{"id":169300,"date":"2025-04-03T15:20:33","date_gmt":"2025-04-03T15:20:33","guid":{"rendered":"https:\/\/peraltafinancing.com\/recipes\/category-a-b\/baking-category-a-b\/total-heaven-chocolate-almond-cake-nick-malgieri\/"},"modified":"2025-04-03T15:20:33","modified_gmt":"2025-04-03T15:20:33","slug":"total-heaven-chocolate-almond-cake-nick-malgieri","status":"publish","type":"post","link":"https:\/\/fivemor.com\/?p=169300","title":{"rendered":"TOTAL HEAVEN CHOCOLATE ALMOND CAKE \u2014 Nick Malgieri"},"content":{"rendered":"<p> <br \/>\n<br \/><img decoding=\"async\" src=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/54ac6d1ae4b0ac4256f76d42\/1569460542182-GCRHNIY0WKS4I5L5VWW7\/09.27.19.TotalHeaven.jpg?format=1500w\" \/><\/p>\n<div>\n<p class=\"\" style=\"white-space:pre-wrap;\">\u00a0<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">CAKE BATTER<br \/>3\/4 cup finely ground almonds or prepared almond flour<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">1 cup fresh bread crumbs<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">1 1\/2 sticks unsalted butter, softened<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">2\/3 cup sugar<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">1\/4 teaspoon ground cinnamon<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">1\/4 teaspoon pure almond extract<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">4 ounces semisweet chocolate, melted and cooled<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">\u00a08 large eggs, separated<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">\u00a0<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">CHOCOLATE GLAZE<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">1\/2 cup heavy cream<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">1\/4 cup light corn syrup<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">7 ounces semisweet chocolate, melted and cooled<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">1\/2 cup lightly toasted sliced almonds for finishing<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">Whipped cream for serving, optional<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">\u00a0<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">One 2 1\/2 to 3-inch deep, 9-inch spring form pan, buttered and the bottom lined with a disk of buttered parchment paper<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">\u00a0<\/p>\n<ol data-rte-list=\"default\">\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Set a rack in the middle level of the oven and preheat to 350\u02daF.<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Stir the almonds and bread crumbs together and set aside.<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Beat the butter and 1\/3 cup sugar in the bowl of an electric mixer fitted with the paddle attachment on medium speed until light, 3 to 4 minutes. Stop the mixer and add the cinnamon, almond extract, and chocolate. Beat on low speed to combine, then stop and scrape the bowl and beater.<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Start the mixer again on low-medium speed and separate the eggs, adding the yolks to the chocolate batter as it\u2019s mixing and transferring the whites to another mixer bowl. (If you only have one mixer bowl, put the whites in a small bowl and transfer the chocolate batter to a medium mixing bowl after all the yolks have been added. Wash the bowl in hot soapy water, rinse well, and dry before using for the egg whites.)<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Take the bowl off the mixer and use a large rubber spatula to stir in the almond and breadcrumb mixture.<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Whip the egg whites on medium speed, using the whisk attachment, until they are white, opaque, and beginning to hold their shape. Increase the speed to medium-high and add the remaining 1\/3 cup sugar in a slow stream, continuing to whip the egg whites until they hold a soft peak.<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Stir about one third of the egg whites into the chocolate batter to lighten it, then fold in the rest until no streaks of white remain. Scrape the batter into the prepared pan and smooth the top.<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Bake the cake until it is well risen but still moist in the center when tested with the point of a paring knife, 35 to 40 minutes. Cool in the pan for 5 minutes, then invert to a cardboard. Leave the paper on the cake and invert to a rack to cool completely.<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Wait until the cake has cooled completely before preparing the glaze. Whisk the cream and corn syrup together in a small saucepan and heat just until there are a few bubbles around the edge of the liquid. Remove from heat and cool to about 100\u02daF \u2013 it should feel just slightly warm when tested with a fingertip. Pour the cooled cream mixture over the melted chocolate and use a rubber spatula to stir them together to avoid creating bubbles in the glaze.<\/p>\n<\/li>\n<li>\n<p class=\"\" style=\"white-space:pre-wrap;\">Use a long, sharp serrated knife to trim the top of the cake evenly, then place a cardboard on the cake; invert so that the smooth bottom side of the cake is upward and remove the paper. Set the cake on a rack over a pan to catch drips and pour the glaze over the cake, using a metal offset spatula to sweep excess from the top and to touch up the sides where necessary. Let stand until the glaze sets, then press the sliced almonds against the side. Transfer to a platter and cut the cake into wedges, remembering to wipe the knife with a damp cloth between cuts.
