sticky, since you\u2019ll be working with a wetter dough. <\/p>\n<p>When making sourdough bread with a high hydration level, there\u2019s no need for kneading. We know that the higher the hydration level is, the harder it becomes to handle and shape your dough.
