My husband and I were invited to a summer cookout and volleyball extravaganza. Like all good Midwesterners, we automatically knew that includes bringing food for the potluck portion of the party. <\/p>\n

Unfortunately, earlier in the week due to a raging thunderstorm that took down power line followed by temperatures that shot up into the 90\u2019s (F ) our electric company gave a huge chunk of the state the gift of multiday rolling blackouts early in the week. Fortunately, we got our electricity back in one of the first waves. <\/p>\n

Even though we didn\u2019t lose any of our food in the freezer (I had the freezer packed with big reusable ice packs similar to these<\/b><\/a><\/span> to get them ready for the party) the power outages made grocery shopping for fresh party food ingredients difficult. I poked around my pantry and got a little creative. I made a quick and easy three ingredient cherry coconut fluff salad recipe that just so happens to also be dairy free so food allergy folks like myself won\u2019t miss out.<\/p>\n

You will need the following ingredients for this recipe:<\/h4>\n

6 to 9 ounces (one container) of coconut whip cream<\/b> \u2013 you can buy a tub of So Delicious Coco Whip frozen topping here<\/a><\/b><\/span>or buy a can of Reddi-Whip Made with Coconut Milk Whipped Topping here<\/b><\/a><\/b><\/span>. I have used both brands with equal taste and success. <\/p>\n

1 can of cherry pie filling<\/b> \u2013 you can get cherry pie filling here<\/b><\/a><\/b><\/span><\/p>\n

1 package of vanilla or banana pudding mix<\/b> (I find that the name brands like this kind<\/a><\/b><\/span> are dairy free and most store brands have milk ingredients. Weird, huh?)<\/p>\n

Optional:<\/b> 1\/2 cup of coconut flakes or chunks<\/b> and\/or mini marshmallows<\/b> if you like. I didn\u2019t have either ingredient in my pantry so am leaving them out today. <\/p>\n

Step by Step How to Make this Summer Dessert Recipe <\/p>\n<\/h3>\n

1. <\/b> Combine and thoroughly mix together the container coconut whip cream and the can of cherry pie filling. <\/p>\n

2.<\/b> Add and mix the dry pudding\u00a0powder into the cherry and coconut mixture.\u00a0 <\/p>\n

\"easy<\/a><\/div>\n

Done and yum!<\/i><\/center><\/p>\n

3.<\/b> Add more coconut whip cream to the mixture if needed and the optional add ins if desired. <\/p>\n

4.<\/b> Thoroughly chill in the refrigerator before serving.<\/p>\n

5.<\/b> Eat! Enjoy! Repeat!<\/p>\n
