Also not just because I am planning to brew my own version of Morana, that I call \u010cern\u00fd Lev (that&#8217;s Black Lion for the non-Czech speakers), at some point in the nearish future as I have started doing decoction mashes with my homebrew. These two facts though are related to my pondering&#8230;but first a quick jaunt back in time, to last November.<\/p>\n<div class=\"separator\" style=\"clear: both; text-align: center;\"><a href=\"https:\/\/blogger.googleusercontent.com\/img\/b\/R29vZ2xl\/AVvXsEjpzufUrvXIWkmDYqVd4gKqqG4MVONYqbHBbyXnVoukqZaqx4VH0yWzU_cU3cCCWkqmUI5nlAl_DxkwqsVUUVKJ0O60fpbtL9EwMlvy8HxZM7rlTUoMB2zUgcnrElk86FSVIYTyz60BQsyc8nQ82aBVLovj6bgDXpHW08mGaS2_FT8WqOVFch4-Ms_jkTk\/s2396\/20231231_200537.jpg\" imageanchor=\"1\" style=\"margin-left: 1em; margin-right: 1em;\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" data-original-height=\"2396\" data-original-width=\"1597\" height=\"320\" src=\"https:\/\/blogger.googleusercontent.com\/img\/b\/R29vZ2xl\/AVvXsEjpzufUrvXIWkmDYqVd4gKqqG4MVONYqbHBbyXnVoukqZaqx4VH0yWzU_cU3cCCWkqmUI5nlAl_DxkwqsVUUVKJ0O60fpbtL9EwMlvy8HxZM7rlTUoMB2zUgcnrElk86FSVIYTyz60BQsyc8nQ82aBVLovj6bgDXpHW08mGaS2_FT8WqOVFch4-Ms_jkTk\/s320\/20231231_200537.jpg\" width=\"213\"\/><\/a><\/div>\n<p>I went back to Prague, which you probably know as I posted about some of the beers and pubs I went to, but I didn&#8217;t write about every pub or even every beer I had in the pubs I did write about. While I did write about the perfect session at Hostomick\u00e1 Nelevarna, I didn&#8217;t mention that I had a couple of half litres of Hostomice&#8217;s delightful Fabi\u00e1n Tmav\u00fd 14\u00b0. To my mind it is one of the best dark lagers being brewed in Czechia today and certainly one of my favourites. As my group of friends and I discussed the finer points of Czech beer in general, it was mentioned that Fabi\u00e1n Tmav\u00fd is not a classic Czech dark lager, because the proportions of Pilsner and Munich malt are reversed.<\/p>\n<p>In my homebrew version of Morana, which is basically the same other than using CaraMunich I rather than CaraBohemian, which I can&#8217;t see to find in any of the online homebrew stores, the grain bill is:<\/p>\n<div>\n<ul style=\"text-align: left;\">\n<li>74% Bohemian Pilsner<\/li>\n<li>11% Munich<\/li>\n<li>11% CaraMunich I<\/li>\n<li>4% Carafa III Special<\/li>\n<\/ul>\n<p>Initially, I was shocked at the idea of using so much Munich malt in a tmav\u00e9, but also deeply intrigued by how such a beer would turn out. I imagine it would be richer, with a deep malt character, a more intense breadiness, and would probably take an extra wallop of hops to give the balance I would expect. As I was pondering, and reading the Pivovar Hostomice description of Fabi\u00e1n Tmav\u00fd, a phrase jumped out at me, that I think I probably just glossed over previously, &#8220;Tmav\u00e9 speci\u00e1ln\u00ed pivo bavorsk\u00e9ho typu&#8221;, which translates as &#8220;special dark beer, of the Bavarian type&#8221;. The description continues&#8230;<\/p>\n<\/div>\n<blockquote style=\"border: none; margin: 0 0 0 40px; padding: 0px;\">\n<p>&#8220;K v\u00fdrob\u011b tohoto speci\u00e1lu bylo pou\u017eito \u010dty\u0159 druh\u016f slad\u016f, co\u017e zaru\u010duje plnou, v\u00fdrazn\u011b sladovou, chu\u0165 a v\u0161ak bez sladk\u00e9ho dozn\u00edv\u00e1n\u00ed v\u011bt\u0161iny \u010desk\u00fdch, tmav\u00fdch, piv. Toto pivo je ne\u010dekan\u011b v\u00fdrazn\u011b chmelenoa v\u00fdrazn\u00e1 ho\u0159kost ud\u00edl\u00ed tomuto pivu ne\u010dekanou pitelnost. Tmav\u00e9 pivo, kter\u00e9 V\u00e1s p\u0159ekvap\u00ed.&#8221;<\/p>\n<\/blockquote>\n<p>Which translates as:<\/p>\n<blockquote style=\"border: none; margin: 0 0 0 40px; padding: 0px;\">\n<p>&#8220;Four types of malt were used to produce this special, which guarantees a full, distinctly malty taste, but without the sweet aftertaste of most Czech dark beers. This beer is unexpectedly very hoppy and the strong bitterness gives this beer an unexpected drinkability. A dark beer that will surprise you.&#8221;<\/p>\n<\/blockquote>\n<p>So, we still have the 4 types of malt, just with more Munich than Pilsner from what I was told, and big dose of hoppiness and bitterness to make the beer more drinkable. For reference, Morana has about 25 IBUs. I decided to create a new recipe for \u010cern\u00fd Lev, taking into account the markers laid down by Hostomice, so here goes:<\/p>\n<div>\n<ul style=\"text-align: left;\">\n<li>70% Munich<\/li>\n<li>15% Bohemian Pilsner<\/li>\n<li>10% CaraMunich I<\/li>\n<li>5% Carafa III Special<\/li>\n<li>25 IBUs Saaz for 60 minutes<\/li>\n<li>13 IBUs Saaz for 30 minutes<\/li>\n<li>2 IBUs Saaz for 5 minutes<\/li>\n<li>Saflager 34\/70 Yeast<\/li>\n<\/ul>\n<p>My aim would be to keep to 14\u00b0, as that seems to be the sweet spot of the modern tmav\u00e9, including the direct inspiration for Morana &#8211; the much missed Kout na \u0160umav\u011b.<\/p>\n<\/div>\n<p>There is, however, a question that keeps pottering through my mind, and I am being vaguely cynical with this question. As I plan to get back into entering homebrew competitions this year, do I enter this particular beer in the Czech dark lager category or do I take my lead from Hostomice and enter it as a Munich Dunkel, given the phrase that this is a dark beer &#8220;of the Bavarian type&#8221;?\u00a0<\/p>\n<\/div>\n\n","protected":false},"excerpt":{"rendered":"<p>Tmav\u00e9, the Czech style dark lager, has been on my mind a lot recently.
