But when Allagash Founder Rob Tod first brewed this Belgian-style witbier in 1995 and poured the cloudy beer out at bars, people asked him, \u201cWhat\u2019s wrong with it?\u201d <\/p>\n<p>That\u2019s right. One of the <a href=\"https:\/\/www.hopculture.com\/national-beer-day-2022\/\">most iconic beers in America<\/a>, Allagash White, almost had to wave the white flag. But, Tod tirelessly backed this beer for ten years. Eventually, after a decade of grinding, Tod\u2019s witbier wonder started to turn heads. <\/p>\n<p>It\u2019s a good thing Tod and Allagash Brewmaster Jason Perkins stuck to their guns because thirty years later, this little Belgian-style wheat beer has earned its place in the pantheon next to greats such as <a href=\"https:\/\/www.hopculture.com\/sierra-nevada-pale-ale-legend\/\">Sierra Nevada Pale Ale<\/a>, <a href=\"https:\/\/www.hopculture.com\/anchor-steam-beer-anchor-brewing-history\/\">Anchor Steam Beer\u00ae<\/a> (RIP?), and <a href=\"https:\/\/www.hopculture.com\/samuel-adams-boston-lager-remastered\/\">Boston Beer Co. Boston Lager<\/a>, for instance.<\/p>\n<p>One could argue that White wouldn\u2019t be what it is today without those years of blood, sweat, and beer. <\/p>\n<p>Nothing is black and white. He told us he\u2019d spend hours as a kid fixing things like vacuums, lawnmowers, or hair dryers, taking them apart and putting them back together. <\/p>\n<p>Unsure of his next move, Tod headed to Colorado, where he worked in construction and back-of-the-house restaurant jobs. After a year, he felt he needed to settle down, so he returned to Vermont. <\/p>\n<p>When Tod pulled his van into town, he called a friend who worked at Otter Creek Brewery, a small local taproom. <\/p>\n<p>That very day, his friend said his boss had put out the call for a part-time keg washer. <\/p>\n<p>\u201cI liked drinking beer,\u201d laughs Tod. \u201cMaybe I could get paid and get free beer.\u201d <\/p>\n<p>Tod showed up the following day at 8 a.m., walked in the doors, and his life changed forever. <\/p>\n<h2>Tod Knew Within a Couple of Hours, He Was Born to Brew<\/h2>\n<p>\u201cInstantaneously, almost from walking in the door,\u201d recalls Tod, \u201cI knew I was going to make beer for the rest of my life.\u201d <\/p>\n<p>The brewery called out to Tod. But he asked to learn as much as possible over the next year. <\/p>\n<p>\u201cHe probably thought, Rob, after you spend a year here, the last thing you\u2019ll want to do is start a brewery,\u201d laughs Tod, who did everything at Otter Creek from washing kegs to spending time on the packaging line to working in the brewhouse. <\/p>\n<p>Tod spent one year to the day working at Otter Creek\u2014July 1st, 1993, to July 1st, 1994. On July 2nd, he set out on his own to open Allagash. <\/p>\n<p>\u201cI didn\u2019t know what it would look like or where it would be,\u201d says Tod, \u201cbut I made up my mind pretty quickly to open my own brewery.\u201d <\/p>\n<p>Moving a state away to Maine, Tod worked on a shoestring budget to get Allagash off the ground. <\/p>\n<p>He bought used dairy tanks, installed the drainage and trenches in the floor, and cut and welded all the steel in the brewhouse himself. <\/p>\n<p>Allagash\u2019s first mash tun? That\u2019s a used dairy tank converted to make beer. The hot liquor tank? An old dairy tank. And the heat exchanger? Well, that came used. <\/p>\n<p>Tod admits the fermenters he bought new, but pretty much everything else he cobbled together. <\/p>\n<p>\u201cI was pretty cheap at the time!