Groups of people stand around on the turf, soaking up the intermittent rays of sun peaking through the clouds. <\/p>\n<p>Walking under the rolltop doors, a similar seafoam-tiled bar immediately splashes out at me, drawing me closer. To my right, the brewery\u2019s gleaming steel tanks stand in the open for all to see, a conscious decision from <a href=\"https:\/\/bit.ly\/3E4qKg2\">Heyday Beer Co.<\/a>. Co-Founder, Director, and Designer Hannah Blackwood \u201cto get the best out of the brewers, but also to let the customer feel involved in the process.\u201d <\/p>\n<p>At Heyday Beer Co., at the bottom of New Zealand\u2019s North Island, the motto is simple: \u201cBe Kind, Stay Safe, Drink Beer.\u201d<\/p>\n<p>It\u2019s a slogan that harkens back to a different time. One where neighbors traded sugar and hosted summer barbecues. But it\u2019s hard to stand in front of the aquamarine bar without seeing flashes of Julia Child\u2019s kitchen, all celadon green tile and colored cabinets. (on the bottom)<\/p>\n<\/div>\n<p>Starting in Los Angeles, where she enjoyed a Pliny the Elder for the first time, Blackwood and her friend next headed to Portland, OR, because she heard it was \u201cthe place to go.\u201d From there, Blackwood took the train to Vancouver before flying across to New York City and eventually driving down to Florida. <\/p>\n<p>Each place she stopped, \u201cInstead of where should we get an accommodation or what should we do, we were like, where is the \u2018it\u2019 brewery,\u201d she says. <\/p>\n<p>When speaking to people at the breweries they visited, Blackwood says people often took them out for dinner or even gave them accommodations. <\/p>\n<p>\u201cIt was a really nice experience,\u201d recounts Blackwood, who describes herself as more of an introvert. \u201cIt actually brought me out of my shell.\u201d <\/p>\n<p>While at M.I.A. Brewing Co. in Miami, Blackwood had an epiphany, mentioning to her partner, \u201cHey, you\u2019re a builder, I\u2019m a designer, and we homebrew. I reckon we can start a brewery.\u201d<\/p>\n<p>Returning to Wellington, Blackwood started looking for a space. Originally planning to move into a venue down the road from the current location, Blackwood says a quirk of fate caused those plans to crumble. A few minutes after midnight on Monday, November 14, 2016, the Kaik\u014dura earthquake shook through Wellington. Set to move in that same day, Blackwood says instead, she woke up to a building condemned.  <\/p>\n<p>It would take six more months of viewing little dingy bars as potential spaces before she came across an old car garage with a rollup door. \u201cWhen we saw the place,\u201d says Blackwood, \u201cit was a bit of a no-brainer.\u201d <\/p>\n<p>Where the brewery\u2019s located on Cuba Street has somewhat of a checkered past. <\/p>\n<p>A couple blocks up from Heyday is a set of traffic lights. Years ago, Blackwood, who attended Massey University less than ten minutes away, says she would have described the area as the \u201cseedy end of town\u201d with strip clubs. \u201cMy mom used to say don\u2019t go past these lights,\u201d says Blackwood. But today, the area is full of funky little shops and cafes. \u201cThis is a great end of town,\u201d says Blackwood, ticking off an Italian restaurant she\u2019s been dying to go back to, an Argentinian one, and a pizza spot in what used to be a dingy karaoke bar. <\/p>\n<p>Heyday is one of those businesses recapturing the neighborhood. <\/p>\n<h2>Inviting All Inside<\/h2>\n<div id=\"attachment_35989\" style=\"width: 1010px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-35989\" src=\"http:\/\/www.hopculture.com\/wp-content\/uploads\/2025\/04\/heyday-beer-co-people-flights-credit-pivot-photography-and-wellingtonnz-1000x667-1.jpg\" alt=\"heyday