\nAfter I tried Kee Wah’s (Hong Kong bakery) mini Eu Yan Sang red bean paste mooncake with mandarin peel, I fell in love with it immediately! I tried to replicate it few days ago and am quite happy with my new experiment!\u00a0<\/span>

\n\u6700\u8fd1\u5403\u8fc7\u9999\u6e2f\u5947\u534e\u997c\u5bb6\u7684\u4f59\u4ec1\u751f\u9648\u76ae\u7ea2\u8c46\u6c99\u6708\u997c\u5c31\u559c\u6b22\u4e0a\u5b83\u4e86\uff01\u524d\u51e0\u5929\u5728\u5bb6\u91cc\u6478\u7d22\u505a\u4e86\u51fa\u6765\uff0c\u5bf9\u81ea\u5df1\u7684\u65b0\u5b9e\u9a8c\u8fd8\u86ee\u6ee1\u610f\u7684\uff01<\/span><\/p>\n

\n*<\/span>Best to get from Eu Yan Seng TCM store to get the closest taste, I used dried mandarin peel bought in Guangzhou. Do not used the tidbits type which is loaded with sugar and salt as it is not suitable, must used the chinese herb type. As different dried mandarin peel varies in taste and bitterness, please adjust amount according to your liking.<\/span> <\/i>\u00a0<\/span><\/p>\n

1. Mix the all purpose flour and cake flour together.<\/span>

\n6. Wrap in the fillings, roll it into a ball. Dust with some flour and press firmly into mould.\u00a0<\/span>Unmould the moon cakes and placed it on a baking tray lined with baking mat. Spray some water on the mooncake surface to prevent cracking during baking.\u00a0<\/span><\/span>

\n6. \u5305\u5165\u9985\u6599\uff0c\u6413\u5706\uff0c<\/span>\u7c98\u4e0a\u5c11\u8bb8\u7c89\uff0c\u518d\u628a\u5b83\u653e\u5165\u6a21\u578b\u91cc\u538b\u51fa\u5f62\u72b6\u3002<\/span><\/span>\u6708\u997c\u6263\u51fa\u6a21\uff0c<\/span>\u653e\u5728\u94fa\u4e86\u70e4\u57ab\u7684\u70e4\u76d8\u4e0a\u3002\u6708\u997c<\/span><\/span>\u8868\u9762<\/span>\u55b7\u4e00\u4e9b\u6c34\uff0c\u4ee5\u9632\u70d8\u70e4\u65f6\u5f00\u88c2\u3002<\/span><\/p>\n

\n3. The reason for using alkaline water is that it can neutralize the acidity of the golden syrup and helps the mooncake to brown nicely when baked. It also makes the dough more stretchable and improve the taste and texture of mooncake. \u00a0<\/span>
3. \u505a\u6708\u997c\u8981\u653e\u78b1\u6c34\u7684\u539f\u56e0\u662f\u56e0\u4e3a\u53ef\u4e2d\u548c\u8f6c\u5316\u7cd6\u6d46\u4e2d\u7684\u9178\u6027, \u4e0d\u7136\u997c\u76ae\u4f1a\u5f88\u96be\u4e0a\u8272\u3002\u78b1\u6c34\u4e5f\u53ef\u4ee5\u5e2e\u52a9\u997c\u76ae\u84ec\u677e\u8d77\u6765, \u589e\u52a0\u53e3\u611f\u3002<\/span>

<\/span>4. Golden syrup has a strong moisturizing effect, thus able to keep the mooncake skin soft.<\/span>
4. \u8f6c\u5316\u7cd6\u6d46\u6709\u5f88\u5f3a\u7684\u4fdd\u6e7f\u4f5c\u7528\uff0c\u4f7f\u6708\u997c\u76ae\u4fdd\u6301\u67d4\u8f6f\u3002<\/span>
