\n You may have noticed, and maybe you haven’t, that things have been quieter
\n around here lately. (Honestly, I subscribe to so many newsletters and blogs
\n that I think it takes me a couple of years to realize I haven’t heard from
\n someone in a while.)\u00a0\n<\/p>\n

\n This\u00a0Peach-Swirled Buttermilk Bundt Cake is my first bake in our new (to
\n us) house. It’s moist with a fine crumb. The vanilla and almond buttermilk
\n cake is swirled with a fresh summer peach pur\u00e9e.\u00a0\n<\/p>\n

\n The cake is simple enough for a weeknight dessert but is also perfect for a
\n summer party or potluck.\u00a0\n<\/p>\n

\n So, HELLO(!) from the Dallas area.<\/b><\/i> Long story
\n short<\/strike> medium ;): Mark and I met and married here and have
\n wanted to move back ever since we moved away 22 years ago.\u00a0\n<\/p>\n

\n Fast forward a couple of decades…Jack graduated from college and is happily
\n working in Dallas. Mark and I both work from home, so it was time. Well, it
\n took us over a year to find the right house<\/i>, but yes, it was time!\u00a0\n<\/p>\n

\n We’ve been here two weeks and are IN LOVE. Bye, crazy Houston humidity; miss
\n you never!\u00a0\n<\/p>\n

\n I’m not sure what it is. Maybe it’s just moving and getting a fresh
\n perspective. Maybe it’s moving back to the place where you first lived on your
\n own, made all the mistakes, but also started your little life. Maybe it’s
\n being closer to family – living close to Jack is like a dream.\u00a0\n<\/p>\n

\n \"cat<\/a>\n<\/div>\n

\n Whatever it is, I feel more myself. More free. More relaxed. More at home in
\n my skin. In that vein, this space will be more relaxed, too.<\/b> No more
\n dragging out backgrounds and props. (I was never any good at that anyway.)
\n You’ll see food as we eat it. If it’s nighttime…the pictures might be a little dark
\n and grainy.\u00a0\n<\/p>\n

\n Let’s talk cake.<\/b> As I said, this is a simple cake to make. If you’ve made my
\n Buttermilk Bundt Cake<\/a><\/b>
\n in the past, this’ll look familiar.\u00a0\n<\/p>\n

How to Make Peach Pur\u00e9e for Baking<\/h2>\n

\n Making the peach pur\u00e9e is quick…and the end result is delicious. I’m left
\n wondering why we don’t eat it like applesauce?\n<\/p>\n

\n Peel and chop the peaches. Heat in a saucepan with a bit of water, lemon
\n juice, sugar, and a pinch of salt. Cook until the peaches are soft and the
\n liquid has thickened.\u00a0\n<\/p>\n

\n At this point, transfer to a blender or use an
\n immersion blender
\n <\/a><\/b>to blend until smooth. Done.\u00a0\n<\/p>\n

\n Make the cake, adding peach pur\u00e9e in the center and at the end. Swirl it with a long
\n wooden skewer into the batter.\u00a0\n<\/p>\n

\n Caution: <\/b>Don’t add too much of the pur\u00e9e as this can throw off the
\n liquid ratio in the cake. We’ll add more pur\u00e9e to the plates when
\n serving.\u00a0\n<\/p>\n

\n Oh! The cake pan! You obviously don’t NEED to use the
\n Nordic Ware Tiered Heart Bundt Pan<\/a><\/b>, but is it ever CUTE! There are two sizes. Be sure to buy the
\n 12-cup version<\/a><\/b>
\n for this recipe, but any Bundt cake pan that holds 10-12 cups will be
\n fine.\u00a0\n<\/p>\n

\n Whatever pan you use, grease and flour the HECK out of it!\u00a0<\/b><\/i>\n<\/p>\n

\n <\/a>\n<\/div>\n

YIELD: 12 servings<\/p>\n

PREP TIME: 45 minutes<\/p>\n

BAKE TIME: 1 hour<\/p>\n

for the peach pur\u00e9e:<\/p>\n

3 medium-sized peaches, peeled and roughly chopped<\/p>\n

juice of half of one large lemon<\/p>\n

1 tablespoon granulated sugar<\/p>\n

1 tablespoon water<\/p>\n

pinch fine sea salt<\/p>\n

for the cake:<\/p>\n

2 1\/2 cups unbleached, all-purpose flour<\/p>\n

1 tablespoon cornstarch<\/p>\n

1 teaspoon baking powder<\/p>\n

1\/2 teaspoon kosher salt<\/p>\n

1 cup salted butter, room temperature<\/p>\n

2 cups sugar<\/p>\n

2 teaspoons vanilla<\/p>\n

1\/2 teaspoon almond extract<\/p>\n

5 eggs, room temperature<\/p>\n

1 cup buttermilk, room temperature<\/p>\n

powdered sugar for serving<\/p>\n

[NOTE: shake the buttermilk well before measuring.]<\/p>\n<\/p><\/div>\n

\n Make the peach pur\u00e9e. Place all of the pur\u00e9e ingredients in a small saucepan.
\n Heat on medium until it comes to a simmer. Continue simmering until the
\n peaches are softened and smooth (almost like pie filling) and the liquid has
\n thickened. About 5-10 minutes.\u00a0\n<\/p>\n

\n Transfer to a blender or use an
\n immersion blender
\n <\/a><\/b>to blend until smooth. Set aside to cool.\u00a0\n<\/p>\n

\n Preheat the oven to 325. Grease and flour a Bundt pan. Use shortening to
\n grease\u2014give the pan a good, generous swipe of shortening with a paper towel,
\n then use a pastry brush to get every bit of the pan. Flour and tap out the
\n excess.\n<\/p>\n

Whisk the flour, cornstarch, baking powder, and salt together.<\/p>\n

\n Cream the butter and sugar until light and fluffy. Beat in the vanilla and
\n almond extracts. Mix in the eggs, one at a time, scraping the sides and bottom
\n of the bowl as needed.\n<\/p>\n

\n Add the flour in three additions, alternating with the buttermilk. Mix just
\n until combined.\n<\/p>\n

\n Pour half of the batter into the prepared pan. Spoon 2-3 tablespoons of peach
\n pur\u00e9e on top. Use a long skewer or a table knife to gently swirl. Repeat with
\n remaining batter and top with 3 tablespoons of peach pur\u00e9e. Gently swirl.
\n Refrigerate remaining pur\u00e9e.\n<\/p>\n

\n Bake for 50 minutes to 1 hour, until a toothpick inserted in the center comes
\n out clean or with moist crumbs. Let cool for 5 minutes in the pan.\n<\/p>\n

\n After 5 minutes, invert a wire cooling rack on the top of the cake. Use oven
\n mitts to flip the pan onto the rack. Wait one minute, then remove the pan. The
\n cake should come out cleanly. If not, run a knife along the edge and try
\n again.\n<\/p>\n

\n Let cool completely. When ready to serve, sift powdered sugar over the top.
