\n Now, while I’ve made\u00a0peach pie<\/a><\/b>\u00a0(oh man, this recipe is so, so good<\/i>!),\u00a0Texas peach pecan cobbler<\/a><\/b>,\u00a0peachy blueberry muffins<\/a><\/b>, and even\u00a0peach-decorated cookies<\/a><\/b>\u00a0(still one of my favorite designs<\/i>), I’ve never made a peach dump
\n cake.\u00a0\n<\/p>\n

\n Heck, I’d never made a dump cake, period. I’ll be honest – I don’t love the
\n name. Ha.\u00a0<\/p>\n

\n Based on the vintage recipe calling for canned fruit and cake mix, this
\n updated, from-scratch version features frozen peaches, almond flavors, a
\n homemade cake mix layer, and sliced almonds for a bit of crunch. Melted butter
\n stirred together with the dry ingredients ensures no dry patches.\u00a0Oh, and the vanilla ice cream on top is mandatory.<\/i>\n<\/p>\n

The result is tart and sweet. Warm and cold. Comforting and delicious.<\/p>\n

What exactly is a Dump Cake?<\/h2>\n

\n Not the most elegant-sounding dessert, dump cakes are traditionally made by
\n “dumping” cans of fruit, a box of cake mix, and pats of butter into a pan and
\n baking it up.\u00a0\n<\/p>\n

\n

\n While popular in the potluck circuit,\u00a0traditional dump cakes have some issues<\/b><\/i>.\u00a0\n <\/p>\n

    \n
  1. \n Canned fruit isn’t always the tastiest. Believe me, I started recipe
    \n testing with canned peaches. No, thank you to slimy and mushy fruit.\u00a0\n <\/li>\n
  2. \n Cake mixes vary in size and flavor, and the amount of mix in the box seems
    \n to be dwindling every year. (Please see
    \n     my caramel brownies recipe<\/a><\/b>.)\n <\/li>\n
  3. \n The pats of butter don’t cover all of the cake mix, so the top of the cake
    \n is frequently left with dry patches. No bueno.<\/li>\n<\/ol>\n

    This makes a GREAT dessert for a crowd! Summer cookout, graduation party, birthday, etc.!\u00a0<\/p>\n<\/div>\n

    How to Make Peach Dump Cake from Scratch<\/h2>\n
    \n \"How<\/a>\n<\/div>\n
    \n My version of Peach Dump Cake starts with frozen peaches.\u00a0Frozen fruit\u00a0<\/a><\/b>is always a good bet. It’s picked at the peak of ripeness and flash frozen.
    \n Save those juicy summertime peaches for eating out of hand, peach salsas,
    \n and\u00a0    peach pies\u00a0<\/a><\/b>– use frozen peaches for this cake year-round.\u00a0\n<\/div>\n
    \n You’ll toss the frozen peaches with just a bit of sugar, cornstarch, and
    \n     almond extract<\/a><\/b>. I’m telling you…that almond will make the peaches sing!<\/b> (And,
    \n still technically a “dump cake” as you’ll dump the peaches into the baking
    \n pan!)\n<\/div>\n
    \n \"How<\/a>\n<\/div>\n

    \n Next, whisk up a homemade cake mix of sorts.
    \n Instead of placing pats of butter over the dry mix in the pan, you’ll stir
    \n melted butter into the mix.<\/b>
    \n There are sliced almonds and a little more almond extract in the batter.\u00a0\n<\/p>\n

    \n \"How<\/a>\n<\/div>\n

    Dollop the mix over the peaches, distributing evenly, and bake!\u00a0<\/p>\n

    \n The most difficult part of this of-so-easy recipe is waiting to serve it.
    \n Letting it rest a bit after baking gives the juices a chance to thicken and
    \n protects your mouth from scalding hot fruit.\u00a0\n<\/p>\n

    Top with vanilla ice cream.<\/p>\n

    \n

    \n Here’s another tip:<\/b>\u00a0leave your ice cream at room temperature for
    \n 5 minutes before scooping. The ice cream will scoop more easily, and the
    \n flavor will be better when it’s not straight from the freezer.\u00a0\n <\/p>\n

    YIELD: 8 servings<\/p>\n

    PREP TIME: 15 minutes<\/p>\n

    BAKE TIME: 50 minutes<\/p>\n

    2 pounds frozen sliced peaches<\/p>\n

    1\/3 + 3\/4 cup Imperial Sugar Extra-Fine Granulated Sugar, divided<\/p>\n

    1 tablespoon cornstarch<\/p>\n

    1 1\/3 cup unbleached, all-purpose flour<\/p>\n

    1 teaspoon baking powder<\/p>\n

    1\/4 cup sliced almonds<\/p>\n

    3\/4 cup melted salted butter<\/p>\n

    Vanilla ice cream for topping<\/p>\n

    \n Preheat oven to 375. Dump peaches into a 9 x 12 or 9 x 13-inch pan. Use a
    \n fork to combine 1\/3 cup sugar and cornstarch together. Toss with the
    \n peaches. Sprinkle 1 teaspoon almond extract over top.\u00a0\n <\/p>\n

    \n Whisk flour, remaining 3\/4 cup sugar, and baking powder together. Stir in
    \n sliced almonds. Add melted butter and stir until no dry spots remain. Stir
    \n in remaining 1\/2 teaspoon almond extract. Dollop evenly over
    \n peaches.\u00a0\n <\/p>\n

    \n Bake for 50-65 minutes until the fruit is bubbling and the top is golden.