beer co people and flights\" width=\"1000\" height=\"667\" class=\"size-full wp-image-35989\" srcset=\"https:\/\/www.hopculture.com\/wp-content\/uploads\/2025\/04\/heyday-beer-co-people-flights-credit-pivot-photography-and-wellingtonnz-1000x667-1.jpg 1000w, https:\/\/www.hopculture.com\/wp-content\/uploads\/2025\/04\/heyday-beer-co-people-flights-credit-pivot-photography-and-wellingtonnz-1000x667-1-300x200.jpg 300w, https:\/\/www.hopculture.com\/wp-content\/uploads\/2025\/04\/heyday-beer-co-people-flights-credit-pivot-photography-and-wellingtonnz-1000x667-1-768x512.jpg 768w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\"\/><\/p>\n<p id=\"caption-attachment-35989\" class=\"wp-caption-text\">Photography courtesy of Pivot Photography and WellingtonNZ<\/p>\n<\/div>\n<p>Blackwood starts to talk a little faster as she ticks off breweries she admires: TALEA Beer Co., Bellwoods, Temescal, Inkhorn, and Fat Orange Cat, to name a few. <\/p>\n<p>\u201cI wanted bright (but not fluoro), airy, and cheerful,\u201d explains Blackwood, who hoped her focus would make the place more inclusive of everybody, \u201cnot just the beer connoisseur who sits at a dark mahogany bar.\u201d <\/p>\n<p>She adds, \u201cAnd if there is a beer connoisseur, he doesn\u2019t care that he\u2019s sitting on a pink seat!\u201d  <\/p>\n<p>It\u2019s these pops of color and influence that have set Heyday apart, literally. <\/p>\n<p>If you\u2019ve ever seen a lipstick-pink van driving around Wellington, that\u2019s probably Heyday Head of Sales Tyler Cornes in the brewery van. <\/p>\n<p>\u201cIt\u2019s pink, so people know it\u2019s you,\u201d says Cornes. \u201cThere\u2019s no hiding from the brand.\u201d <\/p>\n<p>In fact, according to Blackwood, someone once left a Google review on Heyday\u2019s page, \u201cNever tried the beer, but whoever\u2019s driving the pink van needs to speed up; he\u2019s driving like my grandmother.\u201d <\/p>\n<p>Heyday isn\u2019t afraid to embrace who they are: a little vintage, a little thrifty, a lot of soul. <\/p>\n<p>Those iconic mint green tiles? I think this as I stare at a matte black can, a pair of golden eyes flecked with jungle green staring back at me. The look isn\u2019t menacing, but it does pierce my soul. Inspired by Blackwood\u2019s seventeen-year-old cat Queenie (full name: Queenie Fi Blackwood), <a href=\"https:\/\/bit.ly\/4lmagAq\">Soul Cat<\/a> is currently one of Heyday\u2019s core beers. And a pretty good reflection of Heyday\u2019s brewing philosophy. <\/p>\n<p>The 5.5% ABV hazy IPA \u201cmoves away from the 7% ABV, chewy, thick, almost pulpy hazies that New Zealand did for a while,\u201d explains Blackwood, who creates all of the labels. \u201cIt\u2019s hazy, just not a meal in a beer.\u201d <\/p>\n<p>A grist of a light American ale Gladfield malt paired with a little oats and wheat ensures the beer is hazy but not pond-scum turbid. \u201cIt\u2019s not complicated,\u201d says Heyday Head Brewer Ashley Switzer, a native Kiwi who started brewing in New South Wales, Australia, before moving back home and connecting with Heyday. It just gets the job done and gives the beer a bit more body. <\/p>\n<p>A dry-hop of Simcoe, Mosaic, and Sultana Cryo hops with some Idaho 7 in the whirlpool, Soul Cat has \u201cthe fruitiness you expect of those hops,\u201d explains Cornes, \u201cbut you won\u2019t find it sickly sweet. There\u2019s a little bit of dryness\u2026to entice you to have a couple of them.\u201d <\/p>\n<p>Switzer describes that beer as presenting with very pineapple-y, dank notes. <\/p>\n<p>When we say these beers have personality, here is what we mean. Soul Cat is the surviving beer from a series of hazies that paired cats with Marvel\u2019s infinity stones: Mind Cat, Power Cat, Reality Cat, Space Cat, and Time Cat. Who even thinks of something like that? <\/p>\n<p>Heyday does. <\/p>\n<p>To be fair, felines often inspire Blackwood, who has fully embraced she\u2019s \u201cthe cat lady of the beer industry.