As an Italian-American, I love using ricotta cheese in recipes\u2014like my Ricotta Pie<\/a>, Ricotta Pancakes<\/a>, and Ricotta Meatballs<\/a>\u2014and it\u2019s so delicious in this Ricotta Cake, too. The cheese adds moisture, tenderness, and subtle flavor that is just so delicious.<\/p>\n

And it\u2019s a great ingredient because it works so hard and also helps eliminate the need for any fussy ingredients or methods. You just need one bowl to stir this cake batter together!<\/p>\n

It\u2019s easy to make this ahead of time, you an serve with powdered sugar or lemon glaze, and it\u2019s so good with a side of berries. We love to have this on or around Easter or Mother\u2019s Day, but it\u2019s great all year long!<\/p>\n
