Unsweetened works well since the topping is very sweet but use it if that\u2019s all you have.<\/p>\n<\/li>\n<li>\n<p>Optional: \u00bd Cup uncooked oat cereal<\/p>\n<\/li>\n<li>\n<p>Optional: \u00bd C nuts, pecans, or walnuts or whatever you prefer<\/p>\n<\/li>\n<\/ul>\n<\/div>\n<div class=\"rk_directions rk_column\">\n<h2 class=\"rk_column_heading\">\n                      <span>Directions<\/span><br \/>\n                    <\/h2>\n<ol id=\"recipe-preparation\"\/>\n<h4 class=\"rk_group_heading\">To make the cake batter:<\/h4>\n<ol>\n<li id=\"step-2\">\n<p>Heat oven to 350F<\/p>\n<\/li>\n<li id=\"step-3\">\n<p>Grease a 9&#215;9\u2019 square pan<\/p>\n<\/li>\n<li id=\"step-4\">\n<p>Beat together the eggs and sugar until they are fluffy, 2-3 minutes<\/p>\n<\/li>\n<li id=\"step-5\">\n<p>Beat in vanilla extract.<\/p>\n<\/li>\n<li id=\"step-6\">\n<p>Slowly beat in the flour, salt and baking powder.<\/p>\n<\/li>\n<li id=\"step-7\">\n<p>In a small saucepan, heat the milk and butter to a simmer (small bubbles around the edge of the pan and the butter is melted). Immediately beat this mixture into the flour mixture until all ingredients are combined. The batter will be quite runny.<\/p>\n<\/li>\n<li id=\"step-8\">\n<p>Pour into the prepared pan.<\/p>\n<\/li>\n<li id=\"step-9\">\n<p>Bake for 25 minutes or until the top is a light golden color.<\/p>\n<\/li>\n<\/ol>\n<h4 class=\"rk_group_heading\">To make the topping:<\/h4>\n<ol>\n<li id=\"step-11\">\n<p>Prepare the topping so it\u2019s ready to go on as soon as the cake comes out of the oven.<\/p>\n<\/li>\n<li id=\"step-12\">\n<p>In a medium saucepan, melt the butter.<\/p>\n<\/li>\n<li id=\"step-13\">\n<p>Add the brown sugar, milk and salt, if using.<\/p>\n<\/li>\n<li id=\"step-14\">\n<p>Bring to a simmer, stirring occasionally.<\/p>\n<\/li>\n<li id=\"step-15\">\n<p>Turn off the heat and immediately stir in the coconut until it\u2019s all coated with the rest of the topping.<\/p>\n<\/li>\n<li id=\"step-16\">\n<p>As soon as the cake comes out of the oven, spread the coconut mixture evenly over the top.<\/p>\n<\/li>\n<li id=\"step-17\">\n<p>Place the pan under a hot broiler for 1-3 minutes. Watch carefully as it will burn in a short amount of time.<\/p>\n<\/li>\n<li id=\"step-18\">\n<p>Cool<\/p>\n<\/li>\n<\/ol>\n<\/div>\n<div class=\"rk_column\">\n<h2 class=\"rk_column_heading\">\n                        <span>Recipe Note<\/span><br \/>\n                      <\/h2>\n<p>I\u2019ve always followed this recipe to the letter, but recently, we had people over and time slipped away from me in the afternoon with other prep work. I pulled the cake out, spread the topping evenly, and didn\u2019t think to pop it under the broiler until it was time to eat. I figured I\u2019d just keep an eye on it for a minute\u2014no timer needed. You can probably guess what happened next. Yep, I forgot.<\/p>\n<p>It was only 2\u20133 minutes, but long enough for the top to start to burn. I served it anyway, bracing myself for complaints\u2014but to my surprise, everyone loved it. In fact, they liked it better that way!<\/p>\n<p>Just goes to show that sometimes, a little imperfection makes things even better.<\/p>\n<p>This cake can be kept at room temperature for 2-3 days.