\u201d says Tod, who worked sixteen-hour days for a solid year, seven days a week. <\/p>\n<p>\u201cI took six days off in the first year and a half,\u201d he shares. \u201cI worked sixteen-hour days Monday through Saturday and eight hours Sunday.\u201d <\/p>\n<p>Through sweat, grit, and long days, Tod built his brewery around pretty much one beer\u2026and one beer only. <\/p>\n<h2>Why a Witbier? And Only a Witbier?<\/h2>\n<div id=\"attachment_35491\" style=\"width: 693px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-35491\" src=\"http:\/\/www.hopculture.com\/wp-content\/uploads\/2025\/02\/allagash-brewing-co-allagash-white-witbier-in-glass-credit-allagash-brewing-co-1000x1500-1-683x1024.jpg\" alt=\"allagash brewing co allagash white witbier in glass\" width=\"683\" height=\"1024\" class=\"size-large wp-image-35491\" srcset=\"https:\/\/www.hopculture.com\/wp-content\/uploads\/2025\/02\/allagash-brewing-co-allagash-white-witbier-in-glass-credit-allagash-brewing-co-1000x1500-1-683x1024.jpg 683w, https:\/\/www.hopculture.com\/wp-content\/uploads\/2025\/02\/allagash-brewing-co-allagash-white-witbier-in-glass-credit-allagash-brewing-co-1000x1500-1-200x300.jpg 200w, https:\/\/www.hopculture.com\/wp-content\/uploads\/2025\/02\/allagash-brewing-co-allagash-white-witbier-in-glass-credit-allagash-brewing-co-1000x1500-1-768x1152.jpg 768w, https:\/\/www.hopculture.com\/wp-content\/uploads\/2025\/02\/allagash-brewing-co-allagash-white-witbier-in-glass-credit-allagash-brewing-co-1000x1500-1.jpg 1000w\" sizes=\"auto, (max-width: 683px) 100vw, 683px\"\/><\/p>\n<p id=\"caption-attachment-35491\" class=\"wp-caption-text\">Photography courtesy of Allagash Brewing Co.<\/p>\n<\/div>\n<p>When Tod launched Allagash, he had one beer in his portfolio\u2014Allagash White, a Belgian witbier. <\/p>\n<p>Looking back on the beer landscape in the early 1990s, British ales, German and Czech imports, and Pacific Northwest pale ales dominated. <\/p>\n<p>Belgian beers\u2026you couldn\u2019t find too many of them. <\/p>\n<p>\u201cEveryone was into Shipyard, Geary\u2019s, Gritty\u2019s [Mcduff\u2019s] English styles using Ringwood yeast\u2014these styles dominated the New England beer scene at the time,\u201d says Mike Dickson, the manager and now-partner of The Great Lost Bear, a forty-six year-old bar in Portland, ME, that was one of the first to pour Allagash White. <\/p>\n<p>Tod saw an opportunity. <\/p>\n<p>Planning to be a one-person band and run lean that first year, Tod knew he had to keep things simple. <\/p>\n<p>\u201cI wanted to start with just one beer only, draft only, and only in the local Portland, ME, market,\u201d he explains. <\/p>\n<p>Tod first tried Belgian-style beers while working at Otter Creek. Employees at the brewery would collect beers from their travels. After accumulating twenty or thirty different beers, they\u2019d all stay after work on a Friday and Saturday and try all the various styles\u2014things like Belgian witbiers. <\/p>\n<p>\u201cI was really intrigued by the Belgian beers people brought,\u201d says Tod. \u201cFrom such a small geographical area, Belgian brewing culture is unbelievably unique and diverse\u2026it\u2019s mind-boggling.\u201d <\/p>\n<p>Belgian witbier stood out to Tod. <\/p>\n<p>\u201cNo one was drinking cloudy beers back then,\u201d he chuckles. <\/p>\n<p>Witbiers had different flavor profiles and aromas and a unique yeast strain, but at the same time, it was \u201cone of the most sessionable styles I ever tried,\u201d says Tod. <\/p>\n<p>Not one to shy away from a challenge, Tod wanted Allagash to stand out. <\/p>\n<p>\u201cWhy bust my ass for a year working sixteen hours seven days a week only to make something people could already get,\u201d says Tod. \u201cI wanted to make something unique.