\u201d  <\/p>\n<p>The best-selling Soul Cat is the only beer to survive that hazy run. But that intensity wasn\u2019t sustainable. <\/p>\n<p>Two years ago, the brewery started a core range, which now includes Soul Cat, Snow Leopard IPA (which Cornes tattooed on his thigh a few weeks before our visit), <a href=\"https:\/\/bit.ly\/3FYQb2Y\">Jeremiah<\/a> New Zealand imperial pilsner, and potentially a new pale ale-like beer called Coyote Gold.<\/p>\n<p>But that doesn\u2019t mean they\u2019re not still having fun. <\/p>\n<p>\u201cFrom my perspective, we just try to brew really good quality beer and really interesting beer,\u201d says Switzer. \u201cWe try to make every batch just one percent better.\u201d  <\/p>\n<div id=\"attachment_36035\" style=\"width: 1010px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-36035\" src=\"http:\/\/www.hopculture.com\/wp-content\/uploads\/2025\/04\/heyday-beer-co-lager-glass2_Credit_Anna-Briggs_WellingtonNZ_1000x667.jpg\" alt=\"heyday beer co lager glass wellington\" width=\"1000\" height=\"667\" class=\"size-full wp-image-36035\" srcset=\"https:\/\/www.hopculture.com\/wp-content\/uploads\/2025\/04\/heyday-beer-co-lager-glass2_Credit_Anna-Briggs_WellingtonNZ_1000x667.jpg 1000w, https:\/\/www.hopculture.com\/wp-content\/uploads\/2025\/04\/heyday-beer-co-lager-glass2_Credit_Anna-Briggs_WellingtonNZ_1000x667-300x200.jpg 300w, https:\/\/www.hopculture.com\/wp-content\/uploads\/2025\/04\/heyday-beer-co-lager-glass2_Credit_Anna-Briggs_WellingtonNZ_1000x667-768x512.jpg 768w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\"\/><\/p>\n<p id=\"caption-attachment-36035\" class=\"wp-caption-text\">Photography courtesy of Anna Briggs | WellingtonNZ<\/p>\n<\/div>\n<p>Last year, Heyday started a new \u201cLager &amp; Sour Series,\u201d releasing a new beer in each style every month. <\/p>\n<p>The vision is to capture drinkers who want something more traditional (lagers) and those willing to try something funky and fruity (sours). <\/p>\n<p>Those like the Passionfruit Miso Sour. <\/p>\n<h3>Passionfruit Miso<\/h3>\n<p>As I sat down with Blackwood and Cornes in the taproom, they asked if there was any style of beer I didn\u2019t like. <\/p>\n<p>After a moment\u2019s pause, I replied, \u201cI\u2019m not a huge fan of sours.\u201d <\/p>\n<p>A look passed between them. Well, today, you\u2019re going to taste some sours! <\/p>\n<p>I laughed, unaware that I would try one of my favorite funky sips of the entire trip by the end of the night. <\/p>\n<p>To make me feel a little better, Blackwood shared, \u201cI never thought I would drink sours, but now I drink sours by choice.\u201d<\/p>\n<p>Heyday\u2019s latest release in the sour side of its new series, <a href=\"https:\/\/bit.ly\/428dT5I\">Passionfruit Miso Sour<\/a>, came from the mind of Heyday Lead Brewer Shan McGregor. <\/p>\n<p>Inspired by cooking with miso paste, McGregor thought the sweetness and acidity of sour beer would nicely complement the savory characteristics of miso. <\/p>\n<p>\u201cPassionfruit was a no-brainer,\u201d he says. \u201cIt\u2019s so vibrant and dramatic.\u201d <\/p>\n<p>Switzer praises the puree especially. \u201cIf you cook fruit, it changes the flavor of it completely,\u201d he explains, noting that the high-pressure pasteurized version they use \u201cgives us fruit that tastes as if it\u2019s fresh, and it\u2019s just phenomenal.\u201d<\/p>\n<p>McGregor adds white miso paste five minutes before the end of the boil to avoid denaturing any essential proteins and flavors. He says the Japanese fermented soybean presents in the beer as \u201cnot salty, not umami, but savory.