I didn\u2019t think when I was an early beer drinker that I\u2019d be writing this sentence, but here we are. I love K\u00f6lsch. That might not be really fair, actually, the more that I think about it. It\u2019s not the K\u00f6lsch itself that I\u2019m so in love with. It\u2019s the K\u00f6lsch service that I\u2019ve fallen in love with. K\u00f6lsch night.<\/p>\n

That needs a little explaining before I tell you how to do it correctly here in Cincinnati.<\/p>\n

What Is K\u00f6lsch?<\/h2>\n

K\u00f6lsch is a simple, subtle, easy-drinking beer to keep this as simple as possible. It\u2019s light and a little bit fruity\u2026 but at the end of the day, it\u2019s super-crushable. The style was born in the mid-1800s as the response in Cologne, Germany, to what was happening in the beer world around them \u2013 namely, lightly kilned malt making an appearance in German lagers.<\/p>\n

Pilsner. It was a response to Pilsner.<\/p>\n

The folks in Cologne created a beer that still used the top-fermenting ale yeast they were familiar with, but the lightly kilned malt was becoming all the rage. After fermentation, the new beer was stored (or lagered), making it a hybrid.<\/p>\n

This new style became such a hit in the area \u2013 and the brewers were so protective of it that they protected the style in the 80s via the \u2018K\u00f6lsch Konvention,\u2019 which states that if you\u2019re not making the beer in the immediate area around Cologne\u2026 you\u2019re not making a \u201creal\u201d K\u00f6lsch.<\/p>\n

K\u00f6lsch is about more than light malt, ale yeast, and lagering. I heard it stated best by Anna Heller from \u2018Heller\u2019s Brauhaus\u2019 in Cologne\u2026 \u201cIn our region, K\u00f6lsch is more than only a beer; it unifies tastefulness, tradition, passion, and, of course, a good portion of localism.\u201d<\/p>\n

This? This I can certainly understand.<\/p>\n

What Is K\u00f6lsch Service?<\/h2>\n

I also spend much time trying to capture all those craft beer pieces. Taste, tradition, passion, localism. These things made me fall in love with this industry in the first place \u2013 and many days, glimpses of them keep me so deeply involved.<\/p>\n

There aren\u2019t a lot of events that make me feel that as well as K\u00f6lsch Night does when it\u2019s done right. To understand what \u201cdoing it right\u201d means, we again have to look to Germany to get a picture.<\/p>\n

In Cologne, you belly up to K\u00f6lsch service by simply showing up at the brewery. Most breweries you\u2019ll find in town just make one beer. They make K\u00f6lsch. You order your beer, which is served in a small (about 7oz) tall glass called a stange. Your waiter (called a K\u00f6be) marks a little tally mark on your coaster, and you start drinking.<\/p>\n

If you run out of K\u00f6lsch (and you will; they go down really easily), a new glass appears in front of you, along with another tally mark. When you\u2019ve had your fill, you simply put your coaster on top of your glass, where the tally marks are added, and you pay.<\/p>\n

The simplicity of the night is its beauty. It\u2019s about the act of drinking with others. It\u2019s about the conversation; you don\u2019t spend any time thinking about your next drink or with your nose deep in a glass of an IPA, wondering if that\u2019s the Simcoe you\u2019re smelling. With their custom-designed trays of beer moving about refilling people\u2019s beers, the waiters are just facilitating a much more important experience. This experience of just drinking has been lost in far too many watering holes here in the United States and beyond.<\/p>\n

Where To Get It In Cincinnati?<\/h2>\n

So, at this point, I know you\u2019re probably itching to get into a traditional K\u00f6lsch service. Good news for you (and the rest of us): they\u2019ve been popping up around Cincinnati for the last year. You can find K\u00f6lsch service at many of your favorite breweries \u2013 and I really want you to experience them all!<\/p>\n

You can find K\u00f6lsch nights (or K\u00f6lsch days) at several different local spots:<\/p>\n