\u201d <\/p>\n<h2>Allagash White Includes Coriander, Cura\u00e7au Orange Peel, and a Secret Ingredient<\/h2>\n<div id=\"attachment_35499\" style=\"width: 1010px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-35499\" src=\"http:\/\/www.hopculture.com\/wp-content\/uploads\/2025\/02\/allagash-brewing-co-founder-rob-tod-early-days2-credit-allagash-brewing-co-1000x667-1.jpg\" alt=\"allagash brewing co-founder rob tod early days\" width=\"1000\" height=\"667\" class=\"size-full wp-image-35499\" srcset=\"https:\/\/www.hopculture.com\/wp-content\/uploads\/2025\/02\/allagash-brewing-co-founder-rob-tod-early-days2-credit-allagash-brewing-co-1000x667-1.jpg 1000w, https:\/\/www.hopculture.com\/wp-content\/uploads\/2025\/02\/allagash-brewing-co-founder-rob-tod-early-days2-credit-allagash-brewing-co-1000x667-1-300x200.jpg 300w, https:\/\/www.hopculture.com\/wp-content\/uploads\/2025\/02\/allagash-brewing-co-founder-rob-tod-early-days2-credit-allagash-brewing-co-1000x667-1-768x512.jpg 768w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\"\/><\/p>\n<p id=\"caption-attachment-35499\" class=\"wp-caption-text\">Photography courtesy of Allagash Brewing Co.<\/p>\n<\/div>\n<p>Tod spent hours and days, and around four test batches to perfect his recipe for Allagash White. One of the most complex parts of brewing this style at that time was that there was no one to call. \u201cIf I were doing a British-style beer or an IPA, if I had a problem, I could pick up the phone and call twenty or thirty different people,\u201d he explains. \u201cBut with this Belgian witbier, there was no one to call because no one was making these beers.\u201d <\/p>\n<p>While he has openly shared that White includes fresh coriander and cura\u00e7au orange peel, he has kept the other secret spice hushed. <\/p>\n<p>And nothing has changed! <\/p>\n<p>\u201cThat\u2019s what keeps beer interesting to me,\u201d says Tod. \u201cIf you try a beer and immediately figure it out, you won\u2019t be drawn back to it.\u201d<\/p>\n<p>He adds, \u201cOne of the things that has drawn people to Allagash White is the complexity, the balance, and all the subtle flavors.\u201d<\/p>\n<p>What Tod would share though is that Allagash White is currently brewed with around thirty-six percent of locally grown grain. \u201cThat is largely made up of local raw white wheat, along with local malt and oats,\u201d he says. \u201cWe haven\u2019t really changed the recipe at all since 1995, except for when we built more local grain into it in 2016.\u201d <\/p>\n<h2>Almost (Never) Waving the White Flag on White for Over a Decade<\/h2>\n<div id=\"attachment_35492\" style=\"width: 693px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-35492\" src=\"http:\/\/www.hopculture.com\/wp-content\/uploads\/2025\/02\/allagash-brewing-co-allagash-white-witbier-in-glass2-credit-allagash-brewing-co-1000x1500-1-683x1024.jpg\" alt=\"allagash brewing co allagash white witbier in a glass\" width=\"683\" height=\"1024\" class=\"size-large wp-image-35492\" srcset=\"https:\/\/www.hopculture.com\/wp-content\/uploads\/2025\/02\/allagash-brewing-co-allagash-white-witbier-in-glass2-credit-allagash-brewing-co-1000x1500-1-683x1024.jpg 683w, https:\/\/www.hopculture.com\/wp-content\/uploads\/2025\/02\/allagash-brewing-co-allagash-white-witbier-in-glass2-credit-allagash-brewing-co-1000x1500-1-200x300.jpg 200w, https:\/\/www.hopculture.com\/wp-content\/uploads\/2025\/02\/allagash-brewing-co-allagash-white-witbier-in-glass2-credit-allagash-brewing-co-1000x1500-1-768x1152.jpg 768w, https:\/\/www.hopculture.com\/wp-content\/uploads\/2025\/02\/allagash-brewing-co-allagash-white-witbier-in-glass2-credit-allagash-brewing-co-1000x1500-1.jpg 1000w\" sizes=\"auto, (max-width: 683px) 100vw, 683px\"\/><\/p>\n<p id=\"caption-attachment-35492\" class=\"wp-caption-text\">Photography courtesy of Allagash Brewing Co.