\u201d <\/p>\n<p>To me, everything was just perfectly balanced. When you hear something like passionfruit and miso in a beer, it gives you pause. But nothing went out of whack. A zip from the passionfruit didn\u2019t cause me to pucker because the savoriness of the white miso paste stepped in to tango together. A favorite of Cornes, Switzer, and Blackwood, Jeremiah has the hop character and ABV of an IPA but the crispiness and drinkability of a pilsner. <\/p>\n<p>\u201cIt ticks a lot of the boxes,\u201d says Cornes, noting that an imperial pilsner is \u201csomething you just don\u2019t see that often.\u201d<\/p>\n<p>A healthy dose of Riwaka in the dry hop gives the beer a \u201cdanky, kerosene-y, almost passionfruit-type vibe,\u201d according to Switzer, noting some Freestyle Motueka hops add a supporting citrus and tropical fruit backbone. \u201cThe idea is just to be super crisp, but also really flavourful and just have that New Zealand hop character.\u201d<\/p>\n<p>Including this beer style in Heyday\u2019s core lineup still \u201craises eyebrows,\u201d says Cornes. \u201cBut when people come in and see we have a pilsner in the core range, they remember that beer and it\u2019s a memorable experience for them.\u201d <\/p>\n<p>Much like the story behind this beer. Blackwood says a late-night karaoke session during a work trip in Queenstown inspired the name. \u201cI\u2019d never done karaoke before, but it was five in the morning in our Airbnb, and I was on the floor singing Jeremiah Was a Bullfrog,\u201d laughs Blackwood.<\/p>\n<h3>Japanese Rice Lager<\/h3>\n<p>The beer I kept going back to again and again as I sat with Blackwood and Cornes that night was the Japanese Rice Lager. Something about its dry crispness paired perfectly with our dinner, and even after trying a taste of ten different beers, it seemed to pleasantly smooth out everything. <\/p>\n<p>And I know I wasn\u2019t the only one. <\/p>\n<p>\u201cI took a case of low-fills home at the end of our last canning run,\u201d says Switzer. \u201cThey lasted only a few days!\u201d <\/p>\n<p>A summer beer from Heyday\u2019s lager and sour series, the Japanese Rice Lager was brewed to be crushable. <\/p>\n<p>Switzer describes it as \u201cclean with a little bit of sweetness coming through mid-palate from the rice. we\u2019re not looking at complex malt bills,\u201d he says. \u201cWe\u2019re looking at really good brewing practice and really solid fermentation.\u201d  <\/p>\n<p>Utilizing a Belgian monastery yeast (\u201callegedly Chimay,\u201d says Switzer) from White Labs called WLP500 Monastery Ale Yeast, Heyday has repitched the yeast from the single to the dubbel to the tripel to the quad. \u201cI\u2019m super stoked with its performance,\u201d says Switzer. \u201cEven harvesting it from an 8% ABV beer and chucking it into a 10% ABV beer, it just chipped away and got the job done.\u201d <\/p>\n<p>Cold fermenting, Switzer casts the yeast in at 16\u00b0 C (60.8\u00b0 F) before letting each of these beers free rise to 19\u00b0 C (66.2\u00b0 F) and \u201cletting it go towards the end,\u201d explains Switzer. \u201cBut none got that much over probably 22\u00b0 C (71.6\u00b0 F). <\/p>\n<p>The cold start keeps the distinctive Belgian yeast from presenting too many esters, keeping that flavor profile in check while allowing them to develop a ton of flavor in the beer. <\/p>\n<p>For instance, the Enkel \u201cthrows a lot of those beautiful banana esters with real light touches of bubblegum and subtle notes of spice, clove especially,\u201d says McGregor. <\/p>\n<p>At the time of publication, Heyday still had the dubbel in package can-conditioning with the plan to release in a couple of weeks, had recently packaged the tripel, and had the quad in tanks with plans to condition and release in mid-August. <\/p>\n<p>\u201cThis morning, it was throwing off like cacao, marshmallow, and Turkish delight,\u201d McGregor says excitedly. <\/p>\n<p>Overall, the entire Heyday team has been excited about this Belgian series. <\/p>\n<p>\u201cIt\u2019s probably new to a lot of Kiwi beer drinkers,\u201d says Cornes. \u201cWe\u2019re going to be a little bit ahead of the curve.