(It was the most Googled cocktail in 2024.) The original build of the cheekily named drink consists of vanilla vodka, passion fruit liqueur, passion fruit pur\u00e9e, and vanilla syrup, with a sidecar of Champagne to gild the lily. It\u2019s also a format and flavor profile that creative bartenders love to riff on. It just goes to show that even after more than two decades, no matter what you call it, this one remains a star.<\/p>\n<div class=\"wp-block-kadence-spacer aligncenter kt-block-spacer-91655_2171df-6b\">\n<div class=\"kt-block-spacer kt-block-spacer-halign-center\">\n<hr class=\"kt-divider\" \/><\/div>\n<\/div>\n<div class=\"wp-block-cgb-block-recipe-box undefined gray-box-align-none\">\n<h2 class=\"ch-block-heading\">CornStar Martini<\/h2>\n<div class=\"ch-block-content\"><em>At New York City cocktail lounge Bar Bonobo, bartender Gelo Honrade puts a playful spin on the drink with a house-made vanilla popcorn syrup. \u201cI work a lot with fresh ingredients, and I was inspired by corn but wanted to make something unique,\u201d explains Honrade. The riff takes the cocktail\u2019s traditional vanilla element and imbues it with the toasty flavors of popcorn kernels. <br \/><\/em><br \/>1 3\/4 oz. vodka<br \/>3\/4 oz. vanilla popcorn syrup<br \/>3\/4 oz. fresh lemon juice<br \/>1\/2 oz. fresh egg white (or replace with 1\/2 oz. <span class=\"tooltipsall tooltip_post_id_51254 classtoolTips6\">aquafaba<\/span> or 1 dash of <a href=\"https:\/\/imbibemagazine.com\/taste-test-vegan-foamers\/\" target=\"_blank\" rel=\"noreferrer noopener\">vegan foamer<\/a>)<br \/>1\/4 oz. passion fruit liqueur (Bonobo uses Chinola)<\/p>\n<p>Tools: shaker, strainer, fine-mesh strainer<br \/>Glass: Nick &amp; Nora<br \/>Garnish: freshly popped popcorn<\/p>\n<p>To mix the cocktail, in a shaker add all the ingredients. Shake with ice, double strain into a chilled Nick &amp; Nora glass, and garnish.<br \/><strong>Vanilla Popcorn Syrup<\/strong>Roast 1 cup of popcorn kernels with 2 tsp. of sugar and 1 Tbsp. of butter in a heavy bottom pot on medium heat for about 5 minutes until evenly toasted (keeping heat low enough so the kernels don\u2019t pop). Add 2 cups of sugar and 2 cups of water to the kernels and simmer over medium-low heat for 30 minutes. Turn off the heat, then stir in 1\/4 oz. of orange blossom water, 1\/4 oz. of vanilla extract, and a barspoon of overproof rum. It adds a slight touch of fresh coconut and a silky mouthfeel without introducing any sugar or syrupy elements,\u201d explains Oliver. \u201cI wanted to give [the drink] a more refined, nerdy touch without compromising its simple flavor profile.\u201d <br \/><\/em><br \/>1 1\/2 oz. coconut-infused vodka<br \/>3\/4 oz. sweetened passion fruit pur\u00e9e (1:1 pur\u00e9e and granulated sugar)<br \/>1\/2 oz. fresh lemon juice<br \/>2 1\/2 oz. chilled Champagne<\/p>\n<p>Tools: shaker, strainer<br \/>Glass: coupe<br \/>Garnish: orchid<\/p>\n<p>In a shaker combine the coconut-infused vodka, sweetened passion fruit pur\u00e9e, and fresh lemon juice. Shake with ice and strain into a chilled coupe, then top with the chilled Champagne. Express a lemon twist over the drink and garnish.<br \/><strong>Coconut-Infused Vodka<\/strong>Combine 5 oz. of vodka with 1 oz. of melted, unrefined coconut oil and shake or stir to combine. Infuse in the fridge overnight then strain through a coffee filter. <\/p>\n<p><em>Nathan Oliver, <a href=\"https:\/\/www.thebenjaminhollywood.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">The Benjamin Hollywood<\/a>, Los Angeles<br \/><\/em><\/div>\n<\/div>\n<div class=\"wp-block-kadence-spacer aligncenter kt-block-spacer-91655_81fb68-23\">\n<div class=\"kt-block-spacer kt-block-spacer-halign-center\">\n<hr class=\"kt-divider\" \/><\/div>\n<\/div>\n<div class=\"wp-block-cgb-block-recipe-box undefined gray-box-align-none\">\n<h2 class=\"ch-block-heading\">Clarified Porn Star Martini<\/h2>\n<div class=\"ch-block-content\"><em>For Starlite in San Francisco, Scott Baird created a batched and clarified version of the cocktail. \u201cMy inspiration was to take a drink that I love very much and apply techniques that are now fairly commonplace, but weren\u2019t at the time of its birth, to bring a sexier and sneakier profile to the cocktail,\u201d explains Baird, who created the program and serves as acting beverage director for Starlite. <br \/><\/em><br \/>150 g vodka<br \/>60 g <a href=\"https:\/\/imbibemagazine.com\/recipe\/vanilla-syrup-recipe\/\" target=\"_blank\" rel=\"noreferrer noopener\">vanilla syrup<\/a> (1:1) <br \/>50 g unsweetened passion fruit pur\u00e9e<br \/>30 g fresh lime juice<br \/>25 g dry sparkling wine<br \/>10 g cr\u00e8me de cacao<br \/>150 g whole milk<\/p>\n<p>Tools: large container, coffee filters<br \/>Glass: small coupe<\/p>\n<p>Measuring all ingredients by weight, combine the vodka, vanilla syrup, unsweetened passion fruit pur\u00e9e, fresh lime juice, dry sparkling wine, and cr\u00e8me de cacao. Heat the whole milk to roughly 140 degrees Fahrenheit. Transfer the milk to a large container, then slowly pour the punch mixture on top. Allow the mixture to rest overnight, then strain through coffee filters until clear, and chill mixture fully.