<\/p>\n<\/div>\n<p>You\u2019d never know it now, but Allagash White didn\u2019t exactly come flying out of the gate. <\/p>\n<p>\u201cWhen I opened, I couldn\u2019t give it away,\u201d says Tod, who would pour the cloudy beer out at accounts only for the bar owner to ask him what\u2019s wrong with it. <\/p>\n<p>A few local accounts like The Great Lost Bear poured it. \u201cI tried an Allagash White the very same day the first keg arrived,\u201d exclaims Dickson. \u201cI fell in love with it right away.  We have always been advocates for supporting local, and Allagash was certainly no exception!\u201d <\/p>\n<p>But beyond some local love, Tod calls that first ten-year period a grind and \u201cnothing but an uphill battle.\u201d <\/p>\n<p>Good friends, other brewers, and folks in the industry constantly told him to make a more accessible beer because he would never survive making \u201cweird beers.\u201d <\/p>\n<p>\u201cI\u2019d say this is as accessible as beer gets,\u201d laughs Tod. \u201cBut no one saw it that way for a good decade.\u201d <\/p>\n<p>After the first eight years, Tod admits that he doubted whether the brewery, built around a core witbier, would work. But he never gave in, only plowing forward. <\/p>\n<p>\u201cIt would have taken the bank to come in and say no more, we\u2019re pulling the plug,\u201d says Tod, admitting he\u2019s pretty bull-headed. <\/p>\n<p>Ironically, Tod keeps a framed letter on his wall from a bank that pulled Allagash\u2019s loan five years into the business. \u201cIt\u2019s a constant reminder of our humble beginnings and struggles in the early years,\u201d  he shares. Around 2005, Allagash\u2019s little witbier started to catch fire. <\/p>\n<p>Tod says he could list many reasons, but at the top would be quality. <\/p>\n<p>\u201cWe were doing everything we could within our limited means with just old dairy equipment to make the best beer,\u201d says Tod. \u201cWe started to get a reputation for quality and consistency.\u201d <\/p>\n<p>Allagash\u2019s Founder admits that it probably didn\u2019t hurt that Blue Moon came on the scene, too. No other large-scale wheat beer had been around since Allagash started. <\/p>\n<p>Plus, Tod is probably being modest. He and Allagash Brewmaster Jason Perkins hit the pavement hard during the early 2000s. <\/p>\n<p>Because White wouldn\u2019t sell at home, Tod and Perkins took their beer into as many states as possible. Basically, Tod welcomed any state that agreed to distribute Allagash into the brewery\u2019s footprint. However, that decision eventually propelled Allagash to mainstream success.<\/p>\n<p>\u201cWe needed to go into new markets because we couldn\u2019t sell our beer,\u201d said Perkins, who became Allagash\u2019s brewmaster almost by chance, stumbling in one day when he saw Allagash was hiring and shooting the shit with Tod. <\/p>\n<p>That was twenty-six years ago. <\/p>\n<p>Needless to say, they hit it off. <\/p>\n<p>After ten years of hitting the road, people\u2019s perceptions and palates changed. After ten years, you can take a one-year sabbatical. <\/p>\n<p>Last year, Allagash gave a significant amount back to the local community through a strong philanthropy program. <\/p>\n<p>Since 2016, Allagash has committed to buying one million pounds of Maine-grown grains, a feat they achieved in 2021. You can even sit in the exact stool Tod sat on the day the first pint of Allagash White was served.