    \n
  • Alexandria Brewing Company<\/strong> does theirs in the summer when their K\u00f6lsch is on tap. You can get all their beers, but traditional K\u00f6lsch service gets me to show up! (Full disclosure: they\u2019re a client of mine, so I\u2019d be showing up regardless\u2026) They have a great<\/strong> K\u00f6lsch, and it\u2019s definitely worth the trip, even if you swing by on a night when they aren\u2019t doing service.<\/li>\n
  • BC\u2019s Brewing<\/strong> hasn\u2019t even had their first K\u00f6lsch service as of me writing this, that doesn\u2019t happen until April 27th, 2025 (That\u2019s a few weeks away) \u2013 but if I know anything about the folks over at BC\u2019s, I know that it will be great! They\u2019re making their event ticketed, so when people come in, they\u2019ll know what to expect. All K\u00f6lsch, only K\u00f6lsch, all night. I think it\u2019ll be great!<\/li>\n
  • Braxton<\/strong> is new to the K\u00f6lsch service list, so I haven\u2019t made it down to check it out quite yet (though\u2026 I certainly will be very soon) \u2013 they spent some time in Cologne and fell in love with the style (and the experience) and brought it home to their taproom in the form of \u2018Kranz\u2019 with it\u2019s bright red, traditional serving trays\u2026 you can order a half or a full wreath to share with your friends.<\/li>\n
  • Esoteric<\/strong> holds their K\u00f6lsch service once a month, where they try to keep things as traditional as possible, providing tableside service to ensure that your glass never empties while you\u2019re sipping away with friends. It\u2019s an experience worthy of a visit (and one that I still have to mark off my list) \u2013 they hold them on Sundays, so make sure you check out their social media so that you can schedule accordingly!<\/li>\n
  • Rhinegeist<\/strong> was holding their K\u00f6lsch night regularly when I started working on this post\u2026 but when I started writing it, they\u2019ve since stopped service, though they still have their tasty K\u00f6lsch on tap as of this writing. It\u2019s called Shuffle, and maybe they\u2019ll be forced to bring K\u00f6lsch service back if we drink enough of it!
    Then, finally, Northern Row is on our list. I saved them for last because they were the first in town to start doing it and are still doing it better than anyone else. Let me explain why.<\/li>\n<\/ul>\n

    All K\u00f6lsch, Only K\u00f6lsch \u2013 Northern Row Sets The Standard.<\/h2>\n

    A night in Northern Row\u2019s taproom during K\u00f6lsch service is something special. I say that because they open special on a Tuesday (the third Tuesday of every month) to make the event happen. With it being on a day they usually aren\u2019t open \u2013 it doesn\u2019t seem like anyone who shows up is caught off guard by the fact that all<\/strong> they serve is K\u00f6lsch. In fact, when you grab your seat, you don\u2019t even need to tell anyone what you want. They just come by with the Kranz serving tray and start serving.<\/p>\n

    The coaster that marks your beers, the camaraderie that Cologne has pioneered in its service style\u2014it\u2019s all there. It feels different from any other night you\u2019ll spend in a local taproom because it is different from any other night you\u2019ll spend in a local taproom.<\/p>\n

    The brewery rotates various special food menus for the events, usually, in my experience, something fantastic. You\u2019ll hear German music (sometimes people speak German if one of the clubs shows up), and you\u2019ll sip on K\u00f6lsch and nothing but K\u00f6lsch all night. It\u2019s a thing of beauty that has yet to be replicated anywhere else in town.<\/p>\n

    The Germans Know What They\u2019re Doing<\/h2>\n

    I love modern craft beer. That should be obvious by this entire website \u2013 but there\u2019s something unique about a K\u00f6lsch night. It doesn\u2019t matter which one you stroll into; you\u2019ll quickly realize that traditional K\u00f6lsch service scratches an itch that our modern taproom culture sometimes misses completely.<\/p>\n

    Conversations flow more freely.<\/p>\n

    Yes, it \u201cunifies tastefulness, tradition passion\u2026 and of course, a good portion of localism.\u201d<\/p>\n

    The Germans might be onto something with this whole beer thing.<\/p>\n