\u201d <\/p>\n<p>It\u2019s all a part of Heyday\u2019s approach to stand out. <\/p>\n<p>\u201cWe\u2019re quite proud of our diversity,\u201d says Switzer. \u201cWe give ourselves a good challenge and try not to brew the norm but to excite, educate, and expand people\u2019s ideas of beer.\u201d <\/p>\n<h2>Standing Out<\/h2>\n<div id=\"attachment_36033\" style=\"width: 1010px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-36033\" src=\"http:\/\/www.hopculture.com\/wp-content\/uploads\/2025\/04\/heyday-beer-co-flight-outside_Credit_Anna-Briggs_WellingtonNZ_1000x667.jpg\" alt=\"heyday beer co flight outside\" width=\"1000\" height=\"667\" class=\"size-full wp-image-36033\" srcset=\"https:\/\/www.hopculture.com\/wp-content\/uploads\/2025\/04\/heyday-beer-co-flight-outside_Credit_Anna-Briggs_WellingtonNZ_1000x667.jpg 1000w, https:\/\/www.hopculture.com\/wp-content\/uploads\/2025\/04\/heyday-beer-co-flight-outside_Credit_Anna-Briggs_WellingtonNZ_1000x667-300x200.jpg 300w, https:\/\/www.hopculture.com\/wp-content\/uploads\/2025\/04\/heyday-beer-co-flight-outside_Credit_Anna-Briggs_WellingtonNZ_1000x667-768x512.jpg 768w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\"\/><\/p>\n<p id=\"caption-attachment-36033\" class=\"wp-caption-text\">Photography courtesy of Anna Briggs | WellingtonNZ<\/p>\n<\/div>\n<p>With over three hundred beers under its belt in just eight years, differentiating Heyday has been imperative to Blackwood. <\/p>\n<p>That is why Soul Cat has an all-black finish. \u201cIt stands out,\u201d says Cornes. <\/p>\n<p>Blackwood, who admits that her style is eclectic and often changes, finds inspiration everywhere. <\/p>\n<p>A deep Reddit thread for research on a tamarillo saison mentioned the fruit shapeshifts because it can be used in everything from savory chutneys to sweet desserts. The beer became Shapeshifter Tamarillo Saison. \u201cI picked a vampire as the shapeshifter of choice, but I wanted to avoid monster grungy details,\u201d explains Blackwood.<\/p>\n<p>Blackwood is a fiend for researching rabbit holes, often looking up more on the adjunct used, region where the beer originated, mythology, national animal, significant landmarks or events, or even famous people. <\/p>\n<p>For instance, an espresso martini stout got the name Catwalk because Blackwood found a tale explaining the origin of the cocktail. Allegedly, a London bartender, Dick Bradsell, concocted the drink in the late \u201880s after supermodel Kate Moss famously asked for a drink that would \u201cwake me up and f**k me.\u201d <\/p>\n<p>Lyrics, conversations, idioms, and weird animals all sneak into Blackwood\u2019s brain for ideas. The bar team is cleaning up, and I realize with a start that the buzz has died down and almost everyone has left. <\/p>\n<p>I\u2019m worried we\u2019ve overstayed our welcome. <\/p>\n<p>\u201cWhat time do you close,\u201d I hurriedly ask Blackwood. She responds that they like the sunshine at Heyday, so while it isn\u2019t a late-night venue, it is a great starter place for the night. One where people come to get their first drinks before going to dinner or other bars. \u201cWe go until close in New Zealand,\u201d says Cornes. <\/p>\n<p>That seems about right to me.
