But I still feel just the slightest bit virtuous when having it on my toast!<span style=\"font-size: small;\"><br \/><\/span><span style=\"font-size: large;\"><br \/><\/span><i><span style=\"font-size: large;\">Zucchini Jam<\/span><\/i><br \/>makes ~7 half pints<\/p>\n<p>6 cups shredded fresh zucchini, loosely packed (peeled and seeded)<br \/>5 cups granulated sugar<br \/>1\u00bd cup canned crushed pineapple, with juice <i>(1 cup if not adding pectin)<\/i><br \/>3 tbsp bottled lemon juice<br \/>1 tbsp bottled lime juice<br \/><i>2 tbsp bulk pectin (optional)<\/i><br \/>1 (85g) pkg strawberry <i>or<\/i> orange <i>or<\/i> peach jello powder <br \/>1 (85g) pkg lemon jello powder (or desired flavor &#8211; <i>a 170g pkg of one flavor may be used in place of the two packages<\/i>)<\/p>\n<p>Directions:<\/p>\n<p>If using pectin for extra set insurance, combine with the jello powder and set aside. <\/p>\n<p>Place zucchini and sugar in stockpot and stir well. Let sit for 10 minutes to allow the sugar to dissolve into the grated zucchini.\u00a0 Bring mixture to low boil, uncovered, over medium heat.\u00a0 Cook for 5-10 minutes, stirring frequently, until the zucchini is soft and somewhat translucent.\u00a0 Reduce heat slightly if jam is boiling too vigorously.\u00a0 <i>(If the mixture boils too hard, the jam may be too firm with added pectin since the moisture will reduce.)<\/i><\/p>\n<p>Stir in pineapple and the lemon and lime juices. Return mixture to a boil